The greatest wines are considered as the ones that talk to us, connect with that part of our being that elicits sensory and emotional responses, feelings of zeitgeist and great release. Throughout the course of a year I taste thousands in my glass, countless banal, innumerable competent, others correct and many exceptional. Then there are the rare and peerless capable of altering time and space, chosen ones that after listening we then speak directly to. The mind-blowing wines.
This is what I might say to such a splendid creature. “I look upon the flash of your sheen, you a wine of scientific strategies. Your aromatics sum up for me my educational studies in science and lifelong memories. Your flavours remind me of experiments in vinous physics, your textures of exercises in galactic mechanics. Your structure recalls infinite chemical reactions and architectural engineering. Your energy, though carefully controlled, threatens to ignite and destroy my laboratory and yet binds my existential life together. You blow my mind.
Last year’s 20 for 20 was a much different list than ever before. Only 25 days of travel and while I did finally make a return to global discovery that number was even less in 2021. Two trips to Italy and one to B.C. in October and November. Once again just 25 days in total. A yearly schedule usually adds up to 100-plus but fortune also shines on the critics of WineAlign. Through quarantine, isolation and safe-distancing we still managed to taste through thousands of wines. I recorded well and above 4,000 tasting notes in 2021 so it would appear that palate discovery is still alive and well. For the first time ever there are three dessert wines on the list because well, stickies just don’t get enough love. And never before have I included a Canadian wine because I pen a separate list for local but a Thomas Bachelder chardonnay is wholly deserving of going global. These are Godello’s 21 mind-blowing wines of 2021.
A blend of chardonnay and pinot nero matured on lees for 218 months and a further 31 months after disgorgement. Zero dosage, tirage in June 2002. Tasting from “the stolen bottle,” and one would swear there is some sweetness in this wine, offset by twenty year-old persistent and rising acidity. The state of grace and ability this 2001 finds itself sitting royally in is quite something to behold. Stands firm and can stride with most any 20 year-old sparkling wine. A simple fact tells us that Arturo Ziliani’s father Franco and Guido Berlucchi decided to create sparkling wines in Franciacorta. They are the pioneers. Drink 2021-2024. Tasted October 2021
The year 2002 dubbed as “ode to nature” marked the first Krug “vintage of the millennium” and was presented after Krug 2003, just as Krug 1988 left the cellars after Krug 1989. A clement year, relatively dry to make for a homogeneous harvest. The blend is 39 per cent pinot noir, (40) chardonnay and (21) pinot meunier. Disgorgement would have been in the autumn of 2015 after having spent at least 13 years in Krug’s cellars. All this tells us that the vintage is one treated to great respect with the acumen to age seemingly forever. This bottle shows some advancement but mostly in toasted and spiced notes while acting so expertly oxidative, in total control of its own and also our senses. Smells of orange skin, zesty and by citrus spray, then pickled ginger and wild fennel. Tasted blind it feels just exactly 20 years old but it’s not hard to be tricked into imagining even older. I admit to guessing 1995 with thanks to a presentation of at once wildly exotic and then exceptional bubbles. Just a matter of being hoked up with celebration. Drink 2021-2027. Tasted November 2021
Kabola’s is malvazija istarska raised in traditional clay amphorae in combination with oak barrels. Kabola is found in Buje, not far from the coast and south of Trieste. While the combination of clay and wood seem to confuse or blur the game there is something wholly credible and intriguing about this wonderful aromatic mess. You can not only smell and sense but more deeply intuit the phenolic qualities inherent in here. Skins, pips and even a bit of herbaceous stem. Peach and orange tisane, exotic spice and high, high quality lees. Great winemaking here in the context of leaving your grapes to do the work but both timing and execution are spot on. Raises the varietal bar and shows what’s possible. Drink 2021-2026. Tasted April 2021
A wine in which the switch has been flicked at least five times, at least three past the family’s preference but let’s be frank. This is a fascinating Friuli-Venezia-Giulia wine to taste. Oxidative in the most beautiful way, sapid and laden with 23 year-old tang. Very much a young adult of confidence and swagger borne out of phenolic fruit maturation. A long-hanging vintage, a note of botrytis, a late harvest sensation but truly salty, mineral and showing the biodiversity in clones and vineyards that one would expect a white blend of this ilk to display. Just a terrific example of friulano, sauvignon and pinot bianco in their arena of characterful array. Drink 2021. Tasted October 2021
New in the pantheon for Bachelder and Niagara wines as an entity is this from Grimsby Hillside, the new frontier, next level up and future for the industry. In fact the time is already upon these precocious vines and their fruit specially formulated for the most wound and cinched kind of chardonnay, so precipitously witnessed in Thomas Bachelder’s “North Slope, Starry Skies” 2019. The vineyard was planted to vitis labrusca and used for Kaddish wine through the 30s, 40s, 50s and 60s and just less than 20 years ago re-purposed to vinifera. Just two decades later winemakers like Thomas and Ilya Senchuk have discovered the magic of possibility and greatness of probability. Tasted this first in July with Thomas though it had just gone to bottle. Now the textural level of this GH-N triple-S has hitherto arrived at the immaculate, sweetly viscous, gleefully gelid and just right there at the apex of sensory enjoyment. Tight and delicious is a good combination. Drink 2022-2028. Tasted December 2021
A single vineyard chenin blanc and the first vintage to the Ontario market for a unique project celebrating the family farm called Eden. From their Stellenbosch ward of Polkadraai and high density plantings on dolomitic, granitic soils. Of a richness, an intensity of parts and a presence only a handful of South African blanc ever reach. A wine that achieves a level of status by its work underground (through root competition) and a clone called Montpellier that produces small berries and even smaller yields, not to mention the plot is just 0.6 hectares in size. Eden is the mothership and matriarch of this clone and for that variety in South Africa. All parts contribute to a wine of outrageous acidity that is never sharp, vivid or dominant. Fruit, mineral, focus, elements and precision. Wet stone is pure Polkadraai, vaporous, omnipresent, all over the wine. “The most successful winemakers (and wine projects) are ones that specialize,” says Bruwer Raats. This Eden follows the credo to a “T” and with a capital “E.” Really cerebral and also age-worthy chenin, in the upper echelon of the finest in the pantheon. If ever a chenin signified “Bringing it all Back Home,” the Raats Eden is it. “Discuss what’s real and what is not. It doesn’t matter inside the Gates of Eden.” Drink 2022-2030. Tasted June 2021
Just another immediately memorable Piano dei Daini Etna Rosso Vico, Sofia Ponzini’s Cru-Vigna nerello mascalese (with 10 per cent nerello cappuccio) at 700m from the northern side of Mount Etna. Grown as alberello on a volcanic, sandy matrix with some stones from 100-plus-plus pre-phylloxera vines located in the town of Passopisciaro, Contrada Santo Spirito, parcels “Belvedere,” “Seimigliaia” and “Calata degli Angeli.” A tempest of steel and a feeling that runs with waves of acidity throughout, in many parallel and horizontal lines, at all levels. Spice cupboard, rich waves of red fruit, viscous wisdom, confidential and confident elegance, finishing at precision without recall. True value, scattered patterning, significant and relevant. A vintage of force, restraint and powerful lightness of being. Drink 2024-2036. Tasted October 2021
The limestone soil Climat of Chaignots lies in the northern part of Nuits-Saint-Georges, up the slope and edging in location but also feeling towards that of Vosne-Romanée. The affinity is much discussed, real and therefore puts the Premier Cru at the top of what is most desired out of Nuits-Saint-Georges. A tiny (0.14 hectare) plot and simply a coup for Nicolas Potel to be able to secure this fruit. Everything about the aromatic front speaks to the Bourgogne mind and Chaignots heart. Cola but from the root, a tuber underground rubbed, that and a cocoa nut crushed between fingers. An almost diesel waft but not gaseous, instead sapid, nut-based, a liqueur toasted and intoxicating. The fineness of structure is the sort of wiry winding by winch that could cut through limbs due to tension so taut. All that you know, love, don’t know and hope to experience is in this wine. Neither I nor Nicolas Potel will be around when it blows someone’s mind in 2074. Look forward to that day young Alphonse. Drink 2025-2045. Tasted May 2021
One must have to look at, walk this and stand in awe of of this vineyard, the steepness at 30-50 per cent grade with a terrace in the middle to break it up. Heavy in Alberese inclusive of massive yellow calcareous boulders and also Galestro. In fact the medium stones removed were transferred to create terraces for olive trees on the other side of the cantina (by Angela Fronti’s father no less). The vineyard faces north so the freshness is off the charts, while the ripeness is so matter of purposeful vintage fact. The label represents the position of the vines in coordinates, echoed in the machicolations of a Fronti sangiovese that drops all the Radda stones on unsuspecting palates through fruit openings between supporting acid corbels of a projecting tannic parapet. Vigna Istine is at the forefront of Chianti Classico’s battle to win over the world. Follow this example. Drink 2023-2029. Tasted October 2021
“Molto parfumato,” binds an aromatic agreement between myself and Paolo de Marchi upon sniffing this ’11 found on Locanda Pietracupa’s wine list. “Cepparello needs time,” says Paolo, understatement of the obvious for the evening, year, decade and history with respect to sangiovese grown in the Chianti Classico territory. Also truth succinctly spoken, roses and violets exhaling and a 100 per cent varietal (or so it seems) profile of succulence and one to fully draw you in. Mint to conifers, multiplicity by complexity value, not to mention vigorous acidity sent straight to a mouth with a full compliment of wisdoms able to think about the situation. A linear Cepparello seeing its wide open window at the 10 year mark. And now a Paolo de Marchi story. “One side of the vine’s grapes were burnt and so I called up (Consorzio Direttore Giuseppe) Liberatore and asked are we changing the name of the appellation? Liberatore said what? To Chianti Amarone replied de Marchi, or sangiovese Port? Joking aside, a stringent selection and a five per cent inclusion of trebbiano did for this ’11 Cepparello what viognier might do for syrah. Not a Chianti Classico so perfectly kosher. A secret until now but all above board. Totally cool. Drink 2021-2026. Tasted October 2021
The 1999 was the last (original) Riserva produced until it was again resurrected in 2011 and what’s so cool about this vintage is how it was held to some early esteem, though paling in comparison to that “vintage of the century” that was 1997. Underestimated over the last 20 years, drinking so beautifully now, with frutta di bosca, tertiary tartufo and fungi. Just doesn’t strike as a fully mature adult reminiscing about the way things used to be but more like a wine with an outlook for more promise, good times and adventures still ahead. If you are still holding onto ‘99s from this part of Toscana you will be very pleased. Drink 2021-2026. Tasted May 2021
Filo di Seta is Filippo Chia’s intuitive “transavanguardia” sangiovese of place, over the ancient beach where he and his father Sandro once painted the Montalcino sea. Mostly early picked fruit, all in tonneaux, at first thinking “croccante” but that’s too simple a way to describe what texture and sensation is combed in this reserve wine. Bottled on the 29th of June so just arriving at the ready, to look at if not to consume. Here there is a fineness of liquid chalkiness, a “fluido” or “scorrevole” to drive the way this sangiovese plays and also sings, a Riserva to move with the wind and musical sway. Somewhat unknown, finely tannic and clearly what could and should be described as “mountain” Brunello. Coming in late is the spice, almost cinnamon and such. Hate to refer to any wine as the best from an estate but too bad. That this is, beyond the avant-garde such as it is. Drink 2025-2038. Tasted November 2021
The longevity of this vintage is almost not to be believed. Has been in bottle for as many years as it would have matured in casks. The next year (2022) will se the re-release of this vintage (in 2021 that vintage was 1983) and the year 1985 is the one I entered university. A Biondi-Santi of resolved tannin but remarkably youthful. A wine that saw Grandi Botti more than before, seen in the gentlest of spice notes and the back to the future return of balsamic and pomegranate. Followed a winter of major snowfall, long and cold winter, a regular spring and uneventful summer. The acidity is just incredible, also youthful and so sweet, those lengthened tannins in liquid powdery-chalky form. The connection with 2016 may seem to be an uncanny one but so help me if the chain is not there. The bottle was opened one hour and forty five minutes earlier so grazie to Federico Radi and Biondi-Sandi for perfecting the timing. We can all learn so much from this wine, to be patient, calm, well-adjusted, confident and gracious. Style and temperament to live by. Should continue this way for at least 10 more years. A cooler vintage, especially as compared to 1978 and truly a Piedmontese style because the cellar workers closed the tanks, went on strike and returned two months later. Resulted in some carbonic maceration and surely an increased amount of vim in freshness. That mixed with true porcini, fungi and fennochiona. The extended maceration makes this act 43 years forward like an older nebbiolo, rich and once demanding tannins now long since melted away, tar and roses still showing with earthly perfume. Fabulous mouthfeel, lingering and lively. Surely the mean steak astringency would have been in control during the first 10 to 15 years but the beast relents and gives way to charm. Patience breeds gentility and the story is now unfolding. Drink 2021-2026. Tasted October 2021
Stefano Cesari’s farm concerns itself with all things sustainable and while that may seem like a catch phrase, In Brigaldara’s case it most surely is not. The family supports its workers financially, culturally and in health. The young winemaking team is encouraged to study and stage abroad, to learn new oenological skills and languages. The other farm workers and their families are additionally supported by being given stake in the profits of the farm. How can this not reflect in the qualities of the wines, including this very special vintage 2016 Amarone. A magnificent wine and one you can easily drink beyond one glass. Not that it’s a light example but it speaks in soft tones, clearly and with a distinct, precise and honest weight, in vernacular and feeling. All things fruit lead to roads of sweet acidity and fine tannin. A rare Amarone of this ilk and one to savour. Drink 2023-2033. Tasted October 2021
Don Maximiano 2012 is a blend of 75 per cent cabernet sauvignon, (12) carmenère, (8) petit verdot and (5) malbec. No cabernet franc back in 2012 and aside from the obvious notions ushered in by age there is a distinct lack of herbal notes as a result. This is just in a great place nearly nine years forward from vintage, now settling, acids still in charge but tannins having done most of their melting and rendering. This wine is far from done, in fact the next level notions have just begun to have their say and from a vintage as great as this there should very well be nine years nigh before true earthiness, umami and truffle set in. Pour this blind at dinners with old world counterparts and watch with awe as to the results. Drink 2021-2027. Tasted November 2021
Never easy to live in the shadow of siblings clearly designated as mom and dad’s favourites but sometimes overlooked vintages left for dead show greatness later on in life. The 1993 Pétrus is definitely a late bloomer and from a year when only 200 cases were produced, where normally 4,000-plus is the standard. Softened to an almost Burgundian sense of calm but the richness and concentration multiplied by a Spring verdant freshness and sweetly herbal pesto can only indicate one thing and that is Right Bank Bordeaux. I tasted this blind and immediately thought of Pomerol and its close proximity at the eastern border with Saint-Émilion because of the “fromage à pâte molle” feeling gained, along with vestiges of once formidable black fruit supported by a push-pull posit tug of merlot-cabernet franc acidity. A good hunch indeed and a more than surprising set of excellent parameters come to this for a 1993 Bordeaux. All in all a really satisfying and come together wine to hush the naysayers and win in the end. Drink 2021-2025. Tasted November 2021
Jaboulet’s 1990 La Chapelle is a kind of an echo of the year in history, an Hermitage of impeccable harmony, much like balance restored in relative peace and prosperity. In 1990 the Soviet Union fell, ending the decades-long Cold War. Hard to find more shiny opaque purple in a 30 year-old syrah plus a splendid floral nose of stone roses, pencil shavings and graphite. The combinative effect of heft and freshness elicit pleasantries from a bad boy able to play soft ballads to mellow a crowd. La Chapelle is a communicative, entertaining and business-like syrah, a link between the northern Rhône and the taster, an internet Hermitage that changes the way we think and feel. Things will never be the same after tasting Jaboulet’s 1990 and for good reason. Has 10 years left without worry of decline. Drink 2021-2029. Tasted November 2021
Reynvaan is a family production of Rhône-style wines from two vineyard properties in the Walla Walla Valley. “In The Rocks” is their first vineyard located in Milton-Freewater, Oregon and the second vineyard is called “In the Hills.” short for “Foothills in the Sun.” It is found at the base of the Blue Mountains on the Washington/Oregon border and is planted to syrah, viognier and a gaggle of cabernet sauvignon rows. As one of the highest elevation vineyards in Washington (at 1200ft) and in this syrah co-fermented with up to 10 per cent syrah you might get a rendering of a northern Rhône-ish picture. Sure enough the perfume is floral but more than anything a smoulder of pancetta and smoked meat. Reductive as well, different as such than any syrah, anywhere else on the planet but liquid peppery and tire on asphalt nonetheless. The credibility and accountability here is profound and while the sheer concentration and beauty of In the Rocks in captivating, this In the Hills is alternatively vivid, dramatic and powerfully restrained syrah. Which one is you? Drink 2023-2033. Tasted January 2021
The hated hunter is named after Austrian immigrant and Los Angeles restaurateur turned winemaker Manfred Krankl’s grandfather, depicted on the label in gear, with rifle and hound. The blend is led by 82.4 per cent syrah with (7.8) petite sirah, (5.2) mourvèdre, (2) grenache, (1.2) petit manseng and (1.4) viognier. Clocks in at 15.9 alcohol but in this regard hardly garners even one per cent of the discussion. All anyone can talk about is the infinite expanse of pretty, pretty floral capture and personally speaking it simply reeks of syrah. A game of meat juices and marbling, part smoked meat and part pancetta. The only question tasting blind is whether to imagine it as Hermitage or Central Coast California. Once the abv is disclosed the answer can only be the latter but a syrah of such reclusive exclusivity is hard to pin down. Derives from a group of prized vineyards; 32 per cent Eleven Confessions (Santa Rita Hills), (41) The Third Twin (Los Alamos), (25) Cumulus (Santa Barbara) and (2) Molly Aida (Tepusquet Canyon). Adds up to the most luxe, deluxe and ultra-fantastic instrumental of a syrah, no lyrics needed. Man, Manfred, take a bow. A hunting bow. Drink 2023-2029. Tasted November 2021
An absolutely lovely vintage for Fèlsina’s Vin Santo and for Chianti Classico Vin Santo as a rule because extract, temperament and adaptability are all in collective balance. All that you want, need and expect from this traditional and loyal dessert wine are present and accounted for. Dried and glazed fruit, low and slow developed nuttiness and a freedom of territory spoken through airiness and layering. The upside cake of life turns over to reveal a generational wine of clear standards, perfect layering and endless conversation. Nonna and Nonno would be proud. Drink 2021-2035. Tasted June 2021
From the island of Ustica in the Tyrrhenian Sea, 70 kilometres (36 nautical miles) of the coast of Sicily’s capital Palermo and the work of Margherita Longo and Vito Barbera. The vineyards for this zibibbo (moscato d’Alessandria) are grown very close to the water on volcanic soil and Hibiscus is the only winery game in town. There are other farmers that contribute grapes to this tiny production; also grillo, cataratto, inzolia to go along with the zibibbo that makes this Passito. A place where tomato, grapes and peached co-exist, in the gardens and in the wine. This carries that uncanny sweet to savoury feeling in the most specific and ethereal dessert wine both mind can conjure and emotion shall receive. Of orange, grapefruit, peach and tomato. Balanced, harmonious, silky, woollen and with a super-tonal capacity to love. Drink 2021-2032. Tasted October 2021
A bottle of wine is rarely tied to a film, let alone a Douro Port but Taylor’s Very Old Tawny has been blended and bottled to coincide and be product placed in the second Kingsman film, in this case a prequel to the first, this time set in the 1920s. Head Winemaker David Guimaraens chose reserve Tawnys from 70-100 years of age, wines crafted and set aside by generational predecessors past, no stretch for the master blender because we are talking about a house with extensive stocks from which to reach back into. Guimaraens was looking for harmonic balance between concentration and elegance and just a whiff will tell you he and his team have achieved a crossing between a magical vortex and a vanishing point of complexity. Two manifest matters have developed; concentration of sweetness and in this case by association, a focus of acids as well. Together they inspissate and cling comfortably to the skeletal structure. It feels like you are nosing 100 unique aromas, with just seven of them being marzipan, red velvet hazelnut cake, candied ginger rose, rau răm, roasting banana leaf, calimyrna fig and grilled pineapple express. Step six feet away from the glass and the aromatics persist just as sharp as if the glass were in hand. As for a sip of this maraviglioso Tawny, warmth, comfort, delicadeza and forever length make just an ounce last forever. Timeless. Approximately 1000 bottles were produced and in Canada 100 will be made available next September. That is when theatre goers should likely make a return to the cinema to take in the Secret Service spy thriller and Tawny Port fantasy up on the silver screen. Drink 2021-2050. Tasted February 2021

Searching for Bourgogne-Plus
Bourgogne holds many secrets yet discovered and that is why in November of 2019 my colleague and friend John Szabo M.S. and I travelled to France’s most revered wine region. The Bourgogne Appellation d’Origine Contrôlée (AOC) was authorized in 1937, for white wines extending to the three departments of Yonne, Côte-d’Or and Saône-et-Loire and for reds, to pinot noir from 299 communes throughout wine-growing Bourgogne. Designations have been immovable since the year dot for Bourgogne’s five wine-producing regions; Chablis and Grand Auxerrois, Côtes de Nuits, Côtes de Beaune, Côtes Chalonnaise and the Mâconnais. Opinion has come to expect a certain fixed and comprehensible understanding of the hierarchy of appellations; Grand Cru, Premier Cru, Village, Appellation Régionale Bourgogne. The latter to many simply translates as the ubiquitous Bourgogne AOC, though it is but one of six that fall within the category of La Région Bourgogne, the others being Coteaux Bourguignons, Bourgogne Aligoté, Bourgogne Passe-Tout-Grains, Bourgogne Mousseux and Crémant de Bourgogne. The deeper delve is all about the multiplicity of LesAppellations Régionales in the study of what collects beneath the larger umbrella referred to as lesdénominations géographiques.

They the outliers have not been truly considered, at least not until recent times. At the head are LesHautes, the parts of Bourgogne thought to exist in the nether realms and so previously passed over. “The heights,” out of sight fringe locations, places unseeable, host to wines untenable and from vines unsubstantiated. Or with some investigation, perhaps something else? There too are the siblings, Côte Chalonnaise, Côtes d’Auxerre, Côtes du Couchois, Chitry, Coulanges-la-Vineuse, Epineuil, Vézelay, Tonnerre, Le Châpitre, La Chapelle Notre-Dame, Montrecul and Côte Saint-Jacques. In the latterly days of November 2019 the opportunity was presented to visit these shadowy appellative entities, perchance to uncover their truths, they by vineyards and producers of Bourgogne-plus quality. Bourgogne du Haut, “The Upper Bourgogne.” High times in Bourgogne indeed.
I penned that 2017 article in the last days of November, two years ahead of the trip that would rework my internal vision of a Bourgogne world order. At the time a choice was made to focus on the central theme that ties the Bourgogne room together. Climat. I asked the 50,000 euro question. What is Climat? Please read that post for the 10,000 word answer but the irony of my conclusion went like this. “The only true intrinsic reality gained through a discussion about Climat is accessed by the tasting and assessment of examples that represent a full cross-section of Bourgogne. The appellations of Chablis et du Grand Auxerrois, Côtes de Nuits and Hautes Côtes de Nuits, Côtes de Beaune and Hautes Côtes de Beaune, Côtes Chalonnaise and Couchois, the Macônnais and the Châtillonnais are best understood by comparative studies of Pinot Noir and Chardonnay. With more than 100 appellations (84 officially recognized) it would take a lifetime and then some to cover them all and several more to come to grips with the very specific meanings and interpretations of their personalized Climats. By that time the moving target would change so much that starting again would be the only option. Make the most of the time there is, which is the way of the Bourguignons.” Ironic because exactly two years later I returned to Bourgogne to begin my education anew in the light of a trip gone deep into the Hautes Côtes and satellite appellative explorations. The findings are remarkable, as I will elucidate in due course.
Would a rose by any other name smell as sweet?
Bourgogne, now there’s the rub. In this case the party line and profound argument emphatically says no. Pause to consider the infallible cogency of the nuanced word. Then cringe at the platitude of an overused and confusingly perpetuated Brittanica translation that need not be named. Never could or should have but it must now be stressed that the imposter can no longer be considered a viable alternative for it changes meaning and even more importantly, emotion. If we must say it aloud then we may as well point the culprit out in matters point of fact. Burgundy takes its name from the Burgundians, an East Germanic people who moved westwards beyond the Rhine during the late Roman period and settled in Bourgogne. The seat of the Duc de Bourgogne was to be found west of the Saône along the narrow spit of land between Dijon to the north and the area just south of Mâcon. The reference “Duke of Burgundy” is but a translation. The first Google result that answers the query “Is Burgundy the same as Bourgogne” goes like this. “Burgundy is wine made in the Burgundy region in eastern France, in the valleys and slopes west of the Saône, a tributary of the Rhône.” The proper response to that would be to scream, to shout “answer the bloody $&**!!??&$@ question!” And to offer a strict reminder not to believe everything you read. The first recorded use of “burgundy” as a colour in English was in 1881. Making the argument that the word Burgundy dates back 300 years? Puh-lease. Who but the blind believer and the colonialist heeds this fallacy. These are the eyes of the old. They have seen things that you will never see. Leave it to memory. Dare the Bourguignons to breathe.
At Domaine de la Romanée-Conti’s La Tâche Vineyard, In the heart of Bourgogne
Plus grand est l’obstacle, et plus grande est la gloire de le surmonter
Just a little bit more than a year ago the Bourgogne Wine Board (BIVB) made the plea, on behalf of and at the behest of le vraiment Bourguignon, for a firm and clear pronouncement to take back their name, as is their right to do. “To re-affirm its identity as one of the most iconic vineyards of France, the region and its producers are reverting back to the original French iteration of its name: Bourgogne. Historically Bourgogne is the only French appellation that adopted an alternate identity for export markets with the use of the ‘Burgundy’ designation for the English speaking markets, or Burgund for the German speaking and many other translations according to the country. Today, this traditional ‘Bourgogne’ designation has already been adopted by nearly all the wines produced here – either via appellation designation or wine region labeling. By maintaining this one true identity, Bourgogne returns to its historical roots as the consummate vineyard treasured by consumers the world over.”
The devil might advocate for inclusion, to allow for levity and to argue against a parochialist stance. The contrarian might say, “why exclude a greater population when it might be to the detriment of market share. Tell the people they have to speak the language and they may feel alienated or worse, choose not to participate because it’s harder work, or just too much to ask.” They will say that language is merely colloquial, a matter of repetitive utterance, developed slang and simply a matter of evolution. Why fight it? Would it not make most sense to worry about making good wine and concentrating on selling the product?
“Plus grand est l’obstacle, et plus grande est la gloire de le surmonter. “The greater the obstacle, the greater the glory of overcoming it.” Indeed were Molière here today he would abide in support of the usage. Besides, un savant imbécile est plus un imbécile qu’un imbécile ignorant, “a learned fool is more a fool than an ignorant fool.” Bourgogne, name of the territory and also the name gracing each and every bottle conjoining all its appellative wines. Practice your pronunciation and become comfortable with using it. Do so with unequivocal conviction, daily, written, typed and in the vernacular of spoken word. Glad we got that out of the way.
Things were going so well. Sales were up, wine importers and consumers the world over were beginning to embrace the affordable Bourgogne, these partisan orbiters in surround of their better established kin, these fine pinot noir, chardonnay, aligoté, sauvignon blanc and gamay blends of qualities and quality not seen before. No one ever really worries about the rising prices of the established and their place within the establishment. The new work concentrates on the new world and upwardly mobile millennial spending. Get the regional appellative wines of geographical designation to these new buyers, they of dollars aimlessly doling away to Argentina, Chile, South Africa and Australia, to the cheap and cheerful Italian and Spanish wines. Teleport these varietal outliers into their minds and the golden era will usher in. Then COVID-19 rears its ugly viral head.
Fear not for this will pass and while trade shows are an essential aspect of selling wine, they can be circumvented. Education is the key. There are educators around the world aching to tell a Bourgogne story and fill cups with the wines. The Bourgogne tome is a magnificent one, filled with centuries of great reality, overflowing with heartbreak, victory and desire. The viral hiccup is indeed dangerous, surely dramatic and as great a mortal nuisance as there is but it will leave as fiercely as it came. A trail of debris and sorrow will be left behind but the Bourguignons are a resilient people to get past and move on.

Dovetailing and Denominations
In algorithm design, dovetailing is a technique that interweaves different computations, simultaneously performing essential tenets. Bourgogne moves in such rhythm, not only from Côtes de Nuits north to Maçonnais south but also in vortex web design that incorporates LesAppellations Régionales. In Bourgogne the greater territory is tied together by threading all its constituent appellative parts through a mortise, designed to receive corresponding appellations on another part so as to join or lock the parts together. The chardonnay and pinot noir of Les Hautes-Côtes are tenoned through Côtes de Beaune and Côtes de Nuits, just as the reds of Irancy and Bourgogne Epineuil are threaded through the whites of Chablis to define a northerly Yonne-Serein section of Bourgogne. The same applies to the Côtes de Couchois with the Côtes Chalonnaise.
The Grand Auxerrois covers a multitude of very old small plots which are today sorted into four terroirs:
• The Auxerrois covers around a dozen communes to the south and southeast of Auxerre
• Farther to the east, beyond Chablis, the vines of the Tonnerrois are found in the valley of the Armançon, the river that runs through the little town of Tonnerre.
• In the south of the Grand Auxerrois region is the Vézelien, which covers Vézelay, Asquins, Saint-Père and Tharoiseau
• The slopes of the Jovinien look down over the town of Joigny, to the north of Auxerre
On these limestone soils, the wines are mainly produced from the traditional Bourgogne varietals of chardonnay and aligoté for whites, and pinot noir and gamay for the reds. Smaller quantities of césar for reds, and sacy or melon for whites are used, while the very old Bourgogne varietal césar sometimes makes a minor appearance in certain Irancy wines. There is an exception in Saint-Bris, where the winemakers produce very aromatic whites from the sauvignon grape.
The Grand Auxerrois brings a wide palette of appellations to the Bourgogne winegrowing region, mainly specific appellations Régionales:

The education begins in Bourgogne Coulanges-la-Vineuse, south of Auxerre in northwestern Bourgogne at the hamlet of the same name surrounded by five valleys; les vallées de Chanvan, de Douzotte, des Champs, de Chamoux, de Droit à Vente and de Magny. There are just over 135 total planted hectares, only 18 of which are chardonnay, with seven producers in the village and 15 overall in the appellation. Unlike virtually all other appellations in Bourgogne the wines produced here all come from the regional appellation, save for a small amount of Côteaux Bourguignons.

Domaine du Clos du Roi
Red, White and Rosé are produced at Domaine du Clos du Roi from 16 hectares of chardonnay, pinot noit and césar. Founded in 1969 by Michel and Denise Bernard the domaine has been run by Magali Bernard and her husband Arnaud Hennoque since 2005. Magali is in charge of winemaking and sales while Arnaud the business and the vines. Chardonnay are gifted by generous bâtonnage and raised in demi-muid. The pinot noir purports to be the most typical from these lands, somewhat glycerin rich and clay-chalky with relatively soft and easy tannin. Raised in foudres de chènes (44 hL), the barrels introduced by Ludovin’s father and made in the traditional and historic way of the domain. César is the varietal wild card as noted by the 15 per cent whole cluster worked into pinot noir for the Clos du Roi “Coline” Nos Origines.

From viticulturist Bernard Magali Nos Origines ia a wine of generous bâtonnage a much easier vintage required less stirring and more accounting from naturally fortifying lees. This exceptional child must have loved its comforting and nurturing stay in demi-muids so now the imagination runs wild with gently rolling spice and thoughts of well-deserved aperitíf moments, especially with a semi-soft, almost firm Epoisses. Has lost little energy at this point in fact it’s still fresh as can be. Tells us something about the future for the ’18 though ’16 and ’17 will outrun the latter. The only cuvée in the portfolio that contains some cézar, at 15 per cent mixed into the pinot noir. Coline, Magali’s daughter. Carries a foot-treading tradition, perhaps more Portuguese than Bourgignons but this is the playful wine, not necessarily the serious one. More floral and quite full of citrus, namely pomegranate and especially blood orange. Falls somewhere in the middle, not between red and white but within a red spectrum of its own. Can see this as the correct one to drink with charcuterie. That’s the sort of structure it considers, especially because of the whole bunch workings inside. Drink 2019-2022.Tasted November 2019
Saint-Bris and Côtes d’Auxerre
Bourgogne Côtes d’Auxerre, Saint-Bris and Irancy
The Auxerre vineyards (pronounced “Ausserre”), lying on either side of the river Yonne, boast ancient lineage, thanks to the abbey of Saint-Germain and a proximity to Paris. Today they are very much alive. In 1993, wines from the communes of Auxerre, Vaux, Champs-sur-Yonne, Augy, Quenne, Saint-Brisle- Vineux and Vincelottes were granted the right to add a local identifier to the appellation Régionale Bourgogne.
Lying alongside the river Yonne in the heart of the Auxerrois region, Saint-Bris-le-Vineux is an old stone-built village beneath which are extraordinary medieval cellars, running everywhere, the most astonishing examples of their kind in Bourgogne. They cover 3.5 ha, 60 metres underground. The quarries at nearby Bailly supplied the building stone for the Pantheon in Paris.
Irancy, in the Grand Auxerrois region, stands on the right bank of the Yonne river, some fifteen kilometres South of Auxerre and South-West of Chablis. It is typical of the wine-growing villages of the district. It boasts a majestic church, as well as the house where G. Soufflot, architect of the Paris Panthéon, was born. The handsome winemaker’s houses make a fitting setting for a red wine with such a long-established reputation. It was raised to the status of an appellation Village, which it shares with the neighboring villages of Cravant and Vincelottes, in 1999.
Goisot Guilhem et Jean-Hugues
The family tree of the Domaine Guilhem & Jean-Hughes Goisot traces roots back to the 14th century and today the estate raises vines biodynamically in the communes of Saint-Bris-Le-Vineux and Irancy. They are unique on a hill position that straddles both the Saint-Bris and Côtes d’Auxerre appellations enabling production of both sauvignon blanc and chardonnay. Irancy is the source for pinot noir. Their cellar lays beneath the 11th-12th century village. Guilhem’s parents Ghislaine and Jean-Hughes took over production in 1979 while he and his wife Marie assumed the lead in 2005. Guilhem’s collection of calcareous rocks and especially ancient seabed shells and fossils is perhaps the most incredible in Bourgogne. His translation of three terroirs is concise and exacting. These are some of Bourgogne’s most focused wines that elevate the power, precision and status of these three furthermore there appellations.

A Villages wine from and for Irancy from 100 per cent pinot noir. Aromatically quiet, not unusual for the appellation and especially without any of the allowable 15 per cent cézar in the mix. Quite pure and similarly structured to the Côtes d’Auxerre in that it’s not full-bodied but is in fact tightly compact. More implosive intensity and idiosyncrasy with a chalky underlay from white to grey soil high in calcaire and layered with arglieux. Yet another very refined wine. The next Climat behooves the already pronounced adage that these wines increase upwards from one to the next in delicasse, precision and possibility. There is an earthy grounding in La Ronce that seems absent in Le Court Vit and here makes for a new structure, or rather a more complex one. Now taking another step into variegated terroir replete with all the fossils, shells and epochs of clay, limestone and multi-hued soils all filling up the elemental well. These vines draw from it all and it shows with precise sapidity, aridity, salinity and validity in the aromatic character and flavour profile. A conditioning that is sweet because the fruit is pure and savoury with thanks to the acid-tannin structure that makes this sing. Amazing purity, grace and possibility. A soil of kimmeridgian and marl of white and blue, with great layering of fruit and that is in fact what you feel from Gondonne. There is something rich and overtly expressive here and while it’s anything but simple it could be imagined that so many consumers would understand this chardonnay, love it and want to drink it with abandon. That said the structure, gout de terroir and de vivre are just exceptional. The wood and the land just melt right in. Drink 2020-2029.Tasted November 2019
Usually this is a Climat reserved for holdings in Côtes d’Auxerre but in this case the northwest exposure is indeed within the appellation of Saint-Bris. In fact there’s more affinity with chardonnay here and also conversely more terpenes in the notes. Also pyrazines which is more than curious. Ripe too and ultimately a most curious expression of sauvignon blanc. It’s got everything in here, in hyperbole and more. Drink 2020-2028.Tasted November 2019
Bourgogne Epineuil, Chablis and Bourgogne Tonnere
The Tonnerrois region lies in the southern Yonne not far from Chablis. Épineuil the commune won the official right to identify its wines by name within the general appellation Bourgogne in 1993. The word Épineuil may only be appended to the word Bourgogne in the case of red or rosé wines produced within the defined area of the appellation. On the label, the word Épineuil must follow the word Bourgogne. The soils, full of white pebbles, resemble those of the nearby Chablis region (Kimmeridgian or associated limestones) and have definable qualities. Where the vineyard district is broken up into valleys, the vines are sheltered from the cold winds of the Langres plateau and reap the benefit of a favourable microclimate.
I’ve considered Chablis many times before. “There is little about Chablis that is not drawn up in contrasts. It begins with Left Bank versus Right Bank, the Serein River and the village of Chablis acting as the interface between. Petit Chablis giving way to the more important Chablis and then Premier Cru the varied and always impressive interloper separating the villages wines from the Grand Cru. Chablis as a varietal concept, as opposed to and unlike anywhere else in the world, seemingly unrelated to chardonnay.”
“The greatest paradox of all is written in stone along a few ridges and across the most important set of hills above the river. Deep-rooted, inveterate purlieu of geology in eight names; Les Preuses, Bougros, Vaudésir, Grenouille, Valmur, Les Clos, Blanchot and unofficially (depending on political affiliations), La Moutonne. Les Grand Crus of Chablis are singled out not only for their exceptional terroir and climat but also for the impossibility of what happens when fruit is pulled from their chardonnay vines. The Grand Cru are oracles in complex riddles, transcendent mysteries and the most enigmatic of all Chablis. I suppose it’s because the rich fruit versus exigent stone is the epitome of Chablis paradox.”

Domaine Jean Claude Courtault and Stéphanie & Vincent Michelet
Stéphanie Courtault-Michelet is the daughter of Jean-Claude and Marie-Chantal Courtault. She and her husband Vincent Michelet farm 20 hectares in the appellations of Bourgogne Epineuil and the four that comprise Chablis. The business dates back to 1984 and today both Domaine Jean-Claude Courtault and Stéphanie & Vincent Michelet produce Chablis from vineyards in Beines and Lignorelles, at a windy and cool spot on the top of the hill above the Vau Ligneau. Their Bourgogne Epineuil Climat is the Côte de Grisey from a valley and off of vines that face west.

From only one hectare of vineyards right on the line between Lignorelles and Villy and much of the vines are in and about 60 years of age. A very concentrated yet somehow delicate and quite precise Chablis that weighs in above it’s appellative status, if only because it’s not considered one of the more coveted terroirs. Here at the limits of Chablis there is a micro-climate that speaks a Premier Cru vernacular, categorized or not. Very much a calcareous child, fresh, darting, never tiring and innocent. From young vines and certainly quality fruit that comes across as simple, sweet and charming. From a valley and vines that face west with a darkening cherry profile, mainly clay induced with just a little stoniness from the limestone. Finishes with just a touch of tannin in a notably dried herbs and arid way. Find your food match, like a little pot au feu of tête de veau. Drink 2020-2022.Tasted November 2019
Domaine Gruhier (Domaine de L’Abbaye du Petit Quincy)
More often than not it should be a conscionable imperative to trust a man with a great hat. Dominique Gruhier in Epineuil walks around the Abbey of Quincy in a characteristic, dashing calibre lid. The Abbey was founded in 1212 by Cistercian monks, sold in 1792 as a natinal asset ands was preserved in pastoral and viticultural terms through 1914. Though it fell to Phylloxera and disrepute there was activity through 1970. Twenty years later The Gruhier family began the resurrection and today create Bourgogne Epineuil and Tonnerre wines that lead for the appellations. Dominique’s Sparkling Wine program is at the head of Bourgogne’s new world order for classic method Crémant de Bourgogne AOC preparations.

Named for Dominique Gruhier’s eldest daughter Juliette. A lighter, more delicate and refined Tonnerrois with floral cherry and cherry blossom aromatics, moving away from the darker ultra-violet notes of the following vintage and also two forward based on what’s in barrel. The tannins are fine like those 2019s but the wine has more tension than 2018. Righteous structure in a wine to last well past the namesake’s 21 birthday.Drink 2020-2024.Tasted November 2019
The eminent one or rather the grand eminent. His eminence is a zero dosage, 100 per cent Crémant of zero put on. From an accumulated amount of solare the make up is 85 per cent 2015 and the other 15 a sparkling wine with everything up front, on its sleeve and one that just screams “won’t you come and join the party, dressed to kill.” A second, just opened bottle reveals the great strike, right from the opening keyboard whirl to the final shout. Côtes de Beaune
The Côte de Beaune vineyards lie on the upper slopes of the Montagne de Beaune just above the Premier Cru plots at heights of 300 to 370 metres and on brown limestone and calcium-rich soils, Oolitic and Rauracian (Jurassic) in origin. The special value of these vineyards is attested by the fact that one of the Climats belonging to this appellation, located on Mont Battois, is a dedicated part of Bourgogne’s vine-science research program. When Beaune’s twins AOCs were instituted in 1936, it was the higher altitude vineyards which became the Côte de Beaune appellation. Unlike the appellation Côte de Beaune-Village, with which it must not be confused, it refers to one commune only – Beaune. Within this relatively restricted area, the appellation Côte de Beaune produces one third white wines (chardonnay) to two-thirds red (pinot noir).

Bourgogne Hautes Côtes de Beaune
The Bourgogne Hautes Côtes De Beaune Régionale appellation covers still red, white, and rosé wines produced in an area covering 29 villages that was defined in 1961. The vines are located at the foot of the limestone cliff on the sunny slopes of a ribbon of valleys perpendicular to the Côte de Beaune, from Les Maranges to Ladoix-Serrigny heading west. Wine from the Hautes Côtes de Beaune was drunk at the coronation of Philippe Auguste in 1180. The vines underwent a period of expansion, linked to economic growth throughout the 19th century, until phylloxera struck. Between 1910 and 1936, almost half of the vineyard disappeared. Its renaissance stemmed from the reestablishment of the winegrowers union of the Hautes Côtes de Beaune in 1945, which was responsible for the creation of the appellation on 4 August 1961.
Domaine Alexandre Parigot
Marie et Régis Parigot have handed the reigns to Domaine Parigot to their son Alexandre who is clearly poised to become a star for pinot noir threaded from Hautes-Côtes de Beaune through Savigny, Volnay and Pommard. Today Domaine Alexandre Parigot cultivates 18 hectares in total, 15 of which are pinot noir. The Hautes-Côtes de Beaune vines are of south, southwest expositions on very fine argileux-calcaire, quite sandy and causing wines of elegance and finesse. Le Clos de la Perrière is a benchmark for the appellation. Two to three weeks of classic remontage from which the closing of the tanks and raising of temperature to 32 degrees post fermentation brings this and these pumped over Parigot pinot noir into their silky and seductive state.

The Domaine cultivates 18 hectares in total. The Hautes-Côtes de Beaune vines are of south, southwest expositions on very fine argileux-calcaire, quite sandy and causing wines of elegance and finesse. From the plot just beneath the village at the height of Pommard. The particularity of 2017 grapes is their fineness of skins and perfectly phenolic gifts donated with great philanthropy by the perfectly ripened seeds. But in this case the laces are once again pulled tight, with great power in even greater finesse. There’s an elegance opposed by a controlled tension that puts this in a position of posit and positive tug, though always charged with something higher and opposing. The 2010 is incredibly fresh, showing negligible evolution, with no advancement into mushroom or truffled territory. Certainly no blood orange and still welling with cherries. Beaune to be wild – Maison Roche de Bellene
There really is nothing Nicolas Potel can’t do, does not touch or lacks kinship with all things Beaune. Potel’s father Gérard was larger than life, local hero and legend, one of Bourgogne’s most cherished and beloved, the King of Volnay and who’s legacy can’t ever be forgotten. While at dinner in Beaune in November Nico suddenly disapparated to teleport 20 minutes home and back, to retrieve and then share his dad’s 1964 Domaine de la Pousse d’Or Pommard Premier Cru Les Jarollières. Why? It was suddenly the right time and it was sublime. In fact the city of Beaune was called Bellene back in the Middle Ages and this is the reason Potel chose the name for his brand/wine merchant/négoce domaine. Maison Roche de Bellene is a force to be reckoned with, a seer of all things and provider of a cross-section of many terroir to educate us all on the power of Bourgogne multitude and multiplicity. Nicolas does have a reputation for being the wild child of Beaune and yet he is also known for his generosity, mainly of spirit. One never forgets a night in Beaune with the infamous Nicolas Potel.

Tastelune is a play on Tastevin in ode to how labels of Nuits-Saint-Georges Bourgogne were brought on an Apollo mission to the moon. Quite firm, grippy and near glycerin in texture, quite rich for 2017. Generally speaking the winemaker makes use of 30-40 per cent whole bunch, no punchdowns and just pump-overs. A high quality fruit year means one major thing in Nicolas Potel’s hands and that’s 100 per cent whole bunch in the fermentation. These lignified brown stems add the sort of complexity that great Bourgogne just has to have. Plenty of fine tannin, grip for the future and real swagger. Drink 2022-2030.Tasted November 2019
The old vines chardonnay, just as Nicolas Potel has managed to effect with the pinot noir is a matter of bringing Bourgogne to the market. The old vines carries a purpose and an intendment to speak as a by the glass matter with a classic regional styling, clean, crunchy and white cherry fruit designed. Maison Ambroise dates its origins to the 18th century and 1960 is about the time the family begins making a life around the vineyard after two and a half centuries of unsettled times. The location is Premeaux-Prissey, across the road and proximate to Nuits-Saint-Georges on a dividing line that separates the two Côtes, de Beaune and de Nuits. In 1987 Bertrand Ambroise takes over management of the 17 hectare domaine which he now runs with his family; Martine, Ludovine and Françoise. These are chardonnay and pinot noir in the space between, dualistic, generous and austere, bold and forgiving, demanding and generous. Truly Bourgogne.

From near the village of Villers there’s a refinement about this pinot noir that speaks to the chic abilities of the Haut-Côtes de Nuits. Black cherry and high acidity all oozing, welling and pulsing out of concentration. If the whites are crunchy then the reds are chewy and this sits at the top of the spectrum. The top pinot noir for sure and equipped with the finest tannins. Drink 2020-2026.Tasted November 2019
A Villages Nuits-St.-Georges (sans Climat) with a peppery reduction that will blow off with time, just not in these few minutes of dating. In fact some hand-covered agitation does the trick and releases the florals you’d imagine would be present. The firm grip is just outstanding, as is the liquid velvet mouthfeel with true argiluex underlay. From fruit just north of the village and clearly a spot that delivers some of the appellation’s great finesse. Terrific pace and compact structure while also rich for 2017 but not so unexpected from the place. Drink 2021-2031.Tasted November 2019
The appellation Bourgogne Côte Chalonnaise dates from 1990 and recognizes the distinct personality of wines from the 44 communes in the northern part of the department of Saône-et-Loire, an area some 40 km long and between 5 and 8 km in width. Lying between the valleys of the Dheune and Grosne and open towards the South, the Côte Chalonnaise offers a less rugged landscape than those of the Côte de Nuits to the North. These gentle hills are outcrops of the Massif Central thrown up by the creation of the rift valley known as the Bresse Trench. In the North, limestone forms the East-facing slopes and there are outcrops of lias and trias formations (Saint-Denis, Jambles, Moroges). South of the granitic block formation at Bissey, the hillsides slope either to the East or the West until they reach the hills of the Mâconnais. The soils below the Bajocian limestone corniche are marly, with sands and shaly or flinty clays at the foot of the slopes where there are also some gravel outcrops. Altitudes vary from 250 to 350 metres.
Pruning in the Côte de Couchois
Bourgogne Côtes du Couchois
The Bourgogne Côtes du Couchois Régionale appellation covers still red wines produced in an area covering six villages that was defined in 2000. An application for AOC-status for the white wines is currently ongoing. The vines of Bourgogne Côtes du Couchois are located to the south of the Côte de Beaune and the Hautes Côtes de Beaune, on the left bank of the River Dheune, which separates it from the Côte Chalonnaise to the east. They grow on the best slopes in this rolling landscape, offering some remarkable viewpoints. The vines are divided up across south- and southeast-facing slopes at between 280-420m above sea level, with a climate marked by continental influences that leads to relatively late ripening. The soil is characterized by granite from the Primary period, clay sandstone and clay from the Trias, and limestone from the Lower Jurassic. Most of the vines in the Bourgogne Côtes du Couchois appellation sit atop versicoloured clay from the Trias.

Cave de Mazenay
Jean-Christophe Pascaud is the Directeur of the Cave de Mazenay, Union des Producteurs at Négociants de l’AOC Côtes du Couchois, located in Saint-Sernin-du-Plain in Saône-et-Loire. Their most particular wine is the Blason de Vair from the Château de Couches vineyards. Although located since its creation in the very heart of the Couchois appellation, the cellar’s approach is not limited to the work of a single PDO. But also to the production of a complete range of Bourgogne wines, mainly from Côtes de Nuits to Côtes Chalonaises, and of course also including Côtes de Beaune. Their range is extensive and includes the sale of bulk wines. Production includes Bourgogne Pinot Noir et Hautes-Côtes, Maranges et Santenay, Savigny les Beaune, Pommard et Meursault, Gevrey Chambertin, Vin des Hospices de Beaune, Bourgogne Aligoté, Viré-Clessé, Rully, Givry et Mercurey, Crémant de Bourgogne.
The Cave is intrinsically tied to one of Bourgogne’s most famous castles and medieval fortification, the Château de Couches, known as Marguerite de Bourgogne, near Chagny and classified as a historic monument. The château is a former fortress of the Dukes of Bourgogne dating back to the 11th century, with a dungeon, underground, garden and of architecture designed between the end of the 11th and the 19th century. Acting as a form of protection for the route between Paris and Chalon-sur-Saône, over the centuries, the château underwent many changes, but its defensive character remains intact. This fortress dominates the road and the surrounding countryside from the top of its crenellated towers and its keep.
Marguerite of Bourgogne was the granddaughter of King Saint Louis and daughter of the Duke of Bourgogne. She spent part of her youth in this place. Her marriage to the future Louis X le Hutin made her a queen of France but, convicted of adultery, she was locked away in the fortress of Château Gaillard in Normandy. Legend claims that after the death of her royal husband, secret negotiations between the crown and the powerful Duchy of Bourgogne would have enabled her to end her days in Château de Couches.
A wood at the forefront chardonnay for now with a greater reductive freshness than the ’17. A similar ripe, sun-worshiped quality though more structure and integration it would seem. The winemaking is better in this second incarnation of the company’s top chazrdonnay. This would impress the Bourgogne seeker of higher end chardonnay. Drink 2020-2024.Tasted November 2019
Nathalie and Jean-Claude Theulot, Domaine Theulot-Juillot
Few producers in Bourgogne will offer a more profound, deep, philosophical and über historical delve into the triumvirate of terroir, lieu-dit and Climat as Jean-Claude and Nathalie Theulot. Their Mercurey estate is one of the regions great sleepers, founded more than 100 years ago by Émile Juillot. Granddaughter Nathalie and her husband Jean-Claude run the 12 hectare farm of Mercurey Villages and sense of place pinot noir that can age 20-25 years.

A red terroir planted to white now 35 years ago, then and now, without fear. Clearly a more mineral, saline and fine brine inducing plot of Mercurey for chardonnay. Truly rich and developed with ideal, precise and extract sidling phenolics. Ripeness is truly a virtue and exclamation exercised with confidence and also restraint. The wood is necessary and invited, always present while finding a balance between thermal amplitude and cooling comfort. Very young, in structure and at heart. Drink 2022-2029.Tasted November 2019
From two words, “Mi” and “Pont,” meaning a milestone or military marker at the bridge on the ancient Roman road from Chalon to Autun. The house or fort would have been a dwelling on the plot where the stone was set and now the lieu-dit carries the name. This is still Villages appellation and yet there’s a climb above in quality, from texture for sure but also calcareous excitement. It’s a complicated spot to define but there is more limestone because the soil washes away in a section due to the exposition and the “plunge” of that part. There’s a tension but not an anxious one, no rather the lift is simply of joy in a rapid heartbeat, from love, not consternation. Drink 2022-2028.Tasted November 2019
A blind pour without knowledge of Climat, lieu-dit or vintage. Certainly older than 2010, now with mushroom and truffle involved but still high in acidity. There is also the ferric quality that was noted in the Cailloute. The tannins are so limestone driven with a red earthiness that converts sugars to savouriness and fruit to umami, Life affirming, longevity defying and quality of all its constituent parts. In the 17th century the Clos de L’Évêché was part of a larger property owned by the Bishop of Autun. Vincent Joussier purchased Domaine de L’Évêché in 1985 and runs the estate today with his wife Sylvie and son Quentin. The Côte Chalonnaise vineyards cover 14 hectares across several appellations: Mercurey, Bourgogne Côte Chalonnaise, Crémant de Bourgogne, Coteaux Bourguignons and Bourgogne Aligoté. Most of the production comes from pinot noir (80 per cent) and chardonnay (15) but also small amounts of aligoté and gamay.

Now into a pinot noir with some tension as purposed by a calcaire Mercurey terroir, as opposed to the simpler argile in the Côte Chalonnaise. Not just grip, tension and tannin but a fineness in those chains to extend the future’s possibilities. Fruit is relatively dark but there is a persimmon flavour and texture mixed with something citrus undefined. Maybe pomegranate but also wooly-earthy, like red Sancerre. Quite a complex wine with a sour complexion. Needs time to integrate to be sure. Returns to earth and fineness at the finish. The length is outstanding. Drink 2021-2025.Tasted November 2019
Cave des Vignerons de Buxy
Bourgogne’s most impressive cooperative producer is none other than Cave des Vignerons de Buxy, established in 1931 and easily the largest in the Côte Chalonnaise. Located in the North of the Mâconnais, the “cave” groups together fifty or so family producers associated with the Cave des Vignerons de Buxy since 1976. The range of wines from the Mâconnais and the Côte Chalonnaise is nothing less than extensive. At least 20 white, red and rosé appellations are bottled and represented. At the forefront of it all is the passionate Rémi Marlin, he of knowledge encompassing all things Mâconnais and especially Côte Chalonnaise.

A very different vintage but more backbone in 2017. Even fresher and even now than the 2018 with more than 90 per cent of the growers’ fruit the same. Less than 10 per cent fermented in barrel because the vintage served up the possibility and the chance taken was a prudent and ambitious one. On the plateau up to the village of Culles (des Roches) only seven kilometres from the Cave. Champ Cardin makes use of its higher elevation at 300-plus metres above sea level. There is more fruit and acid attack along with a longer chain of extractgiving sharp mineral notes that also come through caused by less topsoil and more exposed rock in the upper reaches of the vineyards. Located at the entrance of “the circus,” in front of the amphitheatre, oriented south and southeast. At 350m and with the aspect it’s an early maturing Climat, of 12.3 hectares on steep hillsides with the vines are planted at the top of the slopes. Quite “clayeux,” as in chalky with that great Montagny richesse. You feel like you’re chewing this chardonnay long after it has left your mouth. Drink 2020-2026.Tasted November 2019
The vintage for pinot noir to deliver and express the best of both worlds it is the sense of piquing spice that separates this Côte Chalonnaise from the pack. There’s also an earthy volatility that grounds, elevates and keeps it real. Chalky finish as expected in a pinot of really solid architecture. Drink 2020-2024. Tasted November 2019
A high level of iron-oxide is contained withy the clay of Cur Clos Jus, just below the road from Givry to Mercurey. It’s a seven hectare plot re-planted in the late 70s early 80s and farmed by only five growers. Two years of age (more than the ’16) is finally showing some advancement and even a moment of relenting behaviour. A few portents for the future are hidden and then released in this bloody, meaty and piquillo-paprikas of a Givry. Drink 2020-2026.Tasted November 2019
Côte de Nuits
The Côte de Nuits and Hautes Côtes is predominately cultivated with pinot noir and holds most of the region’s Grands Crus. Much of the small production of white wine is chardonnay though aligoté is also grown. The reputation of the appellations of the Côte de Nuits is firmly established. Some have even gone so far as to name this exceptional terroir the Champs-Elysées of the Bourgogne winegrowing region. This sophisticated pseudonym also explains the reality of the terrain. Between Dijon and Corgoloin, the wines grow along a narrow strip of hillside that is around 20km long and in parts, just 200 meters wide.
Bourgogne Côte d’Or
The vines of the Bourgogne Côte d’Or appellation extend across an area 65km long and between 1-2km wide, from Dijon to the Maranges. Geographically speaking, the Côte d’Or (golden slope) covers the Côte de Beaune and the Côte de Nuits. The reputation of the wines grown here is such that the department was named after the area during the Revolution. Vines have been grown here since antiquity, and were subsequently expanded by religious orders, the Dukes of Bourgogne, the wine merchants.
In the 19th century, new means of transportation facilitated and modernized the sale. The establishment of the AOC system led winegrowers to build a hierarchy of terroir on the Côte, thus marking out specific areas and protecting their Crus. In 2017, producers of the Régionale appellation Bourgogne from Côte de Nuits and Côte de Beaune were granted the extended name of “Bourgogne Côte d’Or”, their wines thus becoming Bourgogne Identifiés within the Régionale Bourgogne AOC, limited to specific geographical areas within the Bourgogne appellation.

Domaine Bart (Pierre)
Fifty years after André Bart was farming only six hectares of vines, sixth generation Pierre Bart is now the custodian in Marsannay-la-Côte, working 22 hectares of vines. After André’s children Martin and Odile arrived in 1982 they founded a farming association for combined operations in 1987, to continue operating as the GAEC. Pierre Bart is a community leader in the process to recognize the more important vineyards of the Marsannay appellation as Premier Cru. Approximately one in four identified blocks in separated bottlings of the appellation are up for Premier Cru status consideration and while his intention is to highlight these Climats, he is also pragmatic about which ones should remain in the Village appellation. The most likely to suceed are Champs Perdrix, Champ Salomon, Clos du Roi, Longeroies and Montagne.

Bourgogne Côte d’Or AOC began in 2018 after years of incremental appellative movement. There was Bourgogne AOC in 1965, followed by Marsannay AOC in 1987. The entire cuvée comes from fruit grown in Marsannay, mostly on sandy soils created by washes coming down from the hills. In this case Combe Grand Vaux and Combe Semetot. If 2018 seemed open than ’17 is fully un-shuttered and doing great business. Interesting how on the calcareous soils you always get a chalky feel but here just smooth, silky and immensely amenable. What a great pour by the glass right here in so many ways to justify this from Marsannay in Bourgogne Côte d’Or AOC clothing. Fine and delicate.. Drink 2019-2021.Tasted November 2019
Marsannay Rosé AOC began in 1987 after years of incremental appellative movement. There was Bourgogne AOC in 1965, followed by Marsannay AOC in 1987. It can be drawn from both the Villages and the Bourgogne appellations, a particularity specific to labelling it Marsannay Rosé. The fruit is drawn from sandy soils and made from the Marsannay pinot noir. Two thirds direct press and one third (48 hour ) maceration. Not a huge quantity made in the appellation and here with plenty of fruit undercut by a current or streak of sweet salinity. Tons of flavour and unlimited drinkability. From a very small, seven barrel cuvée and a tiny parcel near the northern limit closest to the hill. There is some primary calcaire mixed into the white oolite dominated soil. Twenty per cent whole bunch fermentation and 20 per cent new oak with the accumulation result being a notable raise and rise in this Marsannay Villages Climat’s fine acidity-tannin relationship. There’s a study in here in consideration of Premier Cru though one that sits on the fence. A little too amenable and subtle of appellative grip to be in the running. From near the mountain and the place (Champ) where people were killed. Here is the Marsannay that I personaly have come to know and expect, laced pulled so tight but there is a quality to Bart’s fruit that is consistently woven through the Climats. Clearly a matter of hands off/hands on winemaking playful of whole bunch, new wood, temperature adjustment and easy movement work. These are wines of great pleasure and while the structure here moves the needle to a 10-15 year aging potential there is no question the pleasure is early and almost instant. Bourgogne Hautes Côtes de Nuits
At one time apparently doomed to disappear the vineyards of the Bourgogne Hautes Côtes de Nuits have since the 1950s undergone a patient, courageous, and ultimately successful restoration. They are situated overlooking the slopes of Gevrey-Chambertin and extending as far as the wood of Corton, the Hautes Côtes de Nuits. Little villages nested in the forest fringes lay waiting to be discovered. The vineyards located on a plateau behind the famous Côte de Nuits and village of Nuits-Saint-Georges at altitudes of 300 to 400 metres cover all these slopes which enjoy favourable exposures and proudly preserve their proof of nobility going back to Vergy and the abbey of Saint-Vivant.

The domaine was created in 1991 in the footsteps of David’s father Pierre who first started in 1965. From 1995 on and after his father’s departure the estate made several purchases and extended to making wines off of 17 hectares of vineyards. No less then 23 prestigious appellations are employed, including important Côtes de Nuits Premier and Grand Cru. The wines cover the Grand Cru of Echezeaux, Chambertin, Charmes-Chambertin and Clos de la Roche; the Premier Cru of Chambolle-Musigny Les Sentiers, Nuits-Saint-Georges Les Procès, Aux Thorey and Les Pruliers, Morey-Saint-Denis Clos Sorbè; Villages from Vosne-Romanée, Gevrey-Chambertin; Hautes Côtes de Nuits. The farming is organic since 2004.

Tasting with Laurent Berger. Located in the village of Chevannes, next to the Côte de Nuits with some vineyards in Nuits-Saint-Georges and some in Savigny. A négoce of most of the important Côte d’Or and Côtes de Nuits appellations. Here from the Hauts-Côtes at the top the south facing hill off of 35 year-old vines growing on full calcaire slopes. Mixes a wealth of fruit and tart acidity sent straight to the cerebral cortex, crux and cross of the heart. Well made, clean and ideally balanced. Drink 2020-2024.Tasted November 2019
Clos Sorbè the Climat is located right in heart of Morey’s interior, right next to the cemetery. Now the rose’s petals are macerating with the cherries in a pinot noir of classic Bourgogne depth and understanding. The structure is quite elegant in a focused and rich way while weight seems developed by vine age in the 50-55 year range. An impressive Premier Cru of true blue cause, personality and effect. Taking a side step from Chames-Chambertin is the more transparent and seemingly lighter and more delicate Chambertin. Looks and first impressions are deceiving for the power lies in the aromatic complexity, garden and wild field floral plus a gastronomy that incites memories but also machinations of the great demi-glacés imaginable, The fruit pectin and sweet cerebral enhancements are at the top of this portfolio so if others were seductive and enticing this Chambertin is off the charts. Seamless, endless and utterly fine. Structure just at the precipice of pinot noir. Drink 2023-2036.Tasted November 2019
Wholly antithetical to the 2018 with much more Bourgogne, Duband and Charmes fruit in the delicate vein of great and sheer transparency. This takes an organza line along a finely threaded and woven seam. There can be no mistaking the understatement of the vintage and while it may not strike an arrow into the hearts of the deducted and seduced there can be no mistake found here. This is the pinnacle of this appellation in fine dress and perfectly classic vernacular. Drink 2022-2034.Tasted November 2019
Julien Cruchandeau and his Pinot Noir
The estate was established in 2003 by Julien Cruchandeau and his first vines were purchased in Bouzeron. In 2007 expansion saw to the buying of a house in the village of Chaux, located in the Hautes Côtes de Nuits, with large cellars and an extensive vat room. In 2009 and 2010 investment helped to establish an agricultural land group (GFA) “Aux Saint Jacques,” thus extending the estate from Nuit-Saint-Georges to Savigny-les-Beaune. Julien grows chardonnay, pinot noir and some pinot blanc in the Hautes Côtes de Nuits, with four and a half hectares in the appellation that includes two parcels in the Villa Fontaine, a.k.a the mini Corton. Red parcels are Les Cabottes and Les Valançons, the latter being one you can see straight from the tasting room window at the estate of David Duband. Whites are made from Bourgogne Aligoté, Bouzeron and Puligny-Montrachet. In addition to the Hautes Côtes de Nuits other reds produced are from Savigny-Les-Beaune, Ladoix and Nuits-Saint-Georges.

From four and a half hectares in the appellation, including two parcels in the Villa Fontaine, a.k.a the mini Corton. Villa Fontaine plus if you will. It’s a top essence soliciting exposition that makes for a great floral chardonnay and one of pretty impressive finesse. Takes care of the vintage with great care and no ambition to overdue or over-exaggerate. Wood is in the background and at the finish, spices are very far eastern. Reminds of Indonesian sasak fruit as only a few chardonnay can and do. Different and exotic stuff. Drink 2019-2022.Tasted November 2019
Very close to Meursault in every way and the smoulder is so very Puligny, as it should be with Julien’s exotic twist and turn of the storied fruit. A parcel like this does not come along every day so the coup is in Julien’s hands and the wine celebrates the possibilities. Takes your breath away for a fleeting moment but stays with you for minutes. Just 900 bottles were made and there are notes of toasted kernel or nut plus a recently extinguished candle. You can see Les Valançons straight from the tasting room window at the estate of David Duband. Here you find one of Bourgogne’s great terroirs deemed a satellite and not considered worthy of others fetching 10 times the price. Thirty to 40 year-old vines equate to exquisite south facing slope fruit to this glass and the mineral streak running through violets is just what you want and what you can drink for 10 plus years. Th Climat is next to Vosne-Romanée at the northern limit of Nuits-Saint-Georges and clearly raised on great promises. Julien has taken the exceptional ripenesses of the vintage and turned those promises into possibilities with pinot noir that effects juicy behaviour without maximum effort. And so probable is quickly becoming a reality. Very primary however and almost like it’s still in barrel. Just has that feel, like it’s not finished yet, still working, just a child. Speaks to the structure and what the future more than very likely holds. Just need the wood to begin a settling for the next phase to begin. I am persuaded, I am charmed, I am seduced. It begins with a deal made in kind to a region’s most consistent producer, by allowing a cross section of their wines to act as a teaching moment for the vintage. Submit to the truth and the circumstances. There are moments when you think “there’s really no point in doing anything in life, because it’s all over in the blink of an eye,” and then you taste through some Bourgogne 2017. But one never knows until the the contract is signed and the ink dry. Still we can dream. Kingdoms for an allocation.
Champagne Henriot is the parent distribution company at the head of the Bourgogne houses Domaine William Fèvre and Domaine Bouchard Père & Fils. Each year their Ontario agent Woodman Wines and Spirits puts out the call to media, buyers and sommeliers to taste the current vintage. There simply is no other event on the Toronto calendar that affords a comparable taste, assess and climb into the heart, mind and body of a Bourgogne vintage. Two dozen reds and whites from the region’s great villages are a sample size large enough to know that the 2017s bring quality to a modern day high with that rare combination of fruit and structure. These are chardonnay and pinot noir that tease, hypnotize and excite.
The quality is noted through both the whites and the reds and while pricing is reflective of the vintage it’s really just about as fair as can be expected. There are in fact some exceptional deals to be had and at all appellative levels. Mysteries of climat, soil and orientation in Chablis and The Right Bank
Domaine William Fèvre Saint Bris 2017, AOC Bourgogne ($24.95, WineAlign)
Not that we wouldn’t expect flesh and unction from a Fèvre Saint-Bris but ’17 brings sauvignon blanc in Bourgogne next door to Auxerre into a whole new sun-shadowy light. It’s one of those dappled mornings, at once bright and cast effusive, then cool, greyscale, at calm respite. Terrific interplay of patience and energy, activity and rest. Domaine William Fèvre Chablis Premier Cru Fourchaume 2017, AOC Bourgogne ($76.00, WineAlign)
Fourchaume the most broad shouldered Premier Cru steps lightly into view from 2017 before offering up an aromatic bite into a just ripened basket full of yellow and green fruit. The fruit accumulation is impressive, variegated, crunchy and fulsome. There’s something suggestive, hidden, shadowy and yet unearthed about this one from the wide swath of a hill. Something two to three years away. Patience will reward that curiosity. Drink 2021-2027. Tasted September 2019
Domaine William Fèvre Chablis Grand Cru Bougros 2017, AOC Bourgogne ($96.00, WineAlign)
Bougros the Grand Cru holds little back in a gone for broke style it should be suggested few other Cru Chablis will frame from the vintage. There’s dramatic foreshadowing of fruit exceedingly healthy, wealthy and destined to greatness. Truth be told the cumulative offer of sheer sustenance suggests no sneaking here but simply an advance and a leap into a pool of chardonnay exceptionality. Drink this with pleasure and confidence almost immediately and then for 10 further years of incremental bliss. Drink 2019-2028. Tasted September 2019
Domaine Bouchard Père & Fils Premier Cru Beaune Du Château 2017, AOC Bourgogne ($66.00, WineAlign)
A true estate expression and the first google result for a search of two words, Bouchard + Beaune. The Château de Beaune, the true estate vernacular and the spokesperson for its dialect. Higher toned, darkness of fruit, pure black cherry and then a silken, liquid limestone chalky palate. Here’s the introduction to pinot noir, Premier Cru and Beaune. Drink 2019-2025. Domaine Bouchard Père & Fils Savigny Lès Beaune Premier Cru Les Lavières 2017, AOC Bourgogne ($71.00, WineAlign)
Lavières is silky smooth and stunning, gently if generously spiced and who would not want to think that the flat stones used on roofs would be found in this Bouchard sector of soil. From the word “lave,” not a volcanic reference but indeed in reference to those limestone slabs atop the old houses. The palate brings in some fine-matchstick sliced fennel and then good clean fun in healthy dark cherry fruit. Very ripe Savigny. Drink 2020-2027. Tasted September 2019
Domaine Bouchard Père & Fils Nuits Saint Georges Premier Cru 2017, AOC Bourgogne ($73.00, WineAlign)
Quite bright and effulgent Nuits-Saint-Georges and showing more lithe ease and attitude than the Beaune labels. Here is a crossroads, not middle of the road but twain team building pinot noir. This is a glue for the Bouchard group in the reds, residing somewhere along a line between the light and the dark, the silken and the gripped, the beauty and the beast. It’s all of that and more, big red fruit, crunchy and intense. It’s all so very posh and polished. Drink 2020-2028. Tasted September 2019
Bouchard Père & Fils Gevrey Chambertin Premier Cru 2017, AOC Bourgogne ($77.00, WineAlign)
Gevrey Chambertin is at once open, friendly, getable. It’s also sneaky structured, grippy, formidable even. The great Premier Cru chameleon giveth and taketh away. It teases and then pulls back. While it may at certain moments act like a pinot noir in love it is in fact looking for affection but not yet ready to accept. Wait a few turns of the calendar for this Romeo. Drink 2022-2030. Bouchard Père & Fils Chambolle Musigny Premier Cru 2017, AOC Bourgogne ($91.00, WineAlign)
Chambolle Musigny is constructed of a structure enabling its fruit and acids to tether along the frame for long, longer and longest aging. This may be the first of the ’17 Premier Crus to lash immediately back, to speak on its own behalf and say “back off” with emphatic hand gestures and voice. This as C-M is a cherry brick of limestone and marl, equipped with all the tools necessary for looking into the next decade, without equivocation and whether or not you are prepared to listen. Domaine Bouchard Père & Fils Beaune Clos De La Mousse Monopole 2017, AOC Bourgogne ($95.00, WineAlign)
The aromatic intensity of pure demure, depict and delight is the combed and combinative epitome of what Clos de la Mousse can be, whether probable or possible. This entry is confident, streamlined, crystal clear. The transitions are chord-constructed, seamless, effortless and executed with maximum efficiency. This fruit meets acid melting into and with fine tannin is a get on the same page affair. It grabs hold of nerve endings and hangs on for seemingly ever. Great Premier Cru. Drink 2021-2031. Bouchard Père & Fils Pommard Premier Cru 2017, AOC Bourgogne ($112.00, WineAlign)
Pommard 2017 brings the violets and florals en masse as the conduit and foil apposite its firm and grippy nature. This is truly an aromatic wonder, a gatherer of sunshine and a hunter of fine to finest acids and tannins. There is a silky component that settles the palate but it’s just a trick. There is pure limestone melt throughout this mouthfeel and structure is a matter of great demand. Look ahead towards seventeen years from 2017 I would imagine. Drink 2023-2034. Tasted September 2019
Domaine Bouchard Père & Fils Volnay Premier Cru Ancienne Cuvée Carnot Caillerets 2017, AOC Bourgogne ($129.00, WineAlign)
It seems to me that for the first time since 2005 the artist known as Les Caillerets is want to act this way. Free, fruitful, humid and excitable yet built on rock ’n roll swagger. This sashays across the olfactory and the palate like nobody’s business. A mashup of 1970s star power; Mick strutting, torn and frayed. Rod in Faces mode stay with me, both pictures telling a story. Remarkable concentration, consistency throughout its components, always acting tough, cocky and cool. Drink 2021-2029. Tasted September 2019

Hard to believe how deep into its tenure this absolute iconic pinot noir has come but it is indeed the one, the expert, the consummate professional and never wavering traveller. Moves without impediment through time and space, in and out of consciousness, which is exactly what happens to us as we taste this 2017. A magical entry can only lead towards and into a land of great hope and expectation, a place where pinot noir is a rare gift, expensive mind you, but a true gift for the select few. This is the magic elixir indeed, pure, crystalline and of a fabric ethereal, alluring, luxe and pristine. This graces all buttons and notes for pleasure and longevity. It’s hard not too be seduced and if you are not you are simply not paying attention. Drink 2023-2038. Tasted September 2019
Domaine Bouchard Père & Fils Echézeaux Grand Cru 2017, AOC Bourgogne ($391.00, WineAlign)
There is a next level concentration, glycerin texture and layering in seamless accord that few other 17s are capable of showing. There is also a bit more grip and tension that stands apart from that silky luxuriousness that Corton just seems to integrate with less pronouncement. This is a splitting hairs matter because Echézaux is everything imagination can conjure and more. Magnificent pinot noir. Drink 2024-2035. Tasted September 2019

Montagny makes a quick and informative introduction into the zippy nature of the 17s mixed with fleshy substance and emotion. Bouchard Père & Fils Puligny Montrachet Premier Cru 2017, AOC Bourgogne ($77.00, WineAlign)
Puligny brings some power to the table with help from the glorious barrels, aiding and abetting the lush constitution. The quality is exceptional and this despite being the one that is non-specific, made of fruit from varied blocks and carrying no moniker such as Combettes or Champs-Gain. If you consider the purity and clarity, not to mention the rise from fresh through texture and into structure then you’ll see how this P-M is the affordable steal of the vintage. Drink 2022-2031. Boasts more outward behaviour then Chevalier-Montrachet and also a quicker knowing acceptance of flesh, texture and full attack. Great reduction, even greater smoky smoulder and a healthy pinch of rock salinity above and beyond. Wonderful work by the Cru, the vines and their uncompromising fruit. Drink 2021-2037. The couverture is all encompassing acting as a full sheathing tapestry in surround of a fruit core of sheer concentration and yet as a whole so understated. It’s hard to imagine more coaxing and less pronouncement. Relatively speaking there’s no estate equal to what has happened here. Great mineral crash into life and love, into fruit and impossible acidity. A magnificent chardonnay with 25 years of life ahead. Drink 2021-2039. Tasted September 2019
Bourgogne is but a place built upon a word, of wines designed and articulated through their very own personal vernacular. The region’s most important vineyards are defined in a word, in summary and withoutcomparison. Climat is the word and you may be shocked to hear how it is expressed as a highly complex chain of topographical, elemental and ethnological conditions. The glossary is much longer than you might think and adds up to quite a versatile declaration. To arrive at the distilled quotient of one, no less than 20 words are employed, exercised and ushered into explanation. The lineage travels through geography-geology-topography-landscape-position-relief-aspect-exposure-slant-elevation-slope-soil-vegetation-weather-microclimate-humankind-heritage-history-tradition-knowhow and temperament. While we understand the intellectual autonomy of choosing the unescorted word Climat as acting on behalf of all these conditions, what makes it so specific as to be exclusively owned by the people of Bourgogne?
It’s really quite simple. The people of Bourgogne coined the term or rather it came to them, as naturally as signs and portents but in the most positive, abiding and permanent of ways. Climat as in the Latin verbumsapienti, “a word to the wise,” meaning it stands alone, suffices, tells the whole story. Many will ask how many base and necessary conceits comprise this peerless notion that is Climat? The answer is not how many but that it belongs to the Bourguignons and no one else, so deal with it. Climat is the perfect oxymoron, a low and slow developed and yet truly miraculous occurrence, or perhaps a marvel but also forever etched in stone. It’s hard not to feel some trepidation when it sounds like preaching through a biblical voice because like the phrase that speaks to the Ten Commandments, the word implies that nothing else is as absolute and unalterable. In the case of Bourgogne it is owned because of 2,000 years of recorded history, thanks to the educated and the phrénique, of monks, farmers and intellectuals whose minds were connected to a feeling in the pit of their stomachs and to the earth below their feet. Climat keeps you, as it were, on your toes.
Chablis Left Bank, Bourgogne
It’s hard to imagine one word separating something so complex, multiple and diverse from everything else. In the English language “word” can be commensurate with the phrase “I speak the truth.” Climat may or may not have one single meaning, but in this univocal part of eastern France it is used to convey a collective sense of geographical affirmation, acknowledgement and agreement. It may also indicate that some special place has impressed a group of agriculturalists, viticulturalists and consumers so favourably that they would emphasize it as fixed and unchangeable. Farmers and winemakers can try to do the same elsewhere in the world but good luck coming up with a name or a term as precise, succinct or possessive of some semblance of equal meaning as Climat.

Precisely defined parcels or plots of land. Another way of seeking a definition is to take the what not to do or not to think approach. It insists that Climat should not be misinterpreted. The notion is unrelated to meteorology but is a specific term unique to Bourgogne, designating a specific vineyard site. Bernard Pivot writes “in Bourgogne, when we speak of a Climat, we do not look up to the sky, we keep our eyes to the ground.”

Each of them has its own story, produces wines with a distinct character and taste and keeps its own place in the hierarchy of crus (Regional Appellation, Village, Premier Cru, Grand Cru). Over one thousand named Climats extend along the 60 kilometres of the thin strip of vineyards running from Dijon to Santenay, just south of Beaune, and among them are some of the most famous names from the world of wine ; Chambertin, Romanée-Conti, Clos de Vougeot, Montrachet, Corton, Musigny…”
Bourgogne – Regional Appellations
It begins with the broadest of the Bourgogne appellations at the base of the pyramid with regional wines that are the rock and the platform upon which all Climats may stand. Included in this category we find Crémant De Bourgogne, Rouge et Blanc. I asked Laurent Drouhin of Domaine Joseph Drouhin “what does Climat mean to you?” His response. “First of all Climat is a name that is used exclusively in Bourgogne. A Climat to me refers to a specific location in Bourgogne which produces a wine with a unique character only found in that location. That is why in Bourgogne we highlight the name of the wine (Climat) more than the grape variety. I like to say there are thousands of Chardonnay produced in the world, there is only one Montrachet. A good example is the corner of four Climats which are next to each other and produce very different wines due to specifics in the soil and exposure. Montrachet/Puligny Montrachet Premier Cru Caillerets/Batard Montrachet, Puligny Montrachet Premier Cru Les Pucelles. Four fabulous wines, with incredible character and so different. Basically those four Climats are unique and vineyards are touching each others. Well, That is Bourgogne, That is Climat.” On his regional Bourgogne he told me this. “The Bourgogne Pinot Noir is a blend of several appellations from all over Bourgogne (around 13). So not a specific Climat. There is no vineyard designated as it is a blend of other declassified village level wines such as Macon Rouge, Ladoix, Maranges…. The wine is more of a melody which reflects the elegance and subtlety of the Pinot in Bourgogne.”
Cedric Dechelette is the General Manager of Maison François Martenot, the company that includes Négociant and estate owner Moillard, along with sparkling wine producer Labouré Gontard. Dechelette has been involved in the Bourgogne wine trade for over 30 years.
Labouré Gontard Brut Rosé Crémant De Bourgogne, Traditional Method, AOC Bourgogne (460816, $20.95)
This blush Crémant is a blend of chardonnay, pinot noir and aligoté. The base wines of the Crémant come from the different subdivisions of the Bourgogne vineyards. Their base wines however are predominantly produced from the vines of the Côtes and Hautes Côtes of Beaune and Nuits and the Côtes Chalonnaise. Different soils confer from limestone and marl in the Côtes de Nuits, Côtes de Beaune and Côtes Chalonnaise and granite in southern Bourgogne. The combing of Bourgogne from north to south delivers a true amassed regional expression for Bourgogne AOC, including such a broad, proper and creamy full Crémant like this Labouré Gontard. Domaine De Montille Bourgogne Blanc 2014, AOC Bourgogne (515692, $50.00)
Bourgogne Blanc was never so ambitious, Climat-driven, sober and meditative as this from first Hubert de Montille and today, son Étienne. From toy to bona-fide Bourgogne business, Montille takes regional purpose to the highest level it can afford and with the quest to age. The goal is set for complexity and tertiary aromas, whether Bourgogne AOC or Volnay Premier Cru Taillepieds. This Blanc is so very primary and even herbal, with a specific Bourgogne garrigue, owing to the presence of holly, a thorny scrub bush. The stuff is found in the Beaune vineyard Les Aigrots, from an old dialectical word, “Argifolium.” Texture is viscous, salve-like and peculiar as a result but nothing seven to 10 years couldn’t resolve. The last example causes some wonder as to what may lay between regional Bourgogne AOC and Village level wines. Decanter Magazine just recently reported the announcement by the BIVB that there is in fact a new level of Bourgogne wines coming soon. The new Bourgogne Côte d’Or was inaugurated in Beaune just this past weekend and will be integrated as a Bourgogne Régionale AOC, not exactly a new appellation but it is the 14th regional Bourgogne AOC. Regulations will dictate vine density (9,000 plants per hectare as opposed to 5,000 at the regional level) and only Pinot Noir grapes can be used for the reds, from vines grown across all villages of the Côte de Beaune and Côte de Nuits, from south of Dijon to Maranges. Producers will be able to include grapes from young vines that would not necessarily be used in Village level wines. Prices should fall somewhere in between regional and Village and the new category “should be seen as the top of the regional pyramid, just below Village level,” according to Cécile Mathiaud of the BIVB.
Meanwhile long before the wine there were three geological phases; Quaternary, Tertiary and Jurassic, to set the landscape. During the latter period a shallow tropical sea covered what today is France. Major limestone and clay deposits were formed in a variegated mix that generally speaking runs from harder and more prevalent deposits (in the north) to friable, less regnant and heavier clay (in the south). Today in addition to Pinot Noir and Chardonnay there are Gamay and Aligoté. In Saint-Bris there is Sauvignon Blanc and in Irancy Pinot Noir can be blended with César. The investigation into this essential level of Bourgogne travels in and out of many hamlets and the precisely delineated vineyards associated with the parent village. A Climat is located in the Mâconnais, an outlier is found in Irancy, a not so common white in Marsannay, and an allowable lieu-dit noted on the label in Pouilly-Fuissé. More Village AOC examples are found in a Chablis of a Climat that is essentially Premier Cru, one of the best villages of the Côte de Nuits and the aforementioned Montrachet.
Louis Latour Mâcon Lugny Les Genièvres 2015, AOC Bourgogne (Agent, $23.95, WineAlign)
Latour’s lieu-dit Les Genièvres is a warm, rich and distinctly Mâconnais chardonnay, even in its surprising depth and richness for the appellation, coupled with the warmth of the vintage in delivery of terrific value for the money. Bourgogne for all the right reasons, most of all a food happy way to get satisfaction from and with chardonnay. Drink 2017-2020. From the outlier for pinot noir in Bourgogne, only Irancy tastes like this and carries such linear, in your face, interfaced structure. Irancy is found in the Grand Auxerrois region, on the right bank of the Yonne river, fifteen kilometres South of Auxerre and South-West of Chablis. Domaine La Croix Montjoie was created in 2009, named after a cross located at the intersection of Vézelay and Tharoiseau. This cross signals the spot where pilgrims coming from Avallon first caught sight of Vézelay and felt overjoyed. The domaine is led by a Bourgogne dream team; Sophie and Matthieu (agricultural engineering and oenologist), Thierry and Jean-Louis (farmers), Christophe and Hervé (vineyard workers). Their Irancy is firm, properly and effortlessly acetic in its rising tones. It’s dramatically bright, ripe, veering to darkening cherry and exhibits great tension. While tart, slightly lactic and quick to the punch it’s also peppery and crunchy. This northern pinot noir is blended with césar, a deeply hued variety of only five planted hectares in the Irancy appellation. It is said to have been brought to the area by the Roman legions. Mostly (75 per cent) aged in tank so the freshness steals the show with just enough structure to see five more years of firm pleasure ahead. Drink 2017-2022. Jadot’s winemaker Frédéric Barnier shed some fascinating insight on how he and his team deal with many different parcels. “As you know we are producing a large range of wines and are really focused on trying to reveal each place. To explain better we are trying to have the same process from a Village to Grand Cru (same ageing same cask same percentage of new oak). We want to show that a Meursault is not a Marsannay and not because we have made something special on the wine but just because they are different. For the Marsannay White, this wine is coming from a blend of three different plots we are farming. One of it is planted with Chardonnay Rosé which is pink but it lost the color after fermentation. It is a rare wine from Côte de Nuits. Most of Marsannay is red or a few rosé. 2011 is showing very well now. Whites are rich but still fresh from an early vintage picked on the very first days of September.”
The rare and elusive Marsannay blanc is a fine and beautiful thing, laden with dry extract, intense grape tannin and the pure intensity of liquid limestone. It is here in this wine from the northernmost commune of the Côte d’Or where the idea of fruit and of chardonnay is just an afterthought because the sheer and non-mitigating saltiness of this stony Bourgogne is simply hypnotizing. This is a steal of great Village proportions. I would stack this up against many Premier Cru two and three times its price. Drink 2018-2025. Kerrie de Boissieu, Oenologue at Château de Lavernette explains that “Climat is a vineyard designation. It is the custom in Bourgogne to give names to parcels. Today, those names mean very little to us personally but they do allow us to compile a history for each parcel and follow it better. We have Pouilly-Fuissé vineyards in two different Climats: Maison du Villard & Vers Châne. There is no one named Villard in this area now and I don’t know where their house is or why the parcel carries their name. The parcel faces west – southwest so it captures the afternoon sun making it a more luminous wine – cheerful and easily approachable. Vers Châne means “towards Châne” The parcel faces east – southeast capturing the morning light. It is a colder, stonier, more complex mistress that needs to be coaxed to cooperate. It is well worth the trouble though as it has a nicely chiseled structure and ages gracefully.” I asked Kerrie to comment on Château De Lavernette Vers Châne Pouilly Fuissé 2014, the wine and the vineyards. “This wine has always been our chouchou (favorite). Xavier and I bought the vineyard in 2007. It belongs to us and not to Château de Lavernette. The first time we harvested the grapes was the day our son, Basile, was born and it made for a really exciting day. There are two parcels divided by a row of peach trees (peches des vignes). It is in an amphitheater protected by a forest on the northern side. The soil is a rocky scree with limestone tumbling down from Les Rontets. The wine seems to be marked by each of these elements: peach blossom, stone fruit, woodsy underbrush and saline minerality. Hand-picked, whole-cluster pressed, indigenous yeast, fermented and aged in Bourgogne oak barrels (228 L, 20% new) for 22 months.
Château De Lavernette Vers Châne Pouilly Fuissé 2014, AOC Bourgogne (496372, $42.95, WineAlign)
The lieu-dit locale for Lavernette’s Pouilly-Fuissé is called “Vers Châne,” a chardonnay that might mean “down a silk road.” This is in fact a true expression of polished texture, a Pouilly-Fuissé warm and rich if decidedly linear-focused, with some real vanilla-tinged, toasty barrel notes. That the appellation speaks most truth when the combination of ripeness and smoulder are mixed and then married to the specific PF acidity (like preserved lemon), then reality bites. The smoky, flinty edge is a little over the edge but two years should help to soften, match with the downy texture and ultimately settle the score. Drink 2018-2021. Domaine Oudin Chablis Les Serres 2014, AOC Bourgogne (WineAlign)
Just south of Chablis there are hilltop vineyards above and around the village of Chichée where Les Serres draws its superior fruit for what is ostensibly (though not labeled as such) Premier Cru. Jean-Claude and Christiane began here in 1988 and it is now Nathalie and Isabelle who use Les Serres old vines fruit (some up to 70 years) for this transcendent and worthy Chablis. Les Serres are “the greenhouses,” an apropos moniker for a wine that not only receives but gifts so much warmth and generous fruit without ever straying from its stony and salty roots. The texture here is above and beyond textbook for Premier Cru and elevated for the sharp vintage. So settled at this point it is just a pleasure to taste. Drink 2017-2026. When I asked Luc Bouchard which Climat most defines the notion for the estate he replied “from Bouchard estate we are very proud of the Climat of Beaune Grève Vigne de l’Enfant Jésus, monopole of Bouchard since 1791, a unique terroir with gravely soil (unique in Beaune ). The roots go very deep into the soil (9 m), so if we have a very dry summer there is always enough water far below and if there is heavy rain storm, the drainage is so good that the water is not directly swallowed by the grapes. That explains the consistency of the wine, it’s unique texture and ageing potential.” On his Gevrey Chambertin 2015 he had this to say: “The 2015 vintage is a superb vintage; normal quantity and high quality from Bourgogne generic up to top Grand Cru. Gevrey is one of the best villages of the Côte de Nuits and our sourcing of grapes come from four different growers (from different locations too) that allow us to have a better representation of the appellation and a better balance. Gevrey 2015 shows a deep and intense garnet red colour, intense bouquet red fruit and a touch of gamey taste. Good structure and very nice balance, ripe tannins, with a long finish. Can be drunk from now (with good aeration before) and can be aged for five up to 10 years.”
Bouchard Père & Fils Gevrey Chambertin 2015, AOC Bourgogne (661330, $59.95, WineAlign)
Bouchard’s 2015 is incredibly forward Gevrey Chambertin, full of fruit, flowers and a beautifully integrated red liquid chalky syrup. It’s just plain getable and is the godfather to all of its peers. If you want to show the world and everyone in it who knows or knows nothing about high-level Bourgogne then perhaps consider this to be the journey’s departure point. Gevrey and especially in the hands of Bouchard is such a gate for what it means to build pinot noir from the earth upwards. It explains what needs in a language you can understand and makes an offer you can’t refuse. Pour this every day simply because it is quintessentially ripe and structured stuff. Drink 2018-2026. Mont Chauve En Pimont Chassagne Montrachet 2012, AOC Bourgogne (496372, $67.95, WineAlign)
Still in a state of hyper reductive possibility this is an ambitious and beautifully calcareous Chassagne, full of deep lemony preserve and variegated waves of acidity. Though it breathes of some age development it is in fact a greatly structured chardonnay that will continue to benefit from further development. Where texture and complexity meet. Drink 2018-2024. In addition to running his own Domaine de Bellene and négoce Maison Roche de Bellene, Nicolas Potel has drawn upon some secret resources to deliver old wines made new again. His sourcing of older parcels from producers who somehow hid these top vineyard gems from the world is a gift of generous proportions. Ask Nicolas what he thinks about Les Climats and the hardest working man of leisure, diplomat and ambassador extraordinaire for the wines of Bourgogne will open up his heart and his mind. Says Potel, “the characteristics and Climats of every site and village are truly unique. To make a very good village wine, you need to ideally source grapes from south, central and northern areas of the village. This way it shows the full expression of the village for the vintage in question. Single vineyards based on identification of one site. Volnay is all about elegance. Nice tannin, structure and acidity with pure fruit character. The terroir in Volnay is always very transparent in the wine because of this elegance. What about Gevrey-Chambertin? Last February I tasted the 1999 Village and 2001 Premier Cru Petit Chapelle and today, the ’01 Village. Immediacy meets reflection to bring clarity into the light. This is a wonderful example of the beautiful relationship between producer, Village and Climat.
Though time has exorcised some fining away of the more grainy and delicate texture of this Village level Gevrey Chambertin it hangs securely in the balance between youthful and aged. As a lovely mature pinot noir it should be considered as occupying space in the categorical order between Village and Premier Cru, once destined for greatness but now in the waning, twilight of its career. What happens in this space is a complex combination of cured red fruit, weighty earthiness, mushroom, truffle and dried herbs. All merely hints mind you so several years of life will persist to deliver further pleasure. Drink 2017-2021. What is Climat?
Our fiends at the Bureau Interprofessionnel des vins de Bourgogne (BIVB) have established the reference point for the written understanding of the true meaning of Climat. I posed the question of concept to several producers and négociants. Most pointed straight to the BIVB website for answers “Over the past 2,000 years, the Bourgogne winegrowing region has benefited from the experience of men and women, from the observation of the soil, and from the region’s unique microclimates. This has given rise to a patchwork of plots whose qualities have been identified and acknowledged: the Climats and lieux-dits. The Climats and lieux-dits give Bourgogne wines their unique identity. Their names bear witness to the region’s rich history. Their origins lie in the environment, local heritage, savoir-faire (know-how) and human history. The term Climat is unique to Bourgogne. It is the Bourguignon expression of the notion of terroir.”

“Some Climats were first referenced as far back as the 7th century, such as Clos de Bèze in Gevrey. For centuries, the reputation of Bourgogne wines was driven by the monks of Cîteaux, and then by the Dukes of Bourgogne. Some wines, such as Clos Vougeot and Montrachet, which bore the name of the Climat where they were grown, acquired a reputation that extended beyond French borders. In 1935, the National Institute for Origins and Quality (INAO), made official the usage of the word “Climat” and began using it in legal texts applying to all Bourgogne appellations, whatever their level of hierarchy. The Climats are a sign of excellence and on 4 July 2015, the Climats were included on the UNESCO World Heritage List. Lieux-dits are also plots recognized for theirown topographic or historical specificities. Their precise geographical location is not registered by the INAO. A certain number of producers choose to feature the name of their lieu-dit on their labels, such as Pouilly-Fuissé, Le Clos Reyssié.”

Bourgogne Premier Cru
Les Climats are Appellation d’Origine Contrôlée (AOC) defined vineyards or rather the DNA of the vineyards and the official term is specific to wine while the reference lieux-dits is an administrative one. While there are some who consider Climats as also relating to things atmospheric, the pragmatic consensus keeps the discernment ground into dejection depressions, alluvial fans and geological anomalies in an otherwise south by southwest set of exposure slopes for the best of Bourgogne wines. Still others would argue that while dirt makes an impact it is climate that inflicts the most drama on a wine but even more important than climate and soil, it’s the people who give the terroir its cultural identity. The notions of accumulate knowledge that can be transmuted from generation to generation is how each village has managed to produce a specific style of wine from vintage to vintage.
Four exceptional Bourgogne Premier Cru
Domaine Theulot Juillot Mercurey Premier Cru La Cailloute 2014, AOC Bourgogne (473793, $31.75, WineAlign)
Theulot Juillot’s is a Mercurey Premier Cru with a direct connection between Bourgogne and Ontario by way of the great region’s educator and ambassador Jean-Pierre Renard. Given and extra year in bottle the form tannic grip has loosened, if only a lace or two while it continues to match fruit with umami. Persists in its display as one of the more over-performing reds from one of the most out performing villages in all of Bourgogne. Last tasted on several occasions, June-October 2017
From vines planted in 1979 and 1980, the crest of the ridge at 300m is a prized locale in Mercurey that sees fit to fresh, vibrant and structured pinot noir. The beautiful dichotomous relationship between ripe and juicy opposite firm and sweetly tannic is met in this functional Mercurey, a Premier Cru of upbeat excellence. Very representative of place because of the grip but it goes light years beyond the lithe and the under-performed. You could pour this for Burgundy label chasers and they would cry sweet Nuits St. Georges. Raspberry and strawberry with plenty of umami minerality and that firm tannin up the back. Really tempurpedic acidity never reacts and always supports. Theulot Juillot may suggest five to eight years of cellar time but this is a 10-15 year Mercurey. No fooling. Drink 2018-2029. Louis Moreau studied oenology-viticulture at Fresno State University (California) before working in several vineyards across the state. In 1994, after eight years in the United States, he returned to France to take over the family business, succeeding his father Jean-Jacques. He then expanded his facilities to leverage the harvests yielded on 110 hectares comprising the family’s two estates, namely Domaine Louis Moreau and Domaine de Biéville. Today, Louis Moreau produces and markets Petit Chablis, Chablis, Chablis Premier Cru and Chablis Grand Cru, with a focus on finding the best quality and respecting the environment. Since February 2016 Moreau has been the Vice-President, Commission Chablis of the Bureau Interprofessionnel des Vins de Bourgogne.
Domaine Louis Moreau Chablis Premier Cru Vaillons 2014, AOC Bourgogne (124362, $43.00, WineAlign)
Vaillons is drawn from sub-appellative blocks in Les Epinottes and Roncières, with some vines as old as 65 years and yields quite low for where concentration trumps quantity. Very rich and concentrated is indeed the mode here, with good mineral bled from stone and very little in terms of sour or lactic edges. This is amenable Vaillons to be sure. A purity subsists and solicits simple and non-specific pairings, like Dorado, Sea Bass or Magret de Canard. There is this amazing salinity that hints at iodine, lemon and lime, but I would not call it salty. I would call it really refined Chablis. Drink 2017-2022. “The word Climat is from Bourgogne and designates a viticulture terroir,” explains Megan McClune, Directrice at Domaine Jessiaume. “It is a certain piece of land, with vines, that is named, has a story and specific geological and climate conditions. The Climat is the association of land, grape variety and craftsmanship. We strive to produce all of our wines so that each wine expresses where it comes from in the glass. We produce three wines from one parcel of land in Auxey Duresses les Ecussaux. This definitely expresses the notion of Climat. Santenay Premier Cru Les Gravières is a very special piece of land. We have a history of over a hundred years in this piece of land. The soil is quite rocky and produces a wine with a peppery finish year in and year out.”
Domaine Jessiaume Santenay Premier Cru Les Gravières 2013, AOC Bourgogne (487488, $50.00, WineAlign)
Built in 1850, Domaine Jessiaume was purchased in 2007 and is owned and operated by the Scottish family Murray. Situated right at the gates of the important Côte de Beaune village of Santenay it comprises 37-plus acres, with large plots in Santenay, holdings in the Premiers Crus Auxey Duresses Les Ecusseaux and Volnay Les Brouillards and a section of Beaune les Cent Vignes vineyard. Les Gravières is located at the northern end of the village, on the border with Chassagne-Montrachet. Jessiaume are indubitably Santenay specialists and the famous limestone, oolite and marl plot of Les Gravières (to which a new wall was recently added at its base) is interpreted beautifully bright, from cherry tones to cherry strength. The mesoclimate is fully realized in this sunny ’13 and the wine represents the heart and meat of Bourgogne, from that textbook bright fruit and back down to earth. It’s taut and nearly bracing, just a perfect example of a very specific and storied Climat. Drink 2018-2025. Domaine Chanson Pernand Vergelesses Premier Cru Les Vergelesses 2013, AOC Bourgogne (227199, $66.95, WineAlign)
South of the hill of Corton is where Chanson owns five-plus hectares in Vergelesses, the most famous Premier Cru that gave its name to the village of Pernand. You can feel the lower slope heavy clay but also the upper stones, first in power, grip and texture and then through a liquid red chalky streak. Pernand from the Celtic, “the (spring) source that is lost” and Vergelesses from the Middle French verge, meaning “rod,” a reference to the parcel’s long shape. It is a name which dates back to when Charlemagne owned vines on the Montagne de Corton. Just coming into its zone around now after the toast, grilling notes and calculous grittiness have begun to soften and fade. Drink 2017-2022. Premier Crus of Chablis, Montrachet, Mercurey and Nuits-St.-Georges
Domaine Louis Max Nuits Saint Georges Premier Cru Les Damodes 2014, AOC Bourgogne (469080, $94.00, WineAlign)
Here is an outsanding Nuits Saint Georges from a marl and limestone vineyard just a stone’s throw from Vosne-Romanée. Les Damodes sings a northern NSG song and its ladylike name carries a legend that tells of fairies inhabiting the rocky landscape. The formations looked like tall ladies in long dresses, “les dames hautes,” or “damaudes,” then “damodes.” The vines in the furthest northeastern block north and east of the village look to the east and the soils are poor so the expectation elicits a thoughtfulness to solicit tension and finesse. That it does, first from a stony-lime-pomegranate-red cherry purity and then a fineness of acidity meets tannic honesty. Domaine Louis Max holds widely in Bourgogne, in Mercurey and Rully, as well as the south of France estates of Château Pech-Latt in Corbières and Domaine la Lyre in Côtes-du-Rhône. Les Damodes is a perfect example of a larger, modern-day producer making a small, site-specific Premier Cru from a storied piece of land. Drink 2018-2028. Marchand Tawse Puligny Montrachet Premier Cru Champ Gain 2014, AOC Bourgogne (470112, $114.00, WineAlign)
Champ Gain is located in the northern reaches of Puligny-Montrachet, above Les Folatières, edging off the eastern slopes of Mont-Rachet and in between the appellations of Saint-Aubin and Meursault. It’s essential perch on the rump of the mountain at 350m lends a perfect south-east exposure. The soil is highly variegated, even for Bourgogne, with friable and broken clay-limestone littered with pebbles and stones. A classic élevage of 18 months in (25 per cent) new wood delivers an archetypal if texturally modern Puligny. The name is simply “field reclaimed by the forest,” which separates itself from no other vineyard in the region but one Premier Cru‘s “gain field” is another’s “perdre la forêt.” What really distinguishes Pascal Marchand’s Champ Gain is texture, not just in how it glides, caresses and layers but in how it ties up its laces so taut, tight and in the end it’s an impenetrable Bourgogne. The force field around its fruit is a pure mineral tide that is yet to ebb and flow. It’s coming soon though, despite the crackerjack vintage that elevates the entire gain. Drink 2018-2026. Bourgogne Grand Cru
Historically speaking, when did this omniscient term Climat switch to the wine business? It may have origins and or co-existence in the Jura, but it is definitely a word that belongs to that part of eastern France. So why is or better yet, when did Bourgogne become the birthplace of terroir? We know it to be a matter of nature and people, both of which need time, hope and literacy to transmit information. You need place and you need monks. Record keeping, true delineation of land and the erecting of the walled in vineyards (Les Clos) really began after the monks were handed down the torch from the Celts and the Romans.
Between the 15th century and the French Revolution the vineyards began to be divided up and the notion of Climat emerged. The 18th and 19th centuries saw the ranking of Climats and terroir. Regulations were introduced during the 20th century. The word “Clymat” appeared for the first time in Chablis in 1540 and then again in 1584 in a document about the Clos de Bèze. The first mentions of Climats in this sense were recorded by Abbot Arnoux in 1728 when he described the vines of the “côte.” The movement to define and spread the word about the Climats led to the first classifications of the vineyards, by André Jullien in 1819, Dr. Denis Morelot in 1831 and Dr. Jules Lavalle in 1855. The names of the villageson the côtes was added to the name of their most famous Climat, with the first being Gevrey-Chambertin in 1847.
The first protection systems were introduced: The laws of 1905, 1919 and especially 1935, which defined the notion of the Appellation d’Origine Contrôlée. In 1944, the names of the Climats classified as Premiers Crus were added to the decrees for Village appellations. On July 4, 2015 the term Climat was added to the UNESCO World Heritage List. Aubert De Villaine, President of the Association for this inclusion said “nowhere else has the quest for harmony between a wine and the place it is produced been as subtle and sophisticated as in the Bourgogne region with the Climats. The Bourgogne region has a universal value.”
Didier Séguier of Domaine William Fèvre
Domaine William Fèvre can be used as an ideal example of a launch point from where control is transferred from the operating system to the process and ultimately, the programmer. That would be winemaker Didier Séguier, he who takes a calm ferment and squeezes out its vital juices to render Chablis with all the attributes it has come to define. Séguier the winemaker is a generous fellow, a giver of Chablis, gift-wrapping kimmeridgian-affected fruit in 50 per cent oak and tank equality for all his Grand Cru.
Domaine William Fèvre Chablis Les Clos Grand Cru 2015, AOC Burgundy, France (641381, $130.00, WineAlign)
Fèvre’s Les Clos takes a bit of an unexpected turn so from 2015 it currently goes stone cold and remains intensely locked. From what we know the vintage should be generous from the start but in this instance Les Clos makes use of every ounce and fibre of kimmerridgian being to lay only salt, fossil and stone before you. The fruit kept hidden away makes you pine for fleshy orchard apples. Nothing can really prepare you for the Les Clos iron gate, especially when you were expecting a welcome mat laid out at your feet. Take the time to charm and be charmed, at least 15 minutes with a glass or 15 years if you can offer up the time. The Grand Cru will slowly open up and speak in a vernacular of controlled energy, fineness of acidity and exceptional balance. This will be one for the ages. Drink 2021-2035. The greatest pleasure to welcome Jean-Pierre Renard and Nelly Blau of @vinsdebourgogne to Toronto.
The only true intrinsic reality gained through a discussion about Climat is accessed by the tasting and assessment of examples that represent a full cross-section of Bourgogne. The appellations of Chablis et du Grand Auxerrois, Côtes de Nuits and Hautes Côtes de Nuits, Côtes de Beaune and Hautes Côtes de Beaune, Côtes Chalonnaise and Couchois, the Macônnais and the Châtillonnais are best understood by comparative studies of Pinot Noir and Chardonnay from regional Bourgogne to Village and through Premier and Grand Cru wines. With more than 100 appellations (84 officially recognized) it would take a lifetime and then some to cover them all and several more to come to grips with the very specific meanings and interpretations of their personalized Climats. By that time the moving target would change so much that starting again would be the only option. Make the most of the time there is, which is the way of the Bourguignons.
If you are looking for an answer as to why Bourgogne wines are so expensive, subscribe to the following idea. If to you unadulterated Chardonnay, Pinot Noir, respected producers and Climat mean anything at all then the Bourgognes are worth the price, if only because they are the rarest group of wines on the planet. Consider the region sixty kilometres in length, with 28,715 hectares under vine split up into thousands of different plots. Each are tiny by comparison with most of the rest of the world’s identified terroirs. We can’t all afford Bourgogne but at every level the quality is reflective of the cost. Truly. We can however search for terrific value in the multitude of villages where quality has improved dramatically in recent times. Names like Chablis, Montagny, Saint-Véran, Mercurey and Santenay are but a handful. All of Bourgogne waits for you.
It reminds me of Richard Yates at his early career, Revolutionary Road best, in tense humour, as noted by James Woods, “a celebrated indictment of suburban surrender.” Here we are, in 21st century Ontario, preparing to head to our suburban respite sanctuaries with tools, sundries and supplies in hand, only lacking one essential piece. Good wine. We turn to the LCBO, to VINTAGES, to the ceaseless recurrence of release and we find limbo. Last week? Next week? Why not now?
We are willing to submit and surrender but the shelves are stocked with 2nd tier choices, the wines of first degree excitement already having disappeared with the previous week’s first wave. So if you need wine suggestions for the Victoria Day weekend I’ll have to send you on a retroactive search through the May 14th VINTAGES release. “It’s a beautifully typical story of these times and this place.”
Why am I looking forward and into the eyes of May 28th? Well, I’ll tell you why. The finest collection of Canadian wines in some time gathered together at one communal table will become available, sadly just days after the May 24 three-day escape. These wines would have sold well, in droves actually, had VINTAGES made use of their excellence in advance. So, as a messenger for the stars, it is my duty to tell you about their upcoming presence in diplomatic conformity of early 21st century Ontario realism, on the LCBO stage. These be the 10 of them.
Jackson Triggs Okanagan Reserve Series Viognier 2014, BC VQA Okanagan Valley, British Columbia (445700, $15.95, WineAlign)
This 2014 Okanagan take on Viognier is an all out rich, ripe and boozy affair. Sparks fired by a cold play take the lead, singing with spice, marked by galangal and ginger in control over the wishful act of balancing extract. “And I saw sparks, yeah I saw sparks,” enough so for such a Viognier to be on your way. Good unction for the un-oaked Jay Johnston procured Chardonnay, more green apple and early honey than before. This is the purity machine in motion, direct, spoken in a Bench vernacular and zagging like the rows of the vineyard. The bottle tells you about grapes handed the pink slip during post harvest deliberations, something not lost within its own ironic twist. When you have pink lemons you made pink lemonade, done here to great simulated effect. Tart is the operative, like a perfect square of gelid red citrus on a plate to foil briny sea morsel and verdant greens. With the right herbs and lettuces this pink grapefruit Rosé will handle itself with pairing irony and relative ease. Welcome aboard Sébastien Jacquey. Continues to throw its weight about and has now engaged a phase of typical J-P Colas redolence and pungency. Strict adherence to Creek Shores citrus minerality injects the June for future time-lapse release, an internal ooze that will take years to push its way upwards to the surface.
From my earlier note of December 2014: 2013 was a perfect follow-up for Niagara Riesling, after a vintage where so many exceptional wines were made. The ’12 June’s by Jean-Pierre Colas was his best and with this repeat performance in ’13, the consistency of June’s vineyard is further cemented. Once again, the citrus injection is a Creek Shores thing, a vehemence not matched by other sub appellations. Where ’13 differs is its weight. There is a textural density improved upon and at the same time dragging on the freshness of the fruit. The trade-off will mean less immediate gratification in lieu of more flesh and bone for a longer period of aging. Given at least five years rest, the 2013 June’s Riesling will discover a Ribeauvillé like future.
Such a ripe and extroverted Pinot Gris, in a style created and honed by winemaker Richie Roberts, here in 2014 near its apex. Singular without feeling the pressure to induce rapture or revelation. Fleshy ripe, of peaches, plums and nectarines. Typically and expectedly fresh, juicy, industrious, vehement and good, spicy length. Always well-made, hitting essential, doctrinal Pinot Gris notes and so very food versatile. May I suggest a whole grilled fish, lemon and fresh herbs. Drink 2015-2018. Joie Farm A Noble Blend 2014, BC VQA Okanagan Valley (454793, $23.95, WineAlign)
The dial is turned up in the noble blend, an amalgamation of five grape varieties and nine vineyards. The inspiration and the intent is Alsace, the result lying somewhere in between. It is an inspired blend and it does resemble Alsace but in the end it’s all Joie Farm. Distinct from structure and connectivity, not to mention drinkability, with a shot of spice. Drink 2016-2020. At first the 2013 Red alights in high tones juxtaposed by a chew of sultana, an odd entry for the Thirty Bench, carrying on for the first few minutes in the glass. There are sulphide notes, of red onion and yet after a few minutes they begin to resolve, caramelizing to sweetness, mixed with tannin. The transformation continues, playing new notes, of red rooibos tea and seasoned seaweed. Grilled onions and charred poblanos come on the palate. Currants finish off the profile. The emotive cabernet franc really dominates this blend and though at first difficult to crack, the eventuality is an equation figured as a true positive. Drink 2017-2021. Tasted May 2016 @ThirtyBench
This is more than an interesting look back into the Tawse time machine to compare where the Grower’s Blend now sits as compared to what it was like in its youth. Now into liqueur, of cherry and earth, no longer just a hint of what they wish to be. Cave Spring Csv Riesling 2013, Estate Bottled, Cave Spring Vineyard, VQA Beamsville Bench, Niagara Peninsula, Ontario (566026, $29.95, WineAlign)
That flesh, that Kabinett flesh, fills the CSV in every crevice. In 2013 the residual sugar number lies between 15 and 16 g/L, and though the crop was bigger, it was still picked later than in 2012. The result is formidable corporeal concentration, consistency of house style and perhaps the only ’13 Niagara Riesling to imitate, perpetuate and extrapolate on the vintage that came before. This Cave Spring concentrates fruit and Escarpment into a powerful Riesling, streaming like charged particles through changing expressions. A lingering ascension hovers as it rises, until it slowly fades into the welkin, like a balloon that languidly gets lost into the blinding blue of a midday sky. Drink 2017-2025. Bachelder Nuits St Georges La Petite Charmotte 2013, Burgundy, France (357228, $58.95, WineAlign)
From the Nuits St Georges parcel that Thomas reaps, built on the premise of soil, structure and depth. The lithe beauty of this La Petite Charmotte block is lifted and held in the highest esteem in 2013, perhaps with even greater sensibility of character than out of what was an exceptional 2011. The Nuits iron power surge may have descended down a half level but the redolent Beaune balance is spot on. So very perfumed. That Bachelder perfume, expressed in Neaune craving and breadth. Should you be counting and despite the number of wines you will read about below, I have to tell you honestly that I was a highly competent mathematics student through high school. Distractions including but not restricted to cooking, music, words, pop culture, sports and ancient works of antiquity paved new roads but I can still count to ten. This list goes up to eleven because I could not in good conscience leave Thomas Bachelder’s pulchritudinous NSG out in the first day of June cold.
So I tasted again and have updated my note on La Petite Charmotte 2011, a beneficient Bourgogne that hit LCBO shelves this past weekend. The Bachelder project turns water into wine in three countries. By now you know all about the trinité-terroir schematic as I’ve written about Thomas and Mary many times. The fact that VINTAGES happens to now be releasing the 2011 LPC, predecessor to the already tasted and reviewed 2012, the “single-vineyard NSG hugged up on a northern slope,” is of consequence because it’s a memorable, cellar-worthy wine from a really stunning vintage.
The other top 10 all happen to be reds, save for one exiguous white Burgundy. France and Italy (a.k.a. Old World) dominate the remainder, except for a lone, paradigmatic Chilean Cabernet Sauvignon and a refreshing McLaren Vale Shiraz. Get out there folks, spoken one more time in guiltless refrain. La Ferme Du Mont Première Côte Côtes Du Rhône 2012, Ac Rhône, France (251645, $14.95, WineAlign)
A different sort of CdR works from this unfiltered red, on the side of winemaking that summons modern Rosso Sangiovese Grosso. That’s caused by the concentration of cherry liqueur, dried roses and a greater aromatic feeling of potpourri. Yet there is also fresh raspberry and at the other end of the spectrum, cured meat. With a touch of Brett it recalls Grosso in deeper, more expensive terms. The middle palate is a touch hollow, but at $15 beggars need not be choosers and so much pepper marks the austere finish. Add it up and the two words that come to mind are simply complexity and value. Drink 2015-2019. Tasted May 2015 @Eurovintage@VINSRHONE
Prodigious Ventoux for a pittance considering the stuffing and the Mencia-esque (think Pittacum) deep, dark, black cherry and purple berry dressing. Rich and actually structured with equal and opposing tannins. That said, it never sheds its high-toned, carbonic youthfulness and the aromas are peppered by five spice, mandarin and hoisin. Something about this also reminds of Cru Beaujolais, but like an immature, yet volatile tank sample of Brouilly. But it’s more new world than that, so I wouldn’t construe all this as complexity, or balance for that matter, but instead, distraction. It’s certainly worth a look, with near, value-driven greatness due to righteous acidity, in a modern, semi-distinct representation of the region. If you like to keep it dark and sorcerer powerful, go gothic with this Ventoux. Drink 2015-2018. Tasted May 2015 @AOCVentoux

Three district aromas emanate; fresh carbon-stoned fruit, cheese and earth. Plums and liquorice on the palate. More cheese. High acidity with gramercy to punctuality, dimension and peak performance prickling. A minutiae of tannin ekes out an ageing component. Could go both ways bitter finish. Better than most Dolcetto. Presence and exceptional poise define the role played by this Cabernet Sauvignon. The character portraiture is so very Chilean. Florals oscillate in waves of vanilla, along with currants and tobacco. Dig in some Aconcagua earth and bell pepper, melded into and lost in an ol’ tenebrous, cimmerian buttermilk sky. Lush, rich and piqued by cracked pepper, anise and the dusty redundancy of liquorice root. Legitimately oaky but that is entirely OK. Drink 2015-2020. Maison Roche De Bellene Vieilles Vignes Bourgogne Chardonnay 2012, Burgundy, France (299867, $20.95, WineAlign)
So stylish for entry-level Burgundy, ascertained and finessed by a light yet steady approach. Creamy texture stands out, above freshness and the under subtle tone of buttery oak. I don’t find it at all toasty but more of a slow, low temperature, moisture deprivation in the whirl of a dehydrator. Enter the forest through the gates of this Bourgogne on the route to Meursault. Famille Perrin Les Christins Vacqueyras 2012, Ac Rhône, France (973453, $23.95, WineAlign)
I tasted this Vacqueyras back in the fall of 2014 but did not write a formal tasting note. Six months in bottle has done it some serious, generous justice, in the aromatic simulacrum of balance. Settling has tempered what heat there may have been in extreme youth, humouring and buttressing the lamina of red fruit to stand alone, in avoidance of an impasse in jam. This has class in all months, seasons and at every level of education. It is both student and T.A., dug in to study and to mentor younger Vacqueyras in search of such structure and wisdom. Spice and smoke throw signals of added coil, only to relent to the drupe and resolve for involution. Times also allow for pretty florals beholden to garrigue. Serafino Shiraz 2012, McLaren Vale, South Australia, Australia (407718, $28.95, WineAlign)
A richly textured, solidly structured and surprisingly believable, relatively tame, low alcohol (14 per cent) McLaren Vale Shiraz. The flowers are strewn across the aromatic entry, relenting to cedar and ripe berries. What a sincere inhalation of beautiful. Classic bones to carry a sense of place, constructed with heady serenity and savour faire. Shiraz of a tall order, to please many camps, from finesse to power, for instant pleasure and in attraction of the cellar junky. Drink 2016-2022. Tasted May 2015 @SerafinoVino@mclaren_vale
Pierre Amadieu Romane Machotte Gigondas 2012, Rhône Valley, France (973453, $27.95, WineAlign)
Show me an off vintage of the Romane Machotte Gigondas and I’ll throw in the proverbial tasting towel. This Amadieu can never disappoint. The ’12 offers spicy, smoky, piquant accents over top big red fruit. Much reduced yet non-reductive freshness abounds, set upon a valance of liquorice and dried flowers. The stuffing is packed and brimming, the herbs and verdancy sacrosanct with just the right kind of sting. Has savour but I would stop short of calling it savoury. It’s raspy but not rapacious. The Grenache-Syrah blend bides and lingers, long as the road that links Romane and Machotte. Drink 2016-2022. Tasted May 2015 @Amadieu_G
This is a very understated, creeping, impossibly concentrated Chianti Classico Riserva. Positively vital, as classic as classic gets while not once reverting to the kind of rusticity that refuses adaptation, ignores permutation or refutes progress. The cleanest fruit is scented by the dulcet appraisal of truffle and porcini. The pitch is just about perfect, the acidity ideal and the balance struck between fruit, barrel and age. Earth grounds the entire ordeal, rendering it peaceful and pleasurable, the possibilities playing out enjoyable and endless. The organic ’09 can be poured right now and the legs will take this down roads as long as the SP408 to Traversa and Gaiole in Chianti. Drink 2015-2029. Bachelder La Petite Charmotte Nuits Saint Georges 2011, Ac Burgundy, France (357228, $49.95, WineAlign)
The spice notes reign in May, 2015. A smoulder stick of limestone wicks through the red, earthy fruit. Petite only in grace and largesse, in longevity this stretches from Nuits-Saint-Georges to roads leading in all directions. Careful, delicate and yet profoundly, powerfully restrained, not to be ignored Pinot Noir. Drink 2018-2025.

Is so floral, mineral, intense and hypnotic it might be dubbed the Serpent Charmer. Iron and wine indeed, the iron of Nuits, the perfume of Beaune. This provocative bottling represents the third year of production, is conspicuous in Anis de Flavigny and an underlying gate. If montagnes is the harming one, this is the charming one. These are all from the same barrels, so what really affects the wines the most? Land and hand.
Monte Faustino Amarone Della Valpolicella Classico 2008, Doc Veneto, Italy (327122, $56.95, WineAlign)
You know it’s big, hot and full-bodied. But oh if this isn’t the epitome of how Amarone can woo, thrill and hypnotize. The fig-date-palm-dried fruit feeling proliferates within an anise liqueur base. The caked, cracking and arid earth flakes, chips and cuts with a mustard of spices. The smooth and velvety mouthfeel has variegated chalk and grain. Such a promiscuous Valpolicella that fleshes and swells as it swirls. Intense, rich and yet neither overpowers nor climbs over the top. Drink 2018-2028. Tasted May 2015 @RegioneVeneto
Québec native and Niagara Peninsula resident Thomas Bachelder makes Pinot Noir and Chardonnay in three countries. He may not be the only gypsy winemaker on this planet but he certainly ranks as the most focused. Over the past few years I have had many opportunities to taste and be privy to the diversity, overlapping and incrassation of his portfolio. By now I know so much and understand so little.
There is one thing I do know for sure. Bachelder and partner Mary Delaney form a formidable wine-producing juggernaut. Together they are the vine and the fence. The question is which one is the vine and which one is the fence. If asked they and their guests would likely all produce different answers.
In Oregon Bachelder made wines at Ponzi and Lemelson Vineyards. In Niagara he was best known for creating a world-renowned portfolio of Pinot Noir and Chardonnay through an artfully applied science at Le Clos Jordanne. Beyond Bachelder there is now the Thomas effect at Domaine Queylus. He’s like the Chicken Man, “he’s everywhere, he’s everywhere.”
In Ontario his Pinot Noir fruit mainly comes from the St. David’s Bench vineyard owned by the Lowrey family. The Chardonnays are drawn from the Wismer Vineyard on the Twenty Mile Bench and the Saunders Vineyard closer to Lake Ontario. In Oregon, the sturdy contrariness of the vines show a marked preference for the sandstone and volcanic (Basaltic) strata, in Yamhill-Carlton and the Willamette, rhymes with dammit – thanks Mary … ;), Valley. In Burgundy the terroir in micro-plots diversify the stratagem even while some are considered lesser locales for growing great Burgundy. But one thing is clear. The lieu-dits that give of their fruit all qualify as appellative wonders of the Bachelder diaspora.

Order is an extreme obsession for Thomas Bachelder, in an organized, chaotic way. For this reason, the wines were tasted in the following progression, to make sense of the complexity and variegation in each country from the three distinct yet wholly antithetic bon (Burgundy-Oregon-Niagara) terroirs.
From old vines in the commune of Puligny-Montrachet, Bachelder’s Aligoté is a flinty, indiscreetly pinching and itinerant example. More complex than it needs to be, it can be accused of being a risk taker. If Chardonnay is considered in terms of finding excellence out of cool climates, this Aligoté is downright gelid. The wine doth go both ways, at once reductive and then terpenic. Lime citrus concentrates aromas and flavours within a very platinum, mineral frame. Speaks several languages that can be related to but only if you can pry through the cracks in the hard protective shell. Confounding really, yet a fascinating study. Bachelder could do for varietal Burgundy Aligoté in ways similar to Sylvaner in Alsace. Tasted December 2014
Pinot Noir Oregon 2012, Willamette Valley, Oregon, USA (333278, $34.95, WineAlign)
Primarily constructed from the fruit of Yamhill-Carlton vines, a third of which is Lazy River, an apropos moniker because by harvest time it hardly moves. The warm vintage adds a calm dimension to a Pinot Noir more Burgundian than the Bachelder’s Niagara and also more table friendly. Pure perfume and like life in layered, rosy hues, a vie en rose, from the land and the river’s subtle flows. The terra mobilis. The underlying dream in Thomas Bachelder’s Oregon movement is mineral, like salinity, not limestone but something ambiguous from the river’s pull and under the river. Elegance lived and relived. Here is a wine from a very available warm vintage, with a mess of fleshy fruit, yet Thomas does not obfuscate the terroir. In 2012 and needfully so, it is served from a light hand. Currently available at the SAQ in Quebec and coming to VINTAGES in Ontario, Spring 2015. Tasted December 2014
The fruit for Bachelder’s local environ comes from Wismer Parke within the essential Niagara vineyard. By way of setting bearings straight, the Park is contiguous to the Foxcroft and Wingfield sections of the Lowrey Vineyard. A precocious and most positive net gain Pinot Noir most of which, as Thomas so adroitly points out, will be consumed before being allowed to hit its prime. Despite the generic labelling, this is not a mass-produced bottling by any stretch and was swallowed up by licences. It’s a hallmark expression of warmth, texture, vintage and the capability of Pinot Noir in this specific place. What Thomas has achieved, with effective persuasion, is a cloning from intimate belongings; earth, fruit, Lowrey. Tasted December 2014
Côtes De Nuits Villages Aux Montagnes 2012, Burgundy, France ($45, WineAlign)
Named for La Montagne, to recognize it for place because local rules forbid calling it what it really is, nudge, nudge, wink, wink. So what was ‘La’ is now ‘Aux’ and with the change, in this vintage, comes something formidable, eliciting a response of aux la la. Let’s talk about this, with no mocking tone, just real thoughts. Anything but regional, this Bachelder is so very Villages, specifically lieu-dit, with its depth of earth and release of perfume. A piercing sort of Pinot Noir from a which a sauce could be fashioned out of its sheer intensity, to bathe meats. The concentration has a citrus feign, bright, in the back, along with a giving and Burgundy forgiving mineral funk. In this Burgundy, the mountain lurks, in spirit torque. Will unwind for up to 10 years. Available at the SAQ in Quebec. Tasted December 2014
Pinot Noir Johnson Vineyard Oregon 2012 and Côtes De Nuits Villages Aux Montagnes 2012
Pinot Noir Johnson Vineyard Oregon 2012, Willamette Valley, Oregon (SAQ 12065338, $44.50, WineAlign)
A hard-working wine that reaches for fibres not available for weave in the Bachelder ‘basic’ Oregon Pinot, the Johnson digs into the salty waters beneath the earth. Draws up its hydration, the astonishing fidelity of minerals magnetized and then redacts the smokey, splintering spokes of wood. The juice in 2012 flows and follows the inconsistencies of the skin and the barrel like the river travels along the irregularities of the land. Rich, dusty, brooding and intuitive. The Johnson is bent on serious intent, like a sculptor’s dentil relief, with increased shadow, less mannerist in 2012, deeper, darker and of more solemnity. When the ’11 was at first hard to figure then soon after revealed its charms, this ’12 will take much longer to unravel. The brightness of Oregon Pinot Noir is perhaps its greatest attribute so here that light is not yet known. Wait three to five years to find out its truth. Tasted December 2014
A balanced and thoughtful wine, from five rows of mostly mysterious, and unknown clones. There simply is no other locale in Ontario that you can grow Pinot Noir any further away from lake and river and still unearth such depth. Though terroir-driven, this shares little with other geographical perimeter outliers, like Ravine and Coyote’s Run. Can only be Lowrey; folkish, demotic, St. David’s Bench vernacular. From my earlier, October 2014 note: “To those who wonder aloud about the annual love affair with this vineyard, suck it and see. This connectivity and this wine renew again. Same time, this year. Bursts of all that have come from it before, are here now and in temptation of what will be for years to come. Has “the type of kisses where teeth collide,” a Sam Cooke ages to Arctic Monkeys kind of reckless serenade. It’s also a balladeer, this scaled back Bachelder, if that can be said to be done. Here now soft, elegant, perfumed, demurred, sweet, downy, pretty, not yet fleshed, surprisingly void in tannin, anxiety and tension. Work with it for 10 minutes and it will then begin to bite back, show its teeth, pearly white as they are, grind it out. There will be 10 years of development in this Lowrey, if not less, but in ’12, that is more.” Last tasted December 2014
Nuits St Georges La Petite Charmotte 2012, Burgundy, France (357228, $49.95, WineAlign)
Here grinds a wine that could want for some decant, a pause for thought while the imbibers assess their ways through Oregon, Niagara, Johnson and Lowrey. A pent-up perfume, when allowed to breath in and then out, results in a concentration of aromatic certainty. Tight and bracing, with cedar and bitumen, cherry and rose, this single-vineyard NSG hugged up on a northern slope is both adamantine Nuits and the pretty dame of Beaune. Straddles the arrondissement’s Burgundian twain, the Neaune, from iron to sublime. The imprint of yearning and distance. Tasted December 2014
Les Bas Liards Savigny Lès Beaune 2012, Burgundy, France (SAQ 12089567, $38.25, WineAlign)
Only two barrels (one and two year-old, zero per cent new oak) were procured of this 100 per cent Pinot Blanc. “I’m a barrel fermenting maniac,” admits Bachelder. He might also say “I’ve got a job, I explore, I follow every little whiff and I want my life to smell like this.” Stone fruit is in resolution and integration, fully, completely. This quenches thirst, like chewing on raw fish. Why Pinot Blanc in Savigny Lès Beaune is the $64K question with an answer tragically not really known. Its taste is not just Pinot Blanc, it is the flavour of Savigny Lès Beaune. It is PB looking for a place to happen. The argument is logomachy, the reality is Savigny. What it delivers is a clean, hip Burgundian message and at the same time asks, “do you taste Chardonnay?” Yes? No, I taste Savigny Lès Beaune. Tasted December 2014
Bachelder Chardonnay Johnson Vineyard 2012, Willamette Valley, Oregon, USA ($44.95, WineAlign)
From the best four of twenty barrels (and 15 – 18 per cent new oak). The salinity drawn is deeper still, like a bone from the skin of the sea. Rich tones, components, tannic texture, filibuster Chardonnay. From my earlier, May 2014 note: “More specifically a product of its ocean meets sous terre soil than Bachelder’s basic (term used loosely) Chardonnay, the Johnson nicks more richesse, around and around fullness. Not to mention the cerebral wisdom of two Scots and a Charlemagne. Johnson’s progressive and forward thinking maker works with inconspicuous wood and the science of introducing oxygen into wine in a controlled manner. He might say “for it is wisdom that we have for sale.” Like a white-winged dove, the 2012 will trod lightly towards a long walk to a very long life. It can be imagined aging to the edge of seventeen. The earthy feel, the salinity, not from tannin but from soil, “the music there, well, it was hauntingly familiar.” This is iridescent Oregon in a Bachelder voice. No doubt.” Last tasted December 2014
Primarily fruit sourced from Wismer-Foxcroft and Wismer-Wingfield plots, the oak treatment is 15 per cent new. Shows so much more warmth than Oregon. More honey and tropical notes than many peers as well. And still limestone crusted apple is the major finishing key in a Chardonnay that sings a familiar Niagara hymn. From my earlier May 2014 note: “Bottled just one month ago, contrary to the monk’s assertion, there is nothing shocky about her. Her fruit is downy soft, round without being fat because as Bachelder maintains, real as always, you “can’t have the minerality of that perfect 2011, I’m not going to bullshit you.” The 2012 is a wine unconscious in its own obviousness, ready for anything. Gregarious, golden, fresh fruit that was ready to roll out of its barrel and into the waiting glass long before its maker was prepared to open the valve. And of course there is a mineral finish. Bourgogne Chardonnay 2012 and Niagara Chardonnay 2012
From a site 2.5 km’s from the lake, right on the highway at 30 Bench. Derives its plushness from mere proximity so “serve it first,” pleads Thomas. So much lush, more richesse and yet today, Saunders is a bit closed, primary even. Will yet need some time to find its way. Coming to VINTAGES, Spring 2015. From my earlier, May 2014 note: “Though presently showing a bit inferential, no amount of Bachelder reduction can keep good fruit down nor can it dismantle the mastery of mineral impart. An arras of texture conceals the portal to both vineyard and barrel with streaks of salinity, charcoal and chalk. The 2012 rendition is a canvas laden with pure golden paint, concealing “hidden forms and shifting states.” Thomas has found a rhythm in Saunders through thick brush strokes, full and advancing. This warm vintage is not a receding one, its flavours and its texture do the opposite. They jump out at you in waves. For Thomas, the sublime is now.” Last tasted December 2014
An appraisal of Wismer, much further up on the Bench as compared to Saunders, is always fraught with side by each guilt. The two coax and dissuade each other in every respect, from vintage to vintage and in flip-book oscillation. Once again, the reversal is complete in 2012. Wismer gives not just power and warmth, but layering. Its voice is an astonishing fidelity of native rock magnetized. Wismer finds a way to make grace necessary and to make necessity graceful. While Saunders made yeoman’s work of 11’s crazies with precision and poise, Wismer takes the glow of ’12 and turns it into cool sunshine. This Chardonnay of wealthy fruit, controlled oak, olivine and feldspar tannin will slowly wash up like driftwood on the gravelly beach of life. Give it a year or two to assimilate the components and drink it for 10 more. Tasted December 2014
From lower Puligny, this is rich, forward and expressive Chardonnay. While it may gangle out with a fierce, pierce of the tang, a change fills the air after much discussion about a barrel, how it is used and to what effect, both for its current and predictable future. Has that honeyed, lemon toasty unctuousness, a weave that is weighty and glazed. Some wood spice and a colourable, creamy curd of citrus. Oak compounds the sweetness and layering. Puligny runs through its wooden veins and pumps micro-oxygenated nutrients to the important, internal organs. The eventuality here is the alleviation of pressure and a retrofit of fruit to elegance. Strike another notch up and step forward for the Bachelder Burgundy sojourn. There is still so much to learn and even this will seem pedestrian compared to what will come but for now it’s just fine, thank you very much. Tasted December 2014
Savigny Lès Beaune Les Bas Liards 2012 and Marsannay Clos du Roy 2012

The ‘King’s Hill’ which is just half of the misnomer because how can a plot of such ability be considered so low on the Cru pole. Half of a new barrel went into the minuscule (two barrel) blend. Chardonnay like lace, from nothing less than an appellation prepared to offer up fine drink, in pastry and in textile. Tropical tree fruits hang in rows, connected by cream and the contending forces of smoke and bite. Always the end game of rock envelops the whole, like gabbroid nodules, permeating every fissure. And so, because a Bachelder Chardonnay must comply, as the earth invisibly prepares its vines for successes and failures, so history is the creeping intent. Tasted December 2014

I would never turn down an invitation to taste des Grands Crus de Bourgogne. I would not hesitate to partake in a free for all of Premiers Crus. If the call came to experience the village heart and the regional soul of Burgundy’s Appellation wines, I would run, not walk to the show.
So, that’s what I did. At the gracious invitation of The Siren Group and Sopexa Canada Ltée I attended the One Bourgogne Wine event at Hôtel Le Germain, along with François Labet, Burgundy viticulture pioneer and chairman of the Bourgogne Wine Board (BIVB) and Communication Commission. Mr. Labet expounded on terroir; from climats to lieux-dits. Burgundy is a geographical and geological landscape of Jurassic age and proportion. Its heritage is ancestral and has been shaped by twenty centuries of activity. The appellation d’origine contrôlée (AOC) acts as its guarantor of quality, of terroir, production methods and what typifies the most famous Chardonnay and Pinot Noir anywhere on the planet.

The Bourgogne event was presented and moderated by Master Sommelier and WineAlign principal critic John Szabo. At the heart of the presentation was the regional diversity that defines real and affordable Burgundy. Mr. Szabo’s chosen wines delved deeper into the soul of the village and regional appellations beyond the Côte de Nuits and the most iconic parts of the Côte de Beaune. Textbook examples from Chablis to the Côte Chalonnaise and the Mâconnais were chosen to offer a true representation of the immensity that is the region.

The lunch that followed by way of Hôtel Le Germain’s Victor Restaurant was a reconnect for me and the cuisine of Chef David Chrystian. I first encountered chef’s raw and rooted flavours when he assuaged the Garlands at Café Societa on College Street. I remember with fond confusion his earthly layering foiled by the sterile mall, futuristic canvas of the Colonnade (Patriot). After Chef Anthony Rose left the Drake it was dead to me so mistakenly missed Chrystian’s lauded stint. Thanks to the Siren Group for luring me to Victor to reconnect with Chef David Chrystian once again.

Domaine Gautheron Chablis 2012, Burgundy, France (207902, $24.95, WineAlign) From the VINTAGES February 15, 2014 release
Canonical Chablis by the hands of independents. Family farmed and fruit fastidiously judged in timely picking and traditional vinification methods. Produced in allegiance to regional typicity, its nose is pierced by limestone’s necessary metallic tang. Apple tart yet ripe and balanced by plumbic weight. Proper, enjoy it all summer long, Chablis. @ProfileWineGrp
La Chablisienne Montmains Chablis 1er Cru 2010, Ac, Burgundy, France (265090, $28.95, WineAlign) From the VINTAGES November 23, 2013 release
La Chablisienne alone represents nearly 25 per cent of the region’s plantings. The orchard’s juicy fruit brings expression to this Chablis though it’s more savoury than many and it’s document is read in an angular accent. That and patina transposing into aroma, like the smell of a wet, platinum pipe breaching the fruit’s ability to flesh out. Lubricant at the pipe’s elbow and a moment of quince, even melon, offer weight. This is very good but lacks heft and only shows fossilized mineral on the back palate. Good length but a bit carbonic and needs more flesh and bone to elevate its stratus. Tasted twice, October 2013 and April 2014 @purechablis
Louis Jadot Chardonnay Bourgogne 2013, Ac, Burgundy, France (933077, $20.95, WineAlign)
Jadot’s Bourgogne Blanc is so essential it calls itself Chardonnay. From a vintage in which weather wreaked some havoc and fruit maturity was anything but consistent, the Jadot enterprise found a continued way to get it right, no small feat considering the quantity of triage required for a wine of such quantity. This entry-level white made full use of the warm summer heat, picking was clearly done in advance of the October chill and sorting found the right mix. It’s buttery, nut-browned and figuratively bubbly. The thick and rich texture is key to romancing the fruit into a riper realm than it likely really is. Commendable success from Jadot. @ljadot
Joseph Drouhin Mâcon Villages 2012, Burgundy, France (356956, $17.95, WineAlign) From the VINTAGES February 15, 2014 release
Simple, pleasant, solid and effective Chardonnay. A true and literal portrayal of the Bourgogne goût de terroir. Warm, gently expressed fruit along with requisite mineral, chalk and lime. Made of a quick resolve to satisfy, quench and move on. An open door to true Chardonnay with nothing shocking, striking or problematic. @JDrouhin
From the holdings of Chablis specialist Bernard Defaix, the domain’s variegated clay/chalk vineyards are located in the south of Côte de Beaune. The Mont-Palais vineyard comes from the Niepce family, winegrowers since the 16th century. Now managed by Hélène Jaeger-Defaix, this Rully is utterly unique to Chardonnay. There is a steely, patina Chablis quality to it, but also a concentration in magnetic aroma, whirling in an unstoppable centrifuge, not yet ready to spill those aromas forth. Screams both southern and cool climate, new world Chardonnay, in forward ways like South Africa and like Niagara on the Lake. Not to mention a silty, white salinity. Château Vitallis Vieilles Vignes Pouilly Fuissé 2010, Burgundy, France (360495, $27.95, WineAlign)
From 45-70 year old vines, from clay and limestone (Marls). Really, really smart, succulent and mathematical Chardonnay. A stony example who’s tangent space is complexified by a vector of gritty, spiked leaden aromas, like lime, ginger and lemon zest but also by a second vector of herbiage, as in torn, sweet basil leaf. Length stretched by a scalar multiplication, engaging another consideration. Would such a fine example not benefit, at least in theory, from a Premier Cru classification? Surely the winemaker and the vintner would abide.
Château De Beauregard Vers Cras Pouilly Fuissé 2010, Burgundy, France (agent, $48.99, WineAlign)
The famous “Cras” climat on the windy and chalky plateau of Beauregard means “chalk” in the local dialect. Not surprisingly, the chalky mineral impart takes centre stage and the oak treatment fleshes the fruit out in the early stages of the wine’s life. This Pouilly Fuissé solicits attention, love and engagement. An example in clarity of débourbage, the strict sorting technique employed before pressing. Exuberant fruit acts as if it were of a higher caste, a higher Cru. This is a testament to treatment, to extreme minerality. This makes the expression. A very good vintage, ready to consider and expect it to keep on seducing to at least 2020.
Vincent Girardin Vieilles Vignes Chassagne Montrachet 2011, Burgundy, France (364141, $55.95, WineAlign)
The quality of Girardin’s Chassagne Montrachet is clear, the age and maturity of the vines explicitly noted. There is an increased sense of depth and density that clearly required attention and coaxing. The 14-month, scaled down (15 percent) new oak barrel concept pushes substance to the forefront and wood to the rear. This is rich without being fat, textured but not splintered. The stirred lees add layers to the essentia, accruing a woven tapestry of phenols, lunar-driven gravity and anaerobic activity. Tasted twice, January and April 2014 @HalpernWine

André Delorme Bourgogne Pinot Noir 2010, Burgundy, France (366427, $20.95, WineAlign)
The thought here is catholic Burgundy, entry-level, old-school, from antiquity and for the people. Smells like and tastes like grand-père’s Bourgogne Rouge. Cherry fruity, dare I say, Gamay like and marked by tannin that doubles the astringency on the drying finish. Nothing scandalous and well-plundered.
Domaine Thénard Givry 1er Cru Cellier aux Moines 2008, Burgundy, France (Agent, $32.50, WineAlign)
The Thénard family has owned land in Givry since 1760 and this Cellier aux Moines vineyard dates to 1258, named by the Cistercian Monks of the Abbey of Ferte. This is iconic 1er Cru for Givry, from relatively old vines (35-40 years) on a single plot, in mid-slope of southern exposure. Straight out notes of sinew, stem and savour. Esses all around. A vegetal and rustic infirmity comes across and travels through the wine as you work with it. Smells oddly like…hemp. Or perhaps it’s a more delectable weed than that, like rapini, or dandelion. The charred back-end scent reminds of a just extinguished joint. The flavours are dubious, maritime and of the antediluvian earth. For the brave Burgundy heart. Perhaps five to 10 years will soften its edges, peel away the foreign matter and allow a hidden fruit purity to shine.
Bouchard Père & Fils Beaune Du Chateau Rouge 2009, Burgundy, France (325142, $36.90, WineAlign)
If today is the day to splurge on red Burgundy but crossing to the dark side of the VINTAGES section is not going to happen, take comfort in this LCBO general (Signature) listing. Dictionary entry actually, but also something funky this way Beaunes. Produced from a whole whack (17 parcels) of Premier Cru, the animal is strong but decidedly feminine. Clear, precise, distinct perfume with each swirl and replayed with every sip. Like raspberries and the sweet smell of the trodden earth after the dew subsides. Could drink this for breakfast with organic bacon post morning stroll and before a dreamy nap.
Maison Roche De Bellene Beaune 1er Cru Les Grèves 2010, Burgundy, France (Agent, $46.95, WineAlign)
So very primary, this Beaune, from the work of Nicholas Potel and winemaker Matt Chittick. Some of Les Grèves vines are nearly 110 years-old and there is clear wisdom beyond the edgy, masculine fruit. Those vines are selected for selection massale, a propagation technique that breeds perpetual health and consistency of style for present and future wines. A different sort of animal resides in this one, of musk, and mineral. Like the Beaune equivalent to traditional Brunello. Yet this Beaune from a very desirable vintage is nimble, moves with quick steps and cat-like reflexes. @RochedeBellene
Albert Bichot Domaine Du Pavillon Clos Des Ursulines Pommard 2011, Burgundy, France (23820, was $49.95, now $40.75, WineAlign)
The funk in this Pommard is unflappable, modish, flirting and so elevated in stained high-acid and tone. Incredibly tight and sour upon sour. A strenuous Pinot Noir to ponder and even harder to ignore. If the tasting were to last for hours into the afternoon I could imagine a resurgence but often the old adage is true. If it isn’t there to begin with, it will never be. Would like to look ahead and say “it’s not what it was before,” but this is either lacking fruit or it’s just so far away. The texture is plush, the mouthfeel aching, breaking hearts. Mineral, astringent long finish. Tough as nails. Tasted twice, November 2013 and April 2014
AurélienVerdet Morey Saint Denis ‘En La Rue De Vergy’ 2010, Burgundy, France (353416, was $44.95, now $36.25, WineAlign) From a storied vineyard just above the very famous Clos Du Tart in the Côte de Nuits. This producer may not be a household name for its holdings in this Burgundy plot but step aside Bruno Clair, Lignier-Michelot and Pascal Marchand. Verdet can handle the terroir of Morey-St.-Denis. Was and still is an unexpected gem. Rich, textured, layered cran-raspberry and earthy flavours. Persistent though sweet and engaging tannins. From my earlier, September 2013 note. “Noses my kind of MSD aromatics. Soft vanilla, black cherry, smoke and obdurate limestone toughness. Coated in fine, tinny tannin and stretchy length, this represents big value for the appellation.” Last tasted April 2014
Daniel Rion & Fils Vieilles Vignes Nuits St Georges 2011, Burgundy, France (356600, $53.95, WineAlign) Classic and as representative as it gets for the appellation, this is firm, time-honoured Burgundy. The old vines, the earth beneath its tendrils and the medieval forest are all in the glass. Though terse and tense, this Pinot Noir will come around to fill glasses with humanistic pours 10 to 15 years down the road. That extended wait will be needed to integrate the earthiness into the formidable tannins so that the lurking red fruit can rise to the top. A fine example with a model, lengthy finish.

In a geographically focused world defined by its very own diacritic caste system, in climat, in villages, premier et grand cru, the wines from Burgundy will always be royal. The Pinot Noir and Chardonnay are entrenched in such status not because of wealth or conceit, but because of “humility and unassailable references” from hills, plots, rocks, soils, sun exposure and the test of time. They are, as Woodman Wines and Spirits’ Jason Woodman notes, from a place “where history, religion and quality intersect.”

Although Bordeaux produces about four times as much wine every year, Burgundy’s estimated 74,000 acres (30,000ha) of vineyards are considered to be of equal importance, producing some of the most exclusive wines on Earth.” Equally important? We’ll see about that.
To most wine-loving mere mortals, great Burgundy is inaccessible, a prepossessing supposition that supersedes reality. The pragmatic wine buyer imagines the best Pinot Noir and Chardonnay to personify greatness, without ever owning one. Most of the rest are viewed in a light of feigned eminence. The overpriced and the under-delivered. Quality time is spent sniffing out the paragons, the most difficult of all wines to find.
The song, Royals “is about how today’s music is all about what is considered the “good life,” filled with riches and fame, but not everyone can live that life, and so the average person is desperately reaching…” The wines of Burgundy certainly gravitate into the hands of a wealthy minority but behind the dollar signs they are simply bottles of farmed and fermented grapes.
The wines of the Côte de Nuits, Côte de Beaune, Chablis, Côte Chalonnaise and the Maconnais speak more clearly of their terroir than anywhere else in the world. They need not boast nor flaunt their wares. They simply are what they are and Burgundy is what it is. Affordable to so few, disregarded as out of league and untouchable by the rest. “That kind of luxe just ain’t for us,” might be the complaint of the anti-Burgundian wino. Regardless of where you sit in the Burgundian aperçu, you are not alone. The Brannigan will always be debated.
There are more expensive Burgundies. There are bigger names. Houses like Jayer, Romanée-Conti, Leflaive, Roumier, Leroy, Faiveley, Coche-Dury, Comte Liger-Belair, Dugat-Py, Ramonet and Rousseau. Golden escarpment producers that fetch higher prices for their top wines. There are just as productive and wide-reaching Burgundy conglomerates, like Latour and Boisset. But at the end of the day, is there a producer of red and white Burgundy that combines quality and quantity like Domaine Bouchard Père & Fils? The estate stretches over 48 km from north to south and is composed of 450 different vineyards. The Bouchard family has “been telling the history of Burgundy’s wine and its great appellations for over 280 years.” In Chablis, the rock stars may be Dauvissat and Raveneau, but who can argue the aggregate éclat of Domaine William Fèvre?
On March 24, 2014, Woodman Wines brought the two need no introduction Burgundy producers to the Royal Canadian Yacht Club for a very grand tasting. The “rare and miraculous” 2012’s from Domaine Bouchard Père & Fils and Domaine William Fèvre. Pinot Noir and Chardonnay of pedigree and learning. Producers with holdings in Burgundy as historic and regal as the domains of Kings and Queens. From places where winemaking is religion, where terroir is everything. The wines are expensive (in some cases frighteningly so) but they are a treat to taste.
Domaine Bouchard Père & Fils
Aligoté Ancien Domaine Carnot Bouzeron 2012, Burgundy, France ($28.00, WineAlign)
From the Côte Chalonnaise between Chagny and Rully this was a rare chance to taste Aligoté and from the first village to receive AOC status for the variety. Bouzeron sits in what Bouchard describes as a “windswept funnel,” which might explain its crazy, natural acidity and spirited character. Begins “with a low whisper, windswept on the air.” To nose it is smooth, creamy, soft and fruity. To taste it’s tight, racy and lifted by a metallic tang. For the price it ferries exceptional quality and personality. “Windswept is on the tide, a feeling only or state of mind?”
Montagny Premier Cru 2012, Burgundy, France ($79.00, WineAlign)
From the Côte Chalonnaise, the most southerly portion of the Côte d’Or. A higher amount of Marly soil mixed with White Burgundy-loving limestone imparts richness and a soft, Malo creamy texture. At present there is a sulphur presence that stretches its legs and hides beneath a level of tart fruit. The wood effect is in a spicy radish tone adding complexity to the lightly dressed salad flavours. Finishes with terrific length.
Meursault Genevrières Premier Cru 2012, Burgundy, France ($119.00, WineAlign)
Bouchard’s Genevrières speaks in a definitively, regional tone, a Côte-d’Or oriental vernacular with absolute and utter clarity. A wine this pure and at the head of its class means “time flies, doesn’t seem a minute.” From East and Southeast vine exposures above obvious and necessary limestone that vacuums a metallurgy mixed with the finest, circular centrifuge of acidity. This is the wrapping that envelopes richness, depth and fresh produce of a fruit/vegetable continuum. One night in Genevrières “makes a hard man humble.” A contemplative moment with this ’12 Bouchard may cause longing, to look east. “Don’t you know that when you play at this level there’s no ordinary venue.”
Chassagne Montrachet Morgeot Premier Cru 2012, Burgundy, France ($130.00, WineAlign)
From a plot of land that was called Morga, from the Latin margo which means edge border, in this case between the Côte d’Or and Saone-et-Loire. The soils in this mid-slope vineyard with a south-easterly exposure combine limestone and Marl and so Bouchard’s 2012 take shows an increased richesse and concentration. A Chardonnay with drive, determination and delineation. Noticeably toasty and though mostly quiet now, even it its youth it is already showing resurgent citrus and nutty tones. It will oscillate back and forth between the poles for five years or so and come together for many more beyond.
Corton Charlemagne Grand Cru 2012, Burgundy, France ($250.00, WineAlign)
The Bouchard description of “a scarce and promising vintage” will apply to this flagship Grand Cru as much as it will to any in the stable. Corton’s ode to King Charlemagne’s not to be stained white beard is the most difficult to contemplate, assess and articulate in its steely, whispering youth. This rare vineyard planted to both Pinot Noir and Chardonnay, if just by chance it “crossed the diamond with the pearl,” is no cause for concern. This Charlemagne is just a kid, yet unaware of how it will rule with purity, personality and impunity. It does not yet know this and when it matures, it might be asked “did you realize that you were a champion in their eyes?” The creamy texture, subtle toast and extraordinary flavours are all there. Lay it down for 10 years and relive its limestone treasures for 20 more.
With the largest number of Grand Crus is the area, is it any wonder how one Gevrey Chambertin finds a way to set itself apart from the others? This 2011 Bouchard does so with this refined, restrained and cleansing Pinot Noir. Earthy and sugary beet flavours echo similar aromas. Picking time was certainly key. Foregoes grit, girth and a belt’s tannic lash for elegance and a directive to balance along a straightforward, pleasing line. Will do its best work in short-term gains, from now to 2018.
Savigny Lès Beaune Les Lavières Premier Cru 2012, Burgundy, France ($62.00, WineAlign)
From a limestone and clay vineyard in Bouchard’s control for just over 100 years. Filled with “laves,” the big flat stones that characterize the land, this 1er Cru is painted by the soil, with a charred, mineral glaze. It’s also sweeter and scented by high-toned red fruit, less refined than other Beaune vineyards but all the while offering near-immediate gratification. Could use a couple of years to settle and will drink well for five or more.
Gevrey Chambertin 2012, Burgundy, France ($66.00, WineAlign)
In this vintage the Gevrey is a magnified version of itself, seemingly drawing every atom of mineral and fossil from its Triassic limestone bed. The table of clay potassium, phosphorous and iron are all in this bottle, expressed in earthy Pinot Noir character. This might be the Bouchard blazon and secret weapon; dangereux, tight, sharp and pointed. The fruit is pure and clearly defined but will require time to shed its tough outer layer. Put the 2012 Gevrey away for five years and look to see it open up to 2022.
Chambolle Musigny 2012, Burgundy, France ($76.00, WineAlign)
From the shallowest of Côte-d’Or soils, Bouchard’s Chambolle Musigny is extracted from delicate berries that rely on its vine’s roots to crawl down into limestone’s fissures in search of nutrients. Though many a Chambolle exhibits tenderness and elegance, this Bouchard hard-working vine has produced a quilted, tactile wine of texture and contour. It opens with its own special vineyard stink, a note of subterranean terroir that dissipates with a swirl. A wildly woven combination of chalk, grain and chewy licorice makes for a varied and salubrious mouthful. As big as it gets for the appellation and surely worth a go from 2018 and for a decade more.
Volnay Ancienne Cuvée Carnot Caillerets Premier Cru 2012, Burgundy, France ($118.00, WineAlign)
Caillerets and the term tête de cuvée go back as far as 1855 and with this iconic bottling there is proof in perpetuum that Bouchard knows Volnay. This is the house’s first vineyard dating to 1775 so it goes without saying that 237 years of experience is nothing to dismiss. The 2012 Cuvée Carnot is refined in a state of heightened awareness. The aromas are smoky, meaty and the favours concentrated. Distinctively opaque like a Pensieve with a swirling torrent of tannin pushed along by centrifugal force. Will need 10 years to immobilize, then to age rhythmically for 10 more.
Pommard Rugiens Premier Cru 2012, Burgundy, France ($146.00, WineAlign)
Bouchard’s Pommard Rugiens goes at the Pinot Noir diapason from every angle. At once fibrous and rigid, it is also highly perfumed by flowers, most notably violets. The rich iron-red soil imparts a large measure of ferrous aroma but the pure fruit sustains the mineral and the wine remains a good conversationalist. A metrosexual, acting out both masculine and feminine parts. The rest of the Bouchard red Burgundies tend to choose one side or the other but the gregarious Pommard lives on the edge. A streak of char and chalky tannin shows late and lingers throughout the lengthy finish.
Nuits St Georges Les Cailles Premier Cru 2012, Burgundy, France ($146.00, WineAlign)
A gorgeously refined wine built on finesse, clarity and concentration. All its graceful parts move in synch through structured stages of class, refinement and with a goal towards a realized, long evolution. Noticeable but sweet tannins are gained by a bleeding of the terroir‘s oolithic chalk by way of hard stones. Silky and feminine perfumed red fruit never wavers from its intent, to seduce and give pleasure. No dying quail this Nuits St Georges, nor a frozen rope, the wine hangs in balance effortlessly and for a long, long time. Enjoy it for 10-15 years.
Beaune Grèves Premier Cru Vigne De L’enfant Jésus 2012, Burgundy, France ($146.00, WineAlign)
From the just a shade under four hectare, formerly owned by Carmelites vineyard within the famous 32 hectare “Roi Soleil” Grèves appellation. Like its namesake (in reference to Louis XIV), this Bouchard is the red that displays the most control and Type-A personality. A wine that draws every bit of modern terroir from the gravelly clay. A wine of great excess, state-of-the-art, jeweled, luxurious and crafted with the heaviest hand. The sun king goes for much glory, but at what price? The price of needing to be loved in its youth. The question is will that cost L’enfant Jésus 2012 long-term success? With more abundant fruit than a Versailles Trianon and the guts to soldier on, it’s hard to imagine it not aging for 20 or more years.

Saint Bris 2012, Ac, Burgundy, France ($25.00, WineAlign)
From the commune of Saint-Bris-le-Vineux, this is light, cool-climate tension Sauvignon Blanc. A wine of impetuous and quick-step moments. The rush of just opened soda, the spray of a freshly bitten green apple, the knife cutting through juicy lemons and limes. A hyper-clean rendition of the Loire grape, this northern rendition will work an oyster with ease.
Chablis Les Lys Premier Cru 2012, Burgundy, France ($58.00, WineAlign)
Of the Fèvre Premier Cru designations, Les Lys exhibits the softest, downy touch and the more muted or demurred personality. The fine lees is distributed through the texture and the limestone gives way to chalk on top. Offers up more spongy fruit than Montmains or Monte de Milieu and finishes with charm.
Chablis Mont De Milieu Premier Cru 2012, Burgundy, France ($69.00, WineAlign)
The Fèvre Mont De Milieu is the smallest of the domain’s Premier Cru holdings with a struck by flint personality that is quite intense. Neither Les Lys or Montmains show such dynamic mineral effect. The most righteous of the Chablis Serein River banks brothers maintains that matchstick loving feeling, though it is temporarily relinquished to a honeyed moment. It’s “a love you don’t find every day, so don’t, don’t, don’t let it slip away.” Fear not, for the gathering is beautifully concentrated and the rocky, mineral bent never fully dissipates. A Milieu to savor from 2017 to 2025.
Chablis Bougros Grand Cru 2012, Burgundy, France ($97.00, WineAlign)
While the appellation may not be the most sought after in terms of Chablis Grand Cru, the dominant Fèvre presence, experience and dedication to making Chardonnay in Bougros can’t be ignored. A good, if not exceptional vintage, 2012 is appropriate and defining. The sensations are of precious gems and metals and the exuberance restrained, but this Chablis seems on the verge. It’s as if a match has touched the strip and is about to alight. A powdering of Kimmeridgian clay is saturated by a smack of late lashing acidity. The Fèvre Bougros rises with energy from a standstill to high-speed. It will age harmoniously into the next decade.
Chablis Les Clos Grand Cru 2012, Burgundy, France ($143.00, WineAlign)
The Fèvre take on Les Clos is the cradle of all the domain’s wines, in every respect. Intensely concentrated, this is Chardonnay expressive in every facet of its surroundings. The impart from compressed white limestone, ancient fossils and Jurassic minerals in distillate may seem abstract in description but how else can the feeling of a mouth full of rocks be conveyed? The remarkably complex Les Clos and its structured palate that goes on forever has come out of its Chablis vineyard cradle and will live on as one of the best ever. “It’s not a place, it’s a yearning. It’s not a race, it’s a journey.” There is no rush to drink it up. It will offer immense pleasure for 20-25 years.
