Back in early February a group of Aussies were pulled from pocket, heralded with perspicacious aptitude by Mark Davidson and poured at the Vintage Conservatory for Toronto’s want to know wine community. The murmurs could be heard speaking the unspoken profound. I took coadjutant note. In late February I surmised that “the seminar offered a welcoming respite from my monthly treadle of reviewing. The Langton’s wines collectively commit to the idea that wine is a blueprint with entrepreneurial elements, an elixir akin to the maker’s inventive secret machines. It is always refreshing to taste wines that are not exaggerated or sentimental. These Aussies are representative of all this and more.”

“Such a gathering of Australian wine delivers the preponderance of form, with the incantatory capacity of narrative to bring truth to light and fulness out of pleasure.”

On the heels of that twelve strong Langton’s Classification Toronto tasting came another stellar gathering, this time expatiated as Savour Australia. Just when you think the best of the best had come to town, the best got better.

Wine Australia and her woman about town Anne Popoff gathered 28 producers from 14 regions at George Restaurant on May 16, 2016. The HER (history-evolution-revolution) trade seminar was presented by Master Sommelier John Szabo. The wines were nothing short of exceptional. Once again Australia delivered, not only in terms of quality but also with deferential diversity. Imagine the possibilities when the new effects of restraint and change begin to trickle down to less expensive and more commercially produced wines. Australia will become a new global force to be reckoned with. Here are my notes on the 12 seminar wines plus a few new finds.

History

Kilikanoon Mort’s Block Riesling 2005, Clare Valley, South Australia (233791, $50.00, WineAlign)

From 45 year-old vines planted by Kevin Mitchell and dedicated to his father Mort, the Reserve Watervale riesling has entered Clare Valley 10 years plus of age nirvana. From pristine free-run juice, this is premium, intensely sun-juicy Riesling, notable for its key-lime aroma and flavour. A key to your citrus pie heart, it took all this time to bring out the complimentary toast. Racy, revelling riesling as a bone outstretched from the stone of Clare Valley soil. D’arenberg The Derelict Vineyard Grenache 2012, McLaren Vale, South Australia (Agent, $35.00, WineAlign)

From a vineyard abandoned and left for dead, with bush vines as old as 100 years revived and restored. No new French wood houses d’Arenberg’s delicately dangerous grenache fruit for 12 months. The intro guitar chords from these plants of arms outstretched are George Harrison generous and give fruit more sweet than dandy. Grenache can seem so sketched, lithographed, Warhol copied and godless, but from old vines handled with care it takes a more godly direction. Here there is a slow-settled sense of cure and a liqueur distilled as if by red soil into liquid mineral. It is also fresher than other old vines grenache, say from Aragon or the southern Rhône. “But it takes so long, my Lord.” In McLaren Vale, 100 years. Hollick Ravenswood Cabernet Sauvignon 2012, Coonawarra, South Australia (Agent, $75.00, WineAlign)

No Coonawarra cabernet sauvignon can be considered without the signature, what Hollick’s Rebecca Poynter points out as the “GI,” the Geographical Indication. Registered back in 2003, the ideal demarcates exact boundaries and the deeper we try and understand the terra rossa soil and what it means for cabernet sauvignon, the more it seems that Classico should be added to discern the local varietal specification. First made in 1988 and only produced in exceptional vintages, Ravenswood (Lane) is the link between Hollick’s Neilson Block and Wilgha Coonawarra Vineyards. A bonny doon uprising of cool temperatures from the ocean and the terra rossa create a combined mineral-savoury undertone and a long, cool growing elegance. Iconic attribution, the marriage of old vines and best plots, 18 months plus 18 in bottle. All this to see depth in red plus black fruit, such developed acidity and in the end, bramble on. St. Hallett Old Block Shiraz 2013, Barossa Valley, South Australia (Agent, $80.00, WineAlign)

An Eden and Barossa Valley blend from vines that range between 60 and 100 years old, the Old Block 2013 is perhaps the most exotic, romantic and profusely perfumed Shiraz in South Australia. The evocative and ambrosial mix of wild rose bud tisane, unlit Indonesian kretek tobacco and Eucalyptus Leucoxylon Rosea is herbaceous, spicy and ambrosial. You might expect a hammer on an anvil but a bridge between the two valleys conjoins the fruit, layers with balance and forms a silky and seductive story that is a great read into texture, from prime extraction and the lavender-vanilla seduction of new and old French oak. Evolution

Leeuwin Estate Art Series Chardonnay 2013, Margaret River, Western Australia (Agent, $99.95, WineAlign)

Young is the operative understatement, whilst toast and butter in peak pomade are equally opposed yet lifted by the blossoms of white flowers. What erudite reduction brings and how it stops time. The best barrel selections from powerful Block 20 fruit cause the commotion in a zero shame Chardonnay, philosophically captured though perhaps one step back from unabashed. Ripeness was clearly not an issue. Freshness balances all else. At present the youth is seemingly everlasting. The effects of a moderate climate and corresponding alcohol, in at 13.5 per cent, are edifying to the western tongue. The length is exceptional. Souma Single Vineyard Pinot Noir 2015, Yarra Valley, Victoria, South Australia (Agent, $34.95, WineAlign)

Old sandstones, silky loam and minor clay nourish vines planted in 1994, “to a fruit salad,” explains Steven Worley and which eventually evolved into pinot noir. The Soumah Single-Vineyard wines are named after train stations (i.e. Bluestone, Hexham) and they refer to an eastern French didactic. The aromatics abound from 2015, in plethora of orange musk; first blossom, then zest and finally a liqueur. Pinpointed further it’s blood orange, studded with clove, then squeezed into a Mimosa. Early fruit phenolic ripeness, high-picked acidity, wild yeasts and some whole bunch (10 per cent) fermentation leads with freshness, tension and precision. In this pinot noir you can’t help but note the new world cure and pastis flavours in what is very much a treatment in old world homage. An Amaro note slides along the terrific length. Alpha Box & Dice Xola Aglianico 2011, McLaren Vale, South Australia (Winery, $45.00, WineAlign)

This first vintage of the grippy aglianico from a variety of growers and blocks is certainly multi-environmental and drinking with five-tear resolved, prescient acceptability. Owners Justin and Dylan Fairweather practice self-proclaimed vinous bricolage, laying down the ferment for four years in oak (none new) to heap a nosing of liquorice root with the clay still caked and clinging. A humidity this side short of damp relents to florals and then, as expected, a forceful tannic structure. The Xola is the winery’s study in wine duality, as per William Blake’s opposites of existence, masculine aglianico swaddled and softened in feminine wood, exhorting the concept of “complementary dualism.” Or, if you like, in Jim Jarmusch vernacular, “Exaybachay. he who talks loud, saying nothing.” This southern Italian varietal speaks with emphasis, as it does with minerality, from its original existence, “close to the ocean.” As it does here, “perfect for Mclaren Vale.” Drink 2016-2023. Fowles Ladies Who Shoot Their Lunch Shiraz 2012, Victoria, South Australia (243592, $35.95, WineAlign)

Quite savoury shiraz, reductive, soil funky and forceful. A plum tart, mince meat pie, layer cake of variegation. Acidity circulates and the finish is very much on the toasty, peppery side of the Victoria understanding. Drink 2016-2019.  Tasted  May 2016  @LadiesWhoShoot  @vonterrabev

Revolution

BK Wines Skin & Bones White 2015, Adelaide Hills, South Australia (Winery, $50.00, WineAlign)

With a nudge-nudge, wink-wink nod to the Jura, here savagnin finds oxidative, skin contact hope in the Adelaide Hills. Lobethal savagnin (98 per cent) plus a smidgen of chardonnay develops with wild yeasts, sees nine months bâttonage and 12 months in 100 per cent neutral French oak. Smell the sweet grass, while away with the mellow acidity and suffer no slings, arrows or consequence with nary a bite or a pop. Here balance is ushered by dry extract and tannin in a white Rhône-ish way, with tonic-herbal flavours of white cola and less than minor minerality. The skin contact is a plus, as is the lime finish. Jauma Like Raindrops Grenache 2015, McLaren Vale, South Australia (Winery, $60.00, WineAlign)

Grenache as determined by theories of natural selection, like raindrops, as put forth by Jauma’s James Erskine, is here, like stolen kisses. The basic intent, the accidentally intentional purport, the let it be, three vineyard blend. All this for the attitude from cause and to the effect of dropping inhibitions and to drink this grenache without pause. The vineyards are Ascension, in the alluvial basin of the northern slopes of McLaren Vale proper; Genovese, the white beach sands of McLaren Flat and Wood, the sandy ironstone ridge of Clarendon. Yes it’s earthy but also very fruity. One hundred per cent whole cluster achieves a South-African Stellenbosch like cousin performance, but also akin to a similarly-crown capped Jean-Pierre Frick-ish natural Pinot Noir tendency. Here there forges more acidity, but also a banana boat of carbonic whirlpool-ness. This is a thirst wine, a quencher. Drink 2016-2018.  Tasted May 2016  @JaumaWines  @mclaren_vale  @TheLivingVine

Ochota Barrels I Am The Owl Syrah 2015, Adelaide Hills, South Australia (Winery, $60.00, WineAlign)

Syrah like you’ve never tasted before, to send you spinning, from Taras Ochota, a.k.a. the “European Flying Winemaker.” Syrah from cool climate and of whole bunch fermentation. Syrah reductive and soil funky, of an achievement uncomplicated, simple, truncated and with near-zero intervention. Fresh, atypical, chewy, chunky, altitude-affected, naturliga syrah. Syrah that sees the failings and mistakes of others and can’t help but allude to a Dead Kennedys’ song, “for clean livin’ folks like me.” I am the owl. We are the beneficiaries. Not to lay down. Brash Higgins Nero D’avola Amphorae Project 2015, McLaren Vale, South Australia (Winery, $55.00, WineAlign)

The renegade triumvirate of coagulation denotes the shock and awe of this outlier; McLaren Vale, Nero d’Avola and Amphora. Winemaker Brad Hickey and his nickname have taken the troika and created a beautiful monster. A non-oxidative, crunchy, spicy, toasty, chewy and tannic NdA in versicolour, mottled and florid in flavour. There is black and white pepper, cinnamon, zesty orange spritz and a clay influence (plus amphora) to waft one for the ages. The palate flaunts a tapenade of painfully brilliant chalky black olive. The swirl is chocolate and vanilla, mediterranean and meganesian. There should be zero attention paid to the unusual in its concept. This is both a pleasure to taste now and will evolve into something wholly other given enough time. At least 10 years to be sure. New Finds

Cirillo 1850 Ancestor Sémillon 2011, Barossa Valley, South Australia (Agent, $36.00, WineAlign)

A sémillon revelation is found in this Barossa Valley ancient, a wine procured from vines dating back more than 150 years. To discount that prodigious bit of calculated fortuity would be wrong on so many levels. The Cirillo family are guardians of what may be the oldest continuously producing grenache and sémillon vineyards in Australia and by logical extension, the world. Here the combination of dry extract, mineral depth and straight-lined (unsalted) salinity is beyond special. While the Hunter Valley garners the most attention for aging immortal sémillon, this Barossan will likewise escape, somehow, to live another more complicated and mysterious life. I would wait three years for some extract meets tannic sweetness to begin its development and then take it slow for another six to 10. Incredible find here in Ontario from Marco Cirillo. Cirillo 1850 The Vincent Grenache 2015, Barossa Valley, South Australia (Agent, $30.00, WineAlign)

It may feel like a wine framed fresh from uncharted grenache territory but this “entry-level” Cirillo has charted old vines dating back 80 years. The estate’s Old Vine 1850 is resolved from vines time-worn to 160, considered the oldest for the varietal anywhere in the world. Here beautiful and gorgeous come directly to mind, as does silky and deep beyond commonplace grenache depths. Fine, sweet tannins and balancing acidity are the endearment to unblemished, hardly handled red fruit. Marco Cirillo is the benefactor and the facilitator of this old vine bounty and his edifying handling makes for grenache both winsome and with age ability. It should be considered for one and then the other. Drink 2016-2025.  Tasted May 2016

Cirillo 1850 Steingarten Shiraz 2014, Barossa Valley, South Australia (Agent, $35.00, WineAlign)

Steingarten is an iconic Eden Valley Vineyard in name and nature for riesling but in Cirillo’s case it’s a matter of high altitude shiraz vines at the crossroads of the Barossa and Eden Valley ranges. Marco Cirillo’s handling involves open top fermenters, natural yeasts, basket presses and French meets American oak for 12 months. A stony, schisty distinction can’t help but compare to a northern Rhône, St. Joseph styling, with dark, pepper-laced fruit slipped into a velvet glove. Fresh and spirited, the tannins creep deftly and dutifully in, asking for patience and time. Drink 2018-2024.  Tasted May 2016

Stonier Chardonnay 2015, Mornington Peninsula, Victoria, Australia (25353, $35.00, WineAlign)

The fresh, minimalist approach entices and offers up such pure, unadulterated excitement, with thanks to the Mornington Peninsula and vines that first took root in 1978. The Stonier chardonnay has been off the radar and always beautifully made but this vintage will turn and attract new heads. Unshakable, racy, fleshy and spirited, this represents more than mere cool climate chardonnay, it vociferates the major importance of such an exhilarative maritime clime. Chardonnay and pinot noir heaven. Drink 2016-2020.  Tasted May 2016  @StonierWines  @Select_Wines

In the past 12 months I have tasted Canadian wines. Somewhere between hundreds and a thousand of them. Aside from day-to-day assessments at home, in the LCBO sensory lab, at the WineAlign office and at events in Ontario, I’ve also been a part of judging panels. In 2015 I sat in at the Ontario Wine Awards, WineAlign National Wine Awards of Canada, WineAlign World Wine Awards of Canada and Gold Medal Plates.

Canadian wine is growing with exponential force, gaining ground in markets at home and abroad. Brits dig us. I know, they told me. British Columbia is a desert oasis of variable climates to fascinating degrees. Oh the Syrah, Riesling and Gamay that rocks forth. Ontario stood up to two straight brutal winters and screamed, “we still made great fucking wine.” Take that mother nature.

And I quote. “Picking a top anything list is both a chore and a labour of loyalty. The opportunities to learn more about Canadian-made wine, especially the processes and the efforts, were numerous in 2014. Canadian winemakers opened their doors and when people came, they taught. They walked the vineyards, showed off their prized barrels and walked through the processes of making wine. Tasting and barrel rooms make for the greatest classrooms. Get out there in 2015. The experience is priceless.”

So I did. In 2015 I visited Niagara for Icewine Fest, discovered exceptional cider (with percentages of Pinot Noir and Riesling) made by Angela Kasimos at Small Talk Vineyards and have been pouring it on tap at Barque Smokehouse and Barque Butcher Bar ever since.

The taps at the two restaurants poured a record number of wines in 2015, from Tawse, Lailey, Norm Hardie, Creekside, Between the Lines, Kew Vineyards, Redstone, Stratus and Leaning Post. In March we travelled with CAPS Ontario for an eight-hour intense immersion into Niagara Riesling and Cabernet Franc.

Another visit with Ilya and Nadia Senchuk at Leaning Post Wines in Winona, Ontario shed new lights, especially for Syrah from the Lincoln Lakeshore. In June I toured the facilities at Niagara College with Dr. Jamie Goode, Magdalena Kaiser and our host Chef Michael Olson. Jamie and I tasted through an impossible number to count Domaine Queylus wines with Thomas Bachelder. On that I will report really soon. Really soon…

The Cool Chardonnay conference in July was in fact, the coolest yet. I spent three more glorious Annapolis-Gaspereau Valley days with Mike and Jocelyn Lightfoot in Wolfville, Nova Scotia. Visits to Domaine de Grand Pre, L’Acadie Vineyards and Benjamin Bridge filled out the east coast foray.

In the fall I made pilgrimage to Prince Edward County to get a grip on the eskers, ridges and aspects of what makes wine so special in that part of Ontario.

As always there are wines that should have, would have and could have made the cut were there more time, space and yet another, better headline to write. Some were knocked off the shortlist because they may not have been quite as exciting though were this list one of “most important,” then perhaps they would have stayed put. These four are perfect examples of that condition.

Château Des Charmes Old Vines Riesling 2008, VQA Niagara On The Lake, Ontario (277228, $16.95, WineAlign) Perhaps the assessment seven years later creates an unfair advantage but come now, a great wine is a great wine from its humble beginnings. At $16.95, in 2008 or 2015, in Niagara-on-the-Lake, on the Peninsula, this type of emerging propensity is more than gold or platinum, it’s money.

The Good Wine Cabernet Franc 2012, VQA Lincoln Lakeshore, Ontario (350751, $20.95, WineAlign) from winemaker Ross Wise and The Good Earth Wine Company’s Nicolette Novak is a necessary example of $20 Lincoln Lakeshore Cabernet Franc offering up every reason to drink it and demand that more me made.

Creekside Estate Winery Pinot Noir Queenston Road Vineyard 2013, VQA Niagara Peninsula, Ontario (Winery, $22.95, WineAlign) is what winemaker Rob Power refers to as a lay lady lay style. Still the Kama Sutra Pinot Noir of inviting behaviour.

Hubbs Creek

Hubbs Creek Vineyard Pinot Noir Unfiltered 2010, VQA Prince Edward County, Ontario (Winery, $28.95, WineAlign). The HCV Danforth Ridge is clearly a top Pinot site in the County (along with slopes on the Greer and Closson roads). Planted to high density the results are proven in wines like this 2010

The year that was 2015 seemed to bring out the adventurous winemaker, the risk-taker and the progressive thinker. While these five wines were not so much exciting as much as they were cerebral, they need to be mentioned. Whenever the envelope is pushed and the emotions of geeks are sequestered, well then a wine has achieved something special. These five really opened some doors.

Bergstrom and Hillebrand

Hillebrand Showcase Series Wild Ferment Chardonnay 2011, VQA Lincoln Lakeshore, Niagara Peninsula, Ontario (199273, $36.20, WineAlign) speaks the treble language of the vintage, predicated on bold ideas looking forward towards a bright future. Ultimately it is yeast and vintage, non partisan to site, that elaborate the Wild Ferment.

Southbrook Vineyards Whimsy! Orange Wine 2014, Niagara On The Lake, Ontario (Winery, $34.95, WineAlign). The technique and the practice is ancient and has been kept alive. The only questions need asking are “is it good, is it well-made and would I like to drink it?”

Tawse Chardonnay Quarry Road Natural 2014, VQA Vinemount Ridge, Niagara Peninsula, Ontario (Winery, $35.95, WineAlign). It’s one thing to make a natural wine in Ontario and a world away to do so with Chardonnay. “The law was never passed, but somehow all men feel they’re truly free at last. Have we really gone this far through space and time?”

The latest rendition of Vin de Curé, the “Parish Priest’s,” and the Jura’s Vin de Paille (Straw Wine) of Burning Kiln Stick Shaker Savagnin 2013, VQA Ontario (367144, $24.95, WineAlign) is a white elixir in search of roast pork, braised belly and cured bacon. Not to be missed.

Inniskillin Discovery Series Botrytis Affected Viognier 2013, VQA Niagara Peninsula (375ml), Ontario (405027, $39.95, WineAlign) though not a common Viognier practice can be imagined with Vendanges Tardives simulation.

The 15 Canadian wines tasted in 2015 that wooed, wowed and whetted the appetite are the fingers, toes and tongues of their creator’s ideals, hopes and dreams. They are also quintessentially representative of their time and place.

Charles Baker Riesling Ivan Vineyard 2014, VQA Niagara Escarpment, Ontario (Winery, $27.00, WineAlign)

From the rich limestone and sandstone beneath the clay, 1.1 acre Misek vineyard, a southerly ledge up from Highway 8 and an easterly hill down from Cherry Avenue. A very linear Ivan combs the catacombs of the Escarpment’s underpinning. A retaining wall of vintage attenuated rocks and stones, a vineyard’s low yields and the voices in Charles’ head have produced a striking Riesling. In 2014 adolescence has entered adulthood. Now before us is a grown up Ivan, mature Ivan, maybe even wise Ivan. Texture is in manifest control in this loyal, stay at home Baker, not yet running wild like free-spirited Picone. Ivan has presence, sometimes a great notion and is Baker’s longest bit of prose to date. The next great Riesling vintage will make it iconic. Drink 2016-2020.  Tasted April 2015  @cbriesling

Closson Chase Chardonnay Closson Chase Vineyard 2013, VQA Prince Edward County, Ontario (Winery, $27.95, WineAlign)

This CCV Chardonnay is one of departed winemaker Deborah Paskus’ final acts at Closson Chase. It will forever be noted as a legacy-cementing, swan song of career excellence. Crafted by Paskus and bottled by the next one, current winemaker Keith Tyers, the 2013 CCV is simply a tour de force. No such combination of richness, tropicality and pure grape tannin has ever infiltrated this Chardonnay, from this vineyard. I’m not sure there is a comparison in Ontario, at this level of excellence and at this price. A wine of pure impression, with Montrachet-like structure and Folatières-like precision. Seemingly capacious, its facile legerity is hypnotizing, quantitatively escalating in assembly of aromas, flavours, through texture and finally to longevity. The wine spent 16 months in a mere (17.25 per cent new) oak. That it notes 12.5 per cent alcohol on the label is next to impossible. The substance is just too buttressed to be so tender and effete. Impeccable balance, refinement and mineral finish. This is Chardonnay to confuse the world’s fine white collectors, to wreak havoc at international tastings for five to 10 years. Only 712 cases are available and at $27.95, is down $2 in price from the 2012. Best ever, hands down. Drink 2017-2023.  Tasted March 2015  @ClossonChase

Pearl Morissette Gamay Cuvée Mon Unique 2014, VQA Lincoln Lakeshore, Niagara Peninsula, Ontario (Winery, $29.00, WineAlign)

In December of 2014 I counted the ’13 CMU Gamay as one of my mind-blowing wines of the year. Once again we are witness to the authentic, raw and natural impossibility of the wine, from 100 per cent whole clusters sent to cement fermenters. The hue is just impossible, the wine sulphur-free. That ’13 Gamay did not last. I tasted again this winter and it failed me. It may return. This ’14 will never leave. It is natural to the 14th degree and yet its rich, smokey chocolate  centre and structure of pure physical stature will not let it slide, into a dumb phase or oblivion. This Gamay will strut. Cave Spring Csv Riesling 2013, Cave Spring Vineyard, VQA Beamsville Bench, Niagara Peninsula, Ontario (566026, $29.95, WineAlign)

That flesh, that Kabinett flesh, fills the CSV in every crevice. In 2013 the residual sugar number lies between 15 and 16 g/L, and though the crop was bigger, it was still picked later than in 2012. The result is formidable corporeal concentration, consistency of house style and perhaps the only ’13 Niagara Riesling to imitate, perpetuate and extrapolate on the vintage that came before. This Cave Spring concentrates fruit and Escarpment into a powerful Riesling, streaming like charged particles through changing expressions. A lingering ascension hovers as it rises, until it slowly fades into the welkin, like a balloon that languidly gets lost into the blinding blue of a midday sky. Malivoire Mottiar Chardonnay 2012, VQA Beamsville Bench, Niagara Peninsula, Ontario (Winery, $29.95, WineAlign)

Any Chardonnay from a vineyard discovered on a bicycle just has to be the bomb. Winemaker Shiraz Mottiar has had many an adventure on his bicycle and it all began here in a plot of perfectly planted Chardonnay. A block that became his home vineyard. The fodder for this most balanced Chardonnay and its abilities transcend all that has come before. You would never know a barrel was ever involved and yet the silken sheaths of texture are well compressed and expertly ingrained. Nothing falls out of place. Everything remains in its right place. Balance is and therefore always was struck. The match percusses flint for a mere nano-second, with just a brush on cymbal, the rock bleeds but is quickly clotted because the fruit shines still, like around the clock light. The steely aspect is a posterior one, antithetical and yet purposed, from this vineyard. Youth tells common sense to think 2011. The Riesling behaviour seems to play that part, of a chalky, piercing acidity, so typical of that vintage and so distinctly Thirty Bench. That the wine is older is not a big surprise because 2009 is the bomb. It may just be the best Riesling vintage, from on that Bench, in the last 10. Drink 2015-2025.  Tasted May 2015  @ThirtyBench

C.C. Jentsch Syrah 2013, BC VQA Okanagan Valley, British Columbia, Canada (Winery, $34.95, WineAlign)

Oh so beautifully nasty Syrah, spicy, saucy and wicked. Resin, somewhere between myrrh and mastic, redacts reductively and tension stretches the savoury aspects in all directions. Blood orange and anise blend into the aromatic grain, repeating again through flavour mettle. Fruit, acidity and tannin are interwoven, circulating and on edge, in pitch perfect darkness. Leaning Post Wines Pinot Noir McNally Vineyard 2012, VQA Beamsville Bench, Niagara Peninsula, Ontario (Winery, $38.00, WineAlign)

“I want you to see the difference between vineyards. That’s terroir.” This the crux and the impetus to abide and acquiesce fruit from McNally, a cooler, higher site of younger vines. For Ilya, this is “truffle hunting, eating roasted pig, at the base of an oak tree.” The forest floor and the catalytic funk come across more in flavour than smell, following cherries in the dead of an aromatic night. Modernity be damned, this strikes ripe, layered and nearly indelicate. The wine’s got some real chew to it, along with crispy flowers, like nasturtium and lavender. “I think this is the best Pinot that I’ve made,” boasts Senchuk, from 15 year-old vines at Peninsula Ridge. Ilya’s muse came from the 2010 made by winemaker Jamie Evans, along with the Voyageur ’10 made by Ross Wise at Keint-He. Wines that spoke in a vernacular that Senchuk could understand and relate to on a deeper level. Prime ripeness defines 2012. Though it teases of grandiose terroir, its complexities reign in the power with each sip, every time. Drink 2016-2022.  Tasted June 2015  @LeaningPostWine

Norman Hardie County Unfiltered Pinot Noir 2013, VQA Prince Edward County, Ontario (125310, $39.00, WineAlign)

Procuring depth in County Pinot Noir is a tough task within the constraints of resisting a temptation to reach for sugars, alcohol and dark berry fruit. Norm Hardie’s 2013 unfiltered (at 10.9 per cent) and lambent exegesis succeeds because it offers the best of all available worlds. Roots for vines that burrow to limestone develop a structure that while may have at one time been inconsistent, have crossed the threshold in ’13 to establish a guarantee. A Hardie PEC Pinot Noir can be bright and accessible. It can also be tough, tart and tannic, as it is here, again, but not without its foil. The work is now innate, the transitions seamless, the crossroads left in the dust. This wine will please two camps; those who can afford and demand immediate gratification and those who are willing to wait for secondary (two to three years) and tertiary (four to seven) character development. In 2013 the blend is not listed on the label though it strikes as a return to Cabernet Franc, albeit with a layer of lush not yet perceived. The 2013 combines the best of worlds put forth by the two previous vintages; ripe fruit, earthy-mineral tang, proper acidity and ripe, tonic tannin. The composition here is the most, accomplished, distinguished and relished. In 2013 the enjoyment can be right now or up to 10 years on. All this with thanks to exceptional balance. Drink 2015-2023. Hinterland Les Etoiles 2012, VQA Prince Edward County, Ontario (Winery, $39.00, WineAlign)

An axial split between Pinot Noir and Chardonnay balances this traditional method Sparkling wine, specific to and what can only, obviously be from Prince Edward County. Acidity defines its existence in every facet of its being. A rich star to be sure, from a warm vintage, free from frost and more importantly, immune to mould. Jonas Newman talks of the methodology, in growing low to the ground. As the sun goes down, the canopy shades the fruit, slowing down the ripening, extending the season, developing the sugars, the complexities and preserving the acidity. At 6 g/L RS, with limestone communication and that sassy acidity, Les Etoiles in ’12 is pure County Sparkling. It exudes untamed apple and unnamed acidity. The Hinterland acidity. It strikes early and often. Just add warmth, stir and voila. Terrific year. Drink 2015-2021.  Tasted October 2015  @hinterlandwine

Lightfoot & Wolfville Pinot Noir Ancienne 2013, Nova Scotia (Winery, $40, WineAlign)

If de novo for Pinot Noir is to be found in Nova Scotia then count me in because the inaugural release from Lightfoot & Wolfville is the trailblazer for and from the extrinsic frontier. Tasting the painstakingly measured yet barely handled 2013 for the first time (from bottle) is like falling into a glass of Nova Scotia cherries. Somehow there is this simultaneous and virtual voyage abroad to imagine a comparison with Nuits-Saint-Georges, in its earth crusted, sanguine, welled up tension that begs questions and belies answers. A year yonder the taste from barrel and what can be said? Pinot Noir adjudicated, into a cortex of recognizable consciousness and thus into the natural Nova Scotia mystic. Ignore and forgive the dope of first returns, for no one could have imagined such ripeness and immediate gratification. Future releases will dial back in the name of structure. That said, in 2013 there is a red citrus, ferric debate that will send this to an exordium seven years down the road. Impossible inaugural release. Approximately 50 cases made. “To me this is one of the most successful new varieties we are planting,” exclaims J-L Groux. In similar ways with Stratus varietal cousin Petit Verdot, acidity rules the roost. Smells like a just sliced open bag of organic earth, freshly neutral, funkless and emptying into a (first use) terra cotta pot. A rich, looking straight ahead expression. What it hides in fruit is lost to the brilliance of balance though plum is the operative hidden flesh and it will make a clearer impression when it steps clear of the tar and the tannin. The Old Third Sparkling Pinot Noir à la Volée 2011, VQA Prince Edward County, Ontario (Winery, $59, WineAlign)

“On the fly” is not exactly what comes to mind from this 100 per cent Pinot Noir, first Sparkling wine made by Bruno Francois. Calculated, attention to detail and intensity of ideation more like it. Three years on the lees, no dosage and from a vintage to speak in more than whispered voices, of acidity that announces its arrival with immediacy and a summons to contest. The nose does yeast, toast, citrus and ginger. A first release revelation as ever graced Ontario’s waves, as dry as the desert and lingering with switch back traces of its yeasty, toasty self. A single vineyard can be this way, equally and in opposition of natural and oxidative, with a hue less than Pinot Noir, though unrequited as a triumph when you get a ripe white from such Pinot. The production of 1200 bottles is relatively house high in a stunner that needs no sugar to draw up its flavours. Drink 2015-2023.  Tasted twice, July and October 2015

Benjamin Bridge Brut Reserve Methode Classique 2004, Annapolis Valley, Nova Scotia (275396, $95.00, WineAlign)

The ’04 is hanging in beautifully, on a wire of impossible balance, at 11 years old not yet really transitioning. There is simply too much brightness for it to give up its youth. You have to strain your ears, nose and throat to assuage just a hint at oxygen, life affirming breaths and then a keener sense of toast and yeast. Still behold the grapefruit, a sign of remarkable adolescence, the hang time amplified and in mass hyperbole here, in this current appraisal, address and time. How can richness act and display with such alpha freshness? How can an aging body not shed baby weight, turn lanky, lean and awkward? How is it neither the bitter pill of juvenility or senility has been swallowed? That is not the case here in a Blanc de Blancs which still has five to seven years of very active life ahead. Fear not good reader, this is only a list of seven, a set lucky wines and songs to play as you sip. On February 21st VINTAGES will roll a mid-winter classic release and though my recommendations will think globally next week, here the choices come out of Ontario, from parts Niagara and Lake Erie North Shore.

My picks are varied and the wines of a coagulated character best described as sui generis. Grapes come from old vines, are dried in kilns, fashioned in the Venetian Ripasso method and left on the vine to be stricken by the noble rot known as botrytis.

The brilliant leap of modern winemaking science allows the ancient to be realized in the present. Wines that pour themselves. Just as the earth has invisibly predisposed the vines, from cataclysms and through its evolution, so history is the unhurried intent. Winemakers are the messenger.

All this from Wine Country Ontario. Get to know it.

Speaking of WCO, if you happen to be heading to Ottawa for Winterlude this coming weekend, the VQA Wine Truck will be there, in Confederation Park.

Château Des Charmes Old Vines Riesling 2012, VQA Niagara On The Lake, Ontario (277228, $16.95, WineAlign)

Showy and yet so balanced and pristine. The cleanest fruit representing classic Niagara Peninsula Riesling from the ’12 vintage yet with an open mind to be walking far from home. Though void of agitation, there is plenty of verve and life. It comes by way of a mineral meets saline intensity, of iron and life, in wine. Like “sour building high as heaven,” and the components all kiss each other clean. Full of fine pastry layering, glycerine textured but not oily fruit, full and yet somehow so lacy. A really special Riesling from down by the lake.  Tasted January 2015  @MBosc

Ridgepoint Merlot 2010, Ripasso Style, VQA Twenty Mile Bench, Ontario (270488, $19.95, WineAlign)

Ridgepoint’s Ripasso style Merlot takes the varietal, stands it on its head and shakes the rust from out of its bones. It wears “a coat of feelings and they are loud,” with drying and painted flavours over top porcine, cocoa, wild and tight aromas. Merlot in a purple bottle, an animal collective, peppery, interesting, very Niagara, very Ripasso. Good length.  Tasted January 2015  @Ridgepointwines

Bricklayer’s Reward Block 7 Cabernet Sauvignon 2012, VQA Lake Erie North Shore, Ontario (406124, $19.95, WineAlign)

In Colio’s Cabernet Sauvignon there is dark chocolate everywhere, at every turn, in every crevice. Black pepper, fleur de del, currants and tobacco accent that chocolate ubiquity, with warmth and oak spice. Cherries seeped in astringent tannin offer a silky sweet sadness and “under this skin, there lies a heart of stone.” Counting for value, the Bricklayer’s reward is mercy, by way of character, texture and that wholesome chocolate. It may not be everyone’s cup of cocoa but it will age as long as the crow flies, into the next decade.  Tasted January 2015  @ColioWinery

Burning Kiln Stick Shaker Savagnin 2013, VQA Ontario (367144, $24.95, WineAlign)

Burning Kiln’s latest rendition of Vin de Curé, the “Parish Priest’s,” and the Jura’s Vin de Paille (Straw Wine) is that much more exceptional than what came before. The peaceful, heavy yet easy feeling continues, in alcohol weight and aromatic lift, ’cause it’s “already standin’ on the ground.” Like an eagle soaring, the Savagnin is a wild creature and yet solid, of a gamey, textural density. Imagine dried grasses and fruits, baked bricks, steamed crabs and honey. A wine so unique, mouth filling, viscous and tangy, from a wine region (province) with a maximum 10 planted acres. A white elixir in search of roast pork, braised belly and cured bacon. Not to be missed.  Tasted January 2015  @BurningKilnWine

Thirty Bench Small Lot Chardonnay 2012, VQA Beamsville Bench, Ontario (203703, $30.00, WineAlign)

Thirty Bench’s vintage-affected Chardonnay is rounded, full of warm, ripe fruit and noticeable oak. No darts are tossed, neither by woodsmoke nor spice and it ventures quite outward bound. This adventurous, appealing wine takes some chances, looks beyond its borders, reaching for notes both gravelly and scented; like cumin, coriander and a beautifully bittersweet Tom Collins. The rocks are certainly in, as are the sticks and stones, though they do not break bones. The price is another matter, affordable to some, prohibitive to “the little boys who never comb their hair.” For a Chardonnay such as this, of layers and riches, “they’re lined up all around the block, on the nickel over there.” It time waits for this, value will increase and it will become a wine for tomorrow.  Tasted January 2015  @ThirtyBench

Andrew Peller Signature Series Sauvignon Blanc 2012, VQA Niagara On The Lake, Ontario (405043, $30.20, WineAlign)

Here Sauvignon Blanc is wild and free, bares then sells its soul and is runnin’ with the devil. The expression is a free dance of varietal character, flinty and extremely juicy in simultaneous movements. Though the SO2 level is high (it cleans the passages), the compote is peachy, at times canned and soaking in syrup, but the accents are laden with capsicum, lactic white plums and wet grasses. Slightly bruised and/or oxidative, the mineral tang is pushy and formative. This is serious Niagara-on-the-Lake SB, crazy and compressed stuff. It lives its “life like there’s no tomorrow, finding “the simple life ain’t so simple.” Like vintage Van Halen.  Tasted January 2015  @PellerVQA

Inniskillin Discovery Series Botrytis Affected Viognier 2013, VQA Niagara Peninsula (375ml), Ontario (405027, $39.95, WineAlign)

Inscribed into the Inniskillin ‘Discovery Series” for good reason, the BA Viognier is a product of luck and circumstance, a small parcel of grapes blessed with the not oft success of climate leading to ripening and noble rot. Grapes left to hang into late harvest (as opposed to freezing on the vine for the production of Icewine) is not a common Viognier practice. While the frank and masculine aromatic presence may be compromised here (the nose is quite reserved), the overall ubiquity is omnipresent and enveloping. Such a clean and young botrytis offers soft chords and a lifting voice. You can smell the fruits east and west; green and yellow plantain, peaches and plums. Flavours of lemon curd and pineapple arrive at a point where the tannin finds a way to “fuse it in the sun.” It can be imagined this Vendanges Tardives simulation will go long so “dream up, dream up, let me fill your cup, with the promise of a man.”  Tasted January 2015  @InniskillinWine

The South Coast is clear

It would be a stretch to expect anyone living more than 100-km away from Port Dover to know much about Ontario’s newest and next viticulture hot spot, Ontario South Coast Wines. The same concession might apply to most journalists working with regular intensity and immersion within the Ontario wine industry. OSCW should not be confused with its brethren further west, the wineries that make up the Lake Erie North Shore appellation. Ontario’s southwest? Wine route? You may ask yourself, how did I not know about this place? How can this be?

This is the area most likely to be Ontario’s next VQA-qualified appellation. Cool-climate remains the most apt descriptor, no different from LENS to the left and Niagara to the right, but this pocket of the lake is blessed of a specifically warm-ish micro-climate. The name itself presents as a bit of a misnomer, “Ontario South Coast Wines,” its geographical location set upon a ridge overlooking the north-east shore of Lake Erie running east from just west of Long Point, through Port Rowan, St. Williams, Turkey Point, Normandale, Port Ryerse and to Port Dover.

To agree with the emerging region’s calling card, simply draw a bunch of parallel and converging lines south from Lake Huron, through the Highway 401 straddling communities of London, Kitchener and Cambridge. Continue southeast past the Highway 403 delta of the Brantford area and through the Highway Three corridor towns of  Waterford, Courtland, Delhi and Simcoe. Spread out along the Eco-nature park-beach community-rugged coast and now you’ve got your bearings. This is the wine country of Norfolk County.

Better still, follow the lead of Magdalena Kaiser-Smit of Wine Country Ontario and climb aboard the Kayloe, a 65-foot boat run by Nomada Charters and take a three-hour Lake Erie tour from the water, with a dozen or so local wineries on board and get to know the people and the place. Listen to Mike McArthur, President of the Grape Growers Association speak about 1996, the transition year for the area. Realize how an agricultural community that once housed tobacco farms make a communal decision to transform with the times and switch to grape growing. Hear him talk about the great history of viniculture in the least known of Ontario wine landscapes, a place where grapevines were spotted as early as the late 1600’s.

The boat trip and the wine speak mean nothing here without the idea of hospitality to accompany the local ferments, wines made not just from grapes, but from a wide variety of fruits. There are approximately 130 acres under vine in Grey and Norfolk counties. Nine wineries are located in Norfolk, with seven currently open for business. Liz Campbell and Trevor Taylor of F.W. Knechtel Food Catering make use of local asparagus, mushrooms and Lake Erie Perch to bring matching and meaning to the wines.

Outboard BBQ

Fruit wines are an integral part of the South Coast experience so I decided to begin and end on high glucose notes. Berries have half the natural sugar content as grapes so cane sugar is added to give the yeasts enough convertible material to raise the alcohol to stable levels for longer preservation. Blueberry Hill was my first stop, a St. Williams winery that ferments with the hybrid Vidal, along with cranberries, raspberries and of course, blueberries. The wines are pure, distilled fruit expressions, with tart notes and flavours of the heart. Their straight-up blueberry is the best of the lot.

The uncontested Norfolk leader is Burning Kiln Winery and not just from a quality standpoint. Burning Kiln has positioned itself as a marketing and appellative promotional leader with Doug Beatty (formerly of Colio Estate Wines) as its spokesman, front and centre. Winemaker Andrzej Lipinski (formerly of Vineland Estates, Legends Estates, DeSousa, Fielding Estate, Megalomaniac, Foreign Affair and Organized Crime, now of Colaneri Estate and his own label, Big Head Wines) is an established Ontario master. His experience with the appassimento method is perfect for BK’s old tobacco kiln employment for drying grapes. Assistant winemaker Patti Fixter authored a feasibility study on Norfolk County’s Sand Plain and its ability to host a viable, sustainable viticultural industry. The winery is progressive, adventurous and ostensibly single-handedly responsible for putting South Coast on the current Ontario wine road map.

Doug Beatty brought some tank samples aboard. The springy and herbal 2013 Horse & Boat Riesling carries 20 g/L of residual sugar “to punch back the acids.” This is part of BK’s Green Kiln Series. A 2013 Savagnin tank sample carries similar texture but in elevated glycerin. The metal on top of that mouth feel really come forward to balance the residual and the alcohol (which is dramatically indiscernible). Grassy Sauvignon Blanc-like aromas and a very Jura palate are the hallmarks of a South Coast take in a wine that is such a baby.

The Harvest Party White tank sample gathers Chardonnay (59 per cent), Gewurztraminer (21), Riesling (18) and Pinot Gris (2). A chewy, textured, kitchen sink blend that stings of limestone, an herbal balm and a late edgy metallic bite. The Chardonnay 2013 tank sample spent 18 months in foudres. Reminds of a Lenko treatment, from fruit 50 per cent estate and 50 Niagara. Thin but linear and focused, with very good length, a crunch of green apple and round herbiage.

The 2011 Kiln Hanger from tank follows the same process at the ’10 from a less than scorching vintage but will arrive in bottle at 15.8 per cent alcohol. Only 400 cases will be produced from a cat-like specimen, still chewy, a chunk of major Cabernet Franc change. Higher in acidity and cool plums than in 2010, this is no shrinking Norfolk violet. Will show more style and less humidity than that ’10.

Burning Kiln Savagnin ‘Stick Shaker’ 2012, VQA Ontario (367144, $24.95, WineAlign)

What BK refers to as dry white Vin de Curé, or the “Parish Priest’s,” this is their take on the Jura’s Vin de Paille (Straw Wine). The South Coast may have a wine tradition that dates back to the 1600’s but Savagnin does not go back by the Ontario centuries.  At 14.9 per cent a heavy feeling would be expected but to the contrary, the SS is light as a feather, like a CSN ballad. Aromatically muted, the warmth of the vintage comes through in the textural density of the palate. Expressive and chewy like all of the Burning Kiln portfolio. A wine from two of only 10 total acres planted in the province. Though we may be “gasping at glimpses of gentle true spirit,” here’s to helplessly hoping Savagnin takes root and flourishes in Ontario.

Burning Kiln Harvest Party Red 2013, VQA Ontario (Winery, $15.95, WineAlign)

From an overall 50/50, Estate/Niagara blend. The composition is Syrah (49 percent, all Niagara), Cabernet Franc (42 per cent) and Cabernet Sauvignon (9). Reminds of Fielding’s Fireside Red in approachability and blending acumen. Though an understudy, the softness of the Cabernet Sauvignon is duly noted as a foil to the clay/kiln effect from the piquant Cabernet Franc. Some chalk and even more chew, in the beginning this is just mostly fresh and wild with low, obtuse angles.

Burning Kiln Cab Frank 2012, VQA Ontario (Winery, $24.95, WineAlign)

Named for the vineyard manager at Burning Kiln, Frank DeLeebeck was a tobacco farmer for more than 20 years. From 50/50 Estate/Niagara, 100 per cent kiln dried grapes for 10-14 days. This is CF all about concentration and a bridge from old tobacco to New World winemaking. Here kilns are the vehicle to transport the winery’s wines to the New World. Though this rich, cakey Cabernet Franc turns sweet on the finish, there is terrific acidity and admirable length. Holds its 14.3 per cent alcohol well. A unique appassimento.

Burning Kiln Strip Room Merlot/Cabernet Franc 2012, VQA Ontario (Winery, $24.95, WineAlign)

A 50/50 Estate and Niagara fruit split, classic Right Bank-styled blend of Merlot (55 per cent) and Cabernet Franc (45), kiln dried for 8-14 days. There is strength in alcohol (14.3 per cent) yet calm, dry reserve in (4.5 g/L) residual sugar. The aromatic profile is the most flirtatious of the BK stable, with the bruising and crushing of so many berries. There is a plum softness given by the Merlot, along with chalk, grain, vanilla and coconut from the generous six-month, three (French, Eastern European and American) oak layering. Like quality satellite St. Emilion, with so much noticeable tobacco.

Burning Kiln Kiln Hanger 2010, VQA Ontario (Winery, $59.95, WineAlign)

A 100 per cent Cabernet Franc, 100 per cent Kiln dried red made in two batches. Ages 32 months in Eastern European and American oak, half held back for this, The Sequel. Altogether there are 335 cases made of this huge, 15.9 per cent alcohol behemoth. The second coming furthers the already wealthy concentration with Alice anxiety and anaesthetizing mouth filling richesse. Here layers anything but a simple matter of loaded, dusty cocoa, decadent chocolate and creamy mocha. “I couldn’t tell if the bells were getting louder,” the entire cooperage preaching of “fanatical exposers on corners prophecy.”  Huge wine. Love it to death.

At Quai du Vin there are vineyards planted in 1970 by Redi and Roberto Quai. Today Jamie Quai makes the wine at the St. Thomas winery with the wisdom of those vines and the respectful touch of a winemaker with a minimal interventionist approach. Jamie Quai is concerned with the unearthing of micro-plot nuances in the Norfolk terroir. Quai du Vin farms 20 acres and has been open for business since 1990.

Quai du Vin Chardonnay 2012, Ontario (winery, $13.50)

From 15 year-old vines on the Sparta Moraine and what Jamie Quai calls “a field blend.” Though the soils are all heavy clay, there is a clay meets stone textural balance, surely thanks to five or six months lees contact. Like well-made southern Burgundy, the chosen yeast heightens the autolytic chain, allowing the flavours to veer tropical but not overly so. A Chardonnay that fell in love with a well-judged barrel while conceptualizing “good botrytis,” resulting in exceptional complexity for a song. Will drink beautifully through 2016.

Quai du Vin Red, Signature Series 2012, Ontario (winery, $12.50)

A blend of Marechal Foch (40 per cent), Baco Noir (30) and Merlot (30) from a host of appellations; Beamsville Bench, Niagara Peninsula, Sparta Moraine Acres and Elgin County-North Shore Lake Erie. This has a thick brushstroke brought on by a predominance within the conglomerate of heavy clay. Unexpectedly tannic, chewy, with a sweet chocolate brownie finish. Not to mention tomato and the plant’s savoury leaf. The first vintage that Merlot made the cut in lieu of usually employed Cabernet Franc.

Quai du Vin Merlot 2012, Ontario (winery, $16.00)

Made from the same Merlot fruit in the Signature Red. Spent just over a year in barrel, the wine is still very primary and aromatically speaking, highly dusty. A painted note, green tea and rusty dry fruit are wrapped in an early reductive, nearly volatile note. Chewy, splintered, with grit, conceit and solid work. Note: Only 25 per cent of the vines will likely have survived the winter of 2014.

A dry white made from three (numbered) hybrid grapes developed at Vineland Research Station.

From 100 per cent Estate vines planted in 1996, this has that roots gathered mineral salinity from sandy loams so reminiscent of the Burgenland’s dry Rieslings. That Austrian run-off minerality is uncanny and when foiled by the old vines glycerin texture, the end result is quite a study in Simcoe complexity. A small amount of Traminer lifts the Riesling, along with some lees usage. Amazing discovery.

Villa Nova Estate Winery Pinot Noir 2012, Ontario  (winery, $15.95)

From Estate grapes planted around the year 2000. Lithe, pretty and certainly very Pinot. Like Kiwi Pinot in that the flesh is permeated by varnish. Wraps together cherry, pomegranate, cranberry and wet earth. If an Old World comparison might be made it would be to Mercurey, as it’s light, highly floral, with a break in the mid-palate and a stretched finish. “We’ve always ended up with light Pinot,” says winemaker and mad scientist Phil Ryan. That’s a good thing.

Frisky Beaver White 2012, VQA Ontario (345629, $13.95, WineAlign)

The all Niagara fruit blend is Vidal (75 per cent), Riesling (15) and Gewurztraminer (10). It’s considered VQA “Ontario” because Dover Vineyards awaits a viticultural designation. The irony here is that it may as well be labeled Niagara. This is clean and easy stuff, low in alcohol (11.2 per cent), elevated in sugar (18.4 g/L) but balancing in total acidity (5.6 g/L). Overall it has texture and tannic ability. Not a stressful blend by any stretch, it’s Pinot Gris like in Alsatian attitude with a juicy, peppery pear fruit tendency.

Smoke & Gamble Gewurztraminer Süssreserve 2011, Ontario (winery, $21.95, WineAlign)

Unfermented (11.8 per cent) appassimento juice is added back in for aromatic and textural effect. Semi-tropical and semi-dry, in pineapple and green apple but not lychee. This is Musqué in scent, clean, pure and true. From 100 per cent Norfolk fruit.

Smoke & Gamble Merlot Reserve 2011, Ontario (winery, $21.95, WineAlign)

A wild at heart Merlot, brooding, serious, deep and full. Caramel and chocolate, ginger spice and ripe plum. Coat, paint, coat, repeat. Alcohol is big (14.4 per cent) but well-integrated and whatever perceived sweetness there may be (4 g/L) is mitigated by a leafy, savoury edge.

Smoke & Gamble Cabernet Franc Appassimento 2010, Ontario (winery, $21.95, WineAlign)

Here is the deepest, post-modern wine made anywhere in the province. Reeking of rich, candied violets smothered in dark chocolate. Chalk and talc in licks and a dense, chewy mid-palate. A massive (14.5 per cent) wine with so much chocolate dust and thick glycerin. A stable of so many big attributes and in only winemaker Robert Gill ‘s second year dealing with the Amarone-style methodology. “The first year I was scared, I’ll admit.”

Golden Leaf Estate Winery Vidal 2012, Ontario (winery, $14.25)

From estate vines. Juicy, white peach and nectarine aromas, metal angles, straight up distillation of pure grapes.  Low brix and solid PH give it tannic thrust.

Estate fruit (100 per cent). Sweet and with aromatic energy. Off-dry all the way. Leans Mosel in kindred spirit. Orchard fruit and excellent acidity. Slightly bitter-tinged finish, but in a noble way.

Golden Leaf Estate Winery Baco Noir 2011, Ontario (winery, $18.20)

A cheese in lees inflected BN, not the brooding and pitchy type. Some elegance, in as much as Baco Noir can show. Yet unusual because of that yogurt drip. Good acids, floral tones and citrus.

Once again, all the lees, cheese and citrus , but also sweet and sour with some soy and caramel. Tight and racy Chambourcin, certainly as complex and accomplished as any this side of Michigan.

High cranberry and dry earth bring this right back to Burgundy basics. Rosehip and sandalwood from old oak wrapped in sweet tannins. A bit of sinew and braised bouille. The coat is on.

From Niagara (De Moura Vineyards) fruit. Chalk in limestone, chocolate and a medium wood toast. Some green tannin, tea for sure but also some sweet tannin. Also roasted, charred red meat.

We wrapped up with some of the most righteous fruit wines one could ever hope to taste by way of Wooden Bear L Winery Inc.  Kim Ludwig’s wines are full of wildflowers, citrus expression and great balance. Her Gay-La Apple wine from 100 per cent Gala apples is like savoury Sauvignon Blanc, with angles in metal, low acidity but it’s dry and crisp. Her Sangria in a bottle has a liqueur-like taste, a slightly reductive, good bitterness and so much spirit. Not to mention tons of grapefruit.

The génial wines of Jura are a peculiar bunch. Nothing else in France, or the world for that matter, resembles them. They are specific, unique, idiosyncratic, and rare. Specific because virtually every producer makes the same set of wines. Unique for their varietal distinction and the élevage methods that lead them to market. Idiosyncratic due to their oxidized versus non-oxidized styles. Rare because at any given moment in time only four are available in the LCBO. There are currently 58 available at the SAQ.

Jura is what Wink Lorch describes as a “bijou” wine region located in eastern France, east of Burgundy and within a stone’s throw over the Alps to Geneva in Switzerland. Mountains are everywhere, soils give vineyards a variegation of clay, marl, fossils and plenty of limestone. Napoleonic cold and harsh winters, serious frost issues and complex methodologies challenge vines and winemakers in ways empathetic vintners in Ontario have no problem understanding. Could Ontario be the kismet New World wine region to foster Jura, the strange and beautiful? Savagnin produced by Ontario South Coast Burning Kiln Winery is a remarkable rendition and the most interesting wine recently tasted in Norfolk County.

But I digress. Back to Jura. Bresse chickens are a most delicious and famous commodity. Saucisses morteau the pork sausage is a most righteous banger. Comté (serious) and La vache qui rit (not so much) are its most famous cheeses.

The Wines of Jura committee consisting of flying Sommelier Evan Saviolidis, Good Food Revolution, and The Tuxedo Wine Experience team brought three Tissot’s along with 14 other Jura producers in April to hit the hardwood at Toronto’s lofty Burroughes event space.

The seminar was presented by Jura expert Saviolidis with an overview of the region’s history, pertinent facts and winemaking styles. A select tasting of its wines followed, running the gamut from dry whites through to its most unusual and singular oxidized rarities.

Whites are made from Chardonnay, Savagnin and (most-planted) Poulsard, reds from Trousseau and Pinot Noir. Easy-drinking wines come from clay, Pinot Noir from limestone, the top examples from marl. The anti-tannic and low-pigmented Trousseau (Bastardo) prefers clay or marl. Savagnin (also called Melon D’arbois, Gamay Blanc and the rare variation Melon a Quere Rouge) demands rugged, steep slopes and grey marl soil.

The styles of ouille (topped up, “filled to the eye”) vs non-ouille, oxidative or not conundrum can confuse, even distort sensibilities and previous frames of reference. Some typical Jura whites (vins types) like Savagnin can make both near-oxidative, Fino Sherry-like wine and a highly oxidative vin jaune (yellow wine), most famously from Château-Chalon. The latter is aged in barrel for six years and three month with its air protective layer of yeast. It is only made in great vintages. No specific appellation is tied to its magic pixie yeast and volatile acidity.

The region is divided into four AOC, Arbois, Cote de Jura, L’Etoile, Chateau-Chalon. Jura is the only (AOP) wine region to make Macvin de Jura, a traditional blend of non-ouille Savagnin and Chardonnay. The wine is fortified with a neutral (pomace, or marc) spirit added. The vin de paille, (straw wine) is made from dried grapes then turned into wine. These are examples of the joys of Jurassic idiosyncrasy.

Crémant de Jura is produced all over the region and can use all five varieties. Arbois is the oldest and most prolific production. Cotes de Jura comes in red, white, and rosé. L’etoile whites are famed after fossils that look like stars, the wines made from Chardonnay, a blend of Chardonnay and Savagnin and Poulsard.

Hue is not necessarily a key to wine colour. The reds can look like Rosé, some oxidized whites like oranges or very light reds. Red and white grapes mix to make dessert wines. What’s on the label is the map to use as a guide to what’s inside. Saviolidis offered his insight and moderated the discussion on the following six wines poured at the seminar.

Domaine Désiré Petit Crémant du Jura NV (winery, 8,70 EUR)

A blend of Chardonnay (dominant) with Chambourcin and Pinot Noir from the Revermont in Jura, the sweetness is perceivable (8 g/L residual) and the texture palpable (15 months on lees). Acts like autolytic champagne, with noticeable terpenic pith in a low dosage, near-Brut style.

Domaine Rolet Père et Fils Arbois Poulsard Vieilles Vignes 2011, (SAQ 11537090, $22.45)

From vines that grow in native, red, rich and heavy marl soils. Here the minimum is 35 years for those vines, the fruit in requiem of big barrels, (foudres) for 15 months. Smells like a cave and its hanging cure, but also red currants, white berries and a sweaty red onion straight from the fridge. To taste it attacks in tart, dusty pepper tones. Akin to some Loire Cabernet Franc albeit much more interesting.

Domaine Jean-Louis Tissot Arbois Trousseau 2010, (winery, 10.50 EUR)

From red marl and gravel soils, the yield was 4L per hectare for this vintage only. Vinified in cement vats with 15 days of maceration and 18 months of aging  in old foudres. A death-cab cute Trousseau that avoids intensity though it is marked by cracked pepper, blue fruit, cacao and reducing, wet, oxidized earth. Cherry and ash palate, long and very pure. A wonderful wine of soul meets body, “like a melody softly soaring through my atmosphere.” Trousseau is certainly indie, emo even but this example shows the talent of the winemaker.

Domaine André Et Mireille Tissot Chardonnay ‘En Barberon’ 2011 (Agent, $45)

From old vines 20 km south of Arbois, this is one of seven Chardonnays produced by Stéphane and Bénédicte Tissot. Organic and biodynamic since 2004, this argillaceous mineral-laced and calcareous-driven wholly unique Chardonnay has that atomic, soda-driven petrol usually reserved for Mosel Riesling. Climb the rock and cover it with tropically coated apple caramel and toasted nuts. An old school, baby of the barrel that will age slowly and surely for 20 years.

Berthet-Bondet Château-Chalon 2007,(365171, $86.95)

Of a very small appellation (4.5 hectares from an area totalling 40-45) this Vin Jaune is produced from the best parcels of land at Gaillardon (in the parish of Domblans), Beaumont (in the parish of Ménétru le Vignoble) and Sous-Roche (in the parish of Chateau-Chalon). Savagnin aged the necessary six years and three months in oak barrels with native yeasts. A non-fortified, non-ouille Jura, natural with oxidation and evaporation over time. Explicit in dried fruit and nuts and an underlying pink salinity, likening it to Sherry. Rich and both sweet/sour to taste. Like Fino, at five times the price. An eccentric wine to be sure, intended for rubber-necking and curiosity thrill seekers. Oxidized but not eclipsed by bruised fruit and dry as the desert. Is there any life in this strange and not so beautiful elixir? “There is no dark side of the moon really. Matter of fact its all dark.”

Domaine Baud Cote de Jura Vin de Paille 2009, (winery, Approx. $40-50)

Made from a third of each variety, Poulsard, Chardonnay and Savagnin. A dessert wine pressed in January from 100 kilos, resulting in 20 litres final product. Best served with chocolate, cake, foie gras and aged cheeses, this rendition holds of balanced (30 g/L residual ) sweetness. The aromatic balance comes from salinity, raisins and candied fruit, along with brown sugar and dried apricots to taste. There is nothing overly sweet about it save for a lingering hazelnut purée. Certainly drying but without an attack on the salivary glands.

After the seminar the 17 Jura producers poured their wines to a larger audience. Here are notes on five.

Domaine Jacques Tissot

Arbois Chardonnay 2010 – Unoaked, lemon-lime fresh and tangy.

Arbois Nature 2013 – Savagnin with a bounce in its step. Waxy with a citrus squeeze over just crushed grapes and approachably fruity.

Arbois Savagnin 2009 – From vines out of marnes grises du lias. At this stage it’s just developing a butterscotch and nut brown colour meets flavour sequence. The citrus here is in pith.

Arbois Trousseau 2010 – The soil for this is argiles à chailles (clay-with-flints). Earthy, lithe, ripe, dusted with dried cherry and white pepper.

Crémant Du Jura Blanc Brut NV – From 100 per cent Chardonnay this is like lime cream soda without the sugar. Perfectly dry expression.

Arbois Poulsard 2010 – Grown out of marnesirisees du trias the stone imparts a seafood character. So natural, uncultivated, sea salinity and fish funky.

Arbois Vin de Paille 2008 – The juice is kept four months and then aged four years. On the sweet side of the style, with less  nuts and more marmalade, particularly apricot.

Arbois Vin Jaune 2006 – Down by law aged for six years and three months. As Sherry-like as it gest with added lemon, wax, piquancy and blanched nuts.

Macvin Du Jura Blanc NV – A sweety that finishes concrete dry. Like nut-crusted white flowers. Would last in the fridge for six months.

Arbois Chardonnay Les Corvees Sous Caron – Smooth, linear, calm, safe and easy-going.

Côtes du Jura Rubis 2012 – From vines 20-30 years of age, this is a pragmatic and necessary blend of Trousseau (45 per cent), Poulsard (45) and Pinot Noir (10). Currants, red bell pepper, charcuterie and potpourri aromas. Tart and delicious.

Côtes du Jura Chardonnay 2012 – Ouille from a wine aged in five to 10 per cent, one-year old oak. Fresh with lemon and grapefruit. Polished, zest and more zest.

Côtes du Jura Naturé 2012 – A year in stainless, this is modernized but not unnatural. Scents of lime and its pith and a cemented sense of concrete.

Côtes du Jura Tradition 2010 – A combination of Chardonnay (70 per cent) and Savagnin (30), each oxidized separately. Has a minty, cool piquancy and a thin to win attitude.

Château-Chalon 2007 – See above.

Vin de Paille Cotes du Jura 2009 – Such fine balance in this example. Parity for the nuts, dried fruit and never cloying marmalade. Top dessert example.

Domaine Rolet Père et Fils

Arbois Blanc Harmonie 2011 – Spent 12 months in small barrels. Well-judged blend that is waxy, high on lemonade and a piercing acidity. Reminds of young Sémillon.

Côtes Du Jura Expression Du Terroir 2008 – Though this spent three years in oak it’s impossibly fresh. A wine topped up by Savagnin, the minerality is of a largesse and the wax-tang quotient crazy in length like no other white in the room.

Arbois Rouge Trousseau 2009 – The palest red, still fresh for its age.

Arbois Rouge Tradition 2010 – Poulsard, Trousseau and Pinot Noir. Spent 15 months in Foudres. Flinty and sulphurous. Of the earth. Long finish.

Arbois Vin Jaune 2006 – Meditative, mediated, resolved.

Crémant Du Jura Blanc Brut 2008 – Vintage dated, striking, pulsating, lemon soda. Chardonnay (70 per cent) with Pinot Noir and Poulsard.

Arbois Rouge Poulsard 2011 – Red onion skin, concrete, earth, tar and ash.

Vin de Paille 2006 – From Chardonnay (40 per cent), Savagnin (40) and Poulsard (20).  Dry, cheesey, leesy, yeasty nose. A sweet marmalade palate ensues, with a pith bite into orange peel.

Crémant Du Jura Blanc NV – Chardonnay (55 percent), Pinot Noir (35), Poulsard (5) and Trousseau (5). Quite elegant, very fresh, high-toned fruit.

Arbois Chardonnay Les Bruyères 2011 – From terroir argileux du Trias clay soils, there is density, less abstruse character than others and high citrus.

Arbois Trousseau Singulier 2012 – The smell of fresh concrete and a coat of varnish. Very peppery and distinctive.

Arbois Chardonnay Les Graviers 2011 – A more serious and brooding rendition from limestone this has an oxidative quality.

Arbois Vin Jaune Les Bruyères 2007 – From terroir argileux du Trias clay soils, there is density, less abstruse character than others and high citrus.

Château-Chalon 2007 – Unique to this genre, here there is less brawn, more citrus pith and oyster shell, Most of all there are crazy acids. This version shows the greatest potential for longevity.

Arbois Savagnin 2009 – A three-year aged white that results in a dovetailing of dry, nutty and tart.

Arbois Poulsard 2010 – Spent 10 days in cement and six months in large foudres. Good freshness, some earth and straightforward painted flavours.

Chardonnay 2011 – Out of calcareous soil there is a soft, dreamy, mouth filling creamy character. Delicate until the angle of citrus, in pith and zest takes over. A viscous, or gras Chardonnay.

Arbois Vin Jaune 2006 – Slightly lower alcohol (14.5 per cent) makes for a brighter nose. Fresher than the other ’06’s, with lifted floral aromatics, less heavy in liqueur and more clarity.

Crémant Du Jura NV – From 100 per cent Chardonnay this is bright. fresh and lively.

Macvin Du Jura NV – From two thirds Savagnin and 1/3 Eau de Vivre de Marl this is all about sweet smeling white flowers.

‘It’s Only Rock ‘n Roll’ (but I like wine)

It’s all about the rocks and stones, in music and wine. Witness songs of raw power, laid wide open, where the squeaks of chord changes, the twang of a plucked bass and the bee bop of a snare hang out exposed and naked. Seek relief in the soothing sound of a soulful ballad but nothing eases pain like a raunchy tune that “invites us to dance in the face of its own despair.” Rolling Stone Magazine rock critic Jon Landau‘s 1974 review of the Rolling Stones quintessential “we’re a rock ‘n roll band” album It’s Only Rock ‘n Roll hit the proverbial nail on the head, then and now. Like the title track, “it resonates like the sound of a shotgun.”

There was no It’s Only Rock and Roll Carrie Underwood duet with Mick Jagger last night at the The Rolling Stones 2nd ’50 and Counting’ tour Air Canada Centre show. I did not go. I had my fill of totemic super group, epic rock concerts in the 80′s and 90′s; Stones, Who, Kinks, Grateful Dead, Dire Straits, Genesis, Supertramp, Allman Brothers, Crazy Horse, E Street Band. Now give me shelter in the sounds of Spoon or Divine Fits. The best concerts then were the rock royalty derivative or solo shows; David Byrne, Peter Townshend, Mark Knopfler, Peter Gabriel and Keith Richards with arguably the greatest grape-related band name ever, the Expensive Winos.

The wine analogy qualifies as yet another hermeneutic. Minerals walk the walk and talk the talk. If the wines qualify as natural all the better, especially when the ferment is unafraid to expose its flaws and idiosyncrasies to be ogled and gazed upon. To smell rocks and stones in a swirled glass fulfills a base and necessary need. The fascination for geology can be quenched by so many international varieties and soils. Chenin Blanc in the Silex of the Loire, Nerello Mascalese atop volcanic Etna, Grenache amid the boulders of Châteauneuf-du-Pape, Sangiovese from the ultramafic of Tuscany and Chardonnay out of the Kimmeridgian soil of Chablis. To each animates an ownership of terroir. The world’s quarries have accustomed wine geeks with centuries of fine drink but never has an obsession possessed a community with such pleasures ere unknown. Enter the studios of the Niagara Peninsula, Lake Erie North Shore and Prince Edward County. Electric Lady, Motown and Muscle Shoals all rolled into one.

The collective geological consciousness embraced by the Ontario wine engineer is only rock and roll but everyone is digging it. If Let it Bleed signaled the Rolling Stones’ entry into an affair and infatuation with all things Americana, especially for vocals and guitar with a country music accent and twang, then It’s Only Rock ‘N Roll is the high swagger point. As a record it represents the culmination of a period where the room is eventually tied together by the rug of Some Girls. Ontario winemakers have entered the ‘open G’ tuning period in their careers, now with a few passionate, penetrating records under their belt. A ten year road lays ahead, destined to me mapped out by their greatest works, lithospheric wines to define their legacies, in toto as the supergroup history will remember them by.

Rocks and stones have for millenniums been used to construct homes, pathways, fences and places of worship. They have also been used to build wine. Here are ten current releases, forged from diverse mineral terrains and available now.

Château Des Charmes Chardonnay Musqué 2010 (318303, $16.95 and at the winery) is the unoaked result of aromatic Clone 809 combed from the heavier clay-based soils from the St. David’s Bench Vineyard and the silty, mineral rich soils from Seven and Seven Vineyard. Tropical, strutting stunner with “a thousand lips I would love to taste.” Tell Ms. Musqué if you can’t rock me, nothing can.  90  @MBosc

Valdeorras Tempestad Godello 2011 (276071, $17.95) from Bodegas Abanico in Valdeorras whiffs the mineral temptation of a weathered, wet copper penny, secondary Riesling-like petrol, ripe peach and jamón wrapped around white date.  Delicious juicy fruit, nutty and just a touch of lees. Late seafood aftertaste, a crab drink to enjoy with a tempest of Spanish tapas. Ain’t Too Proud To Beg for this one.  89  @bodegasabanico

The Foreign Affair The Conspiracy 2011 (149237, $19.95), kissed, re-passed over and threatening to push boundaries as if it were singing “if I could stick a knife in my heart, suicide right on stage.” This Ilya Senchuk beauty may only be ripasso but I like it. Eases my pain and my brain. Excellent verve and honed of a rock star’s capacity to be loved, with tart, red and black fruit in waves, tar and charcoal. Svelte balance in fruit, alcohol, sweet and sour. This is THE vintage for this wine. Ten plus years lay ahead for a long affair and it will be rewarded with praise in future tastings.  92  @wineaffair

Coyote’s Run Red Paw Chardonnay 2011 (336115, $19.95) reminds of the lyric “and I don’t need no fancy food and I don’t need no fancy wine.” Many may not know it but David Sheppard’s Red Paw Chardonnay at $20 is fancy and serious. There is more toast than from memory and four miles of apple butter in the glass. Red Trafalgar clay loam and Queenston shale bedrock give it strength. Warm Chard for a cool climate with green herbs and a late mineral tinge. Apples in replay. Sadly, sister vineyard Black Paw was pulled due to a virus so we’ll savour this Red Paw Till The Next Goodbye.  88  @coyotesrun

Malivoire Pinot Noir 2010 (996777, $24.95) shows great warmth in rusty, bricking hue. High toned glossy fruit not to be mistaken for anything but Pinot. Tons of fruit character,  some tannin getting warmer in the glass. Time Waits For No One, least of all this very solid Pinot, verging on stunning. “Drink in your summer, gather your corn” for the Malivoire ’10′s time is now.  91 @MalivoireWine

Laurent Miquel Bardou St.-Chinian 2007 (328583, $24.95) the Syrah funk monster is heavy on mineral, chewy with currant flavours and a citrus hint. Like sucking on an iron lollipop that lasts and lasts. Luxury Languedoc.  90  @LanguedocWines

Raoul Gautherin Chablis 1er Cru Vaillons 2010 (159236, $28.95) has the rocks and stones, rolling in orchards, fields and dreams. Dancing Little Sister, bang on mineral, blessed length, wonderful. Full-on nervy and relevant Chablis. With her “we bacchanal, there ain’t no dawn.”   91  @purechablis

Domaine De L’aigle A Deux Tetes Cotes Du Jura Les Clou 2010 (323618, $39.00) is uncanny in apple cider character from ’08 planted Savagnin grapes and only 50 cases produced. Intense honey with just a touch of fromage, piercing mineral. The apples and honey are everywhere. A little Rosh Hashanah for you with tang, verve and length. “Give me the look of love,” says this Jura, If You Really Want To Be My Friend.  92  @JuraWine

Ridge Estate Cabernet Sauvignon 2009 (89284, $52.95) makes you gotta love the anti-napa concept, attitude and execution. The ’09′s nose is high in tone, accent and richesse but there is no syrup or gratuitous chocolate barrel aging or excessive berry extraction. Great finesse, balance and a sense of crushed rocks is a throwback to better times. Alcohol at a manageable 13.8 per cent so within reason, built on meter in metronome precision. Will be invited to dinner every night of the year. No Short And Curlies problem here.  94  @RidgeVineyards

Grgich Hills Chardonnay Estate Napa Valley 2010 (346304, $54.95) tasted previously continues to thrill in mineral char and length. From the Fingerprint File, my previous note, “glides in so much variety balance I can imagine showering with wine. You will not pigeon-hole this-worldly and structured white because its finesse reaches out across the great mineral vs tropical divide debate. Sure, there is timbered-driven, golden-fleshed apple, green melon and buttered, toasted bread, but there too is a sting of acidity. Stellar year for Napa Chardonnay.
